It doesn't make you old, we don't know that you weren't a teenager when he was born!

The dates changed Jan 12th. Everyone was really upset about it.

Today I am making something with ground beef. I haven't decided yet. I think I may make hamburger steaks with sauteed mushrooms and onion, with a salad, or something. I am going to get my hair colored this afternoon and will cook before I go, and this is sounding good.

It sure was!

Dinner last night was spectacular! The cauliflower soup was a hit with everyone, and I did make the 7-grain bread. It was delicious! Gonna make some more in a day or 2. I'll post the links to both recipes.
Dinner tonight will be some kind of eggs. I saw a recipe on AllRecipes for something called a River Omelet. Don't know what the name is referencing, but it looks really good. I've got eggs, bacon, tomatoes, cheese... so I think that's what we'll be doing for dinner tonight. With homemade 7-grain toast!

Alison ~ Thanks, we did enjoy our date night. We had choir and bells after so it was a bit rushed, but still nice. How is Fran feeling? I think of her often.
It is not fit for man nor beast out there today. Elizabeth called me at 6:30 this morning asking if I would take Ethan to school as it was too cold to take the baby out. My car said -9 and with the windchill they are saying it is close to -20. Just to damn cold. But the sky is the prettiest blue I have ever seen.
Fran is doing much better than a few months ago, she is still a little weak, but is getting stronger.
I don't know how humans survive in those conditions!

...I know it's a bit late, but Tuesday night's dinner was:
Chicken Stuffed with Golden Fontina
4 boneless chicken breasts (not thin breast cutlets)
1 cup shredded fontina cheese
2 slices proscuitto, diced
12 baby spinach leaves [uncooked]
1 small red onion, finely chopped
4 t. grated parmesan cheese
olive oil (for saute`ing)
3/4 c. white wine
1 c. low-sodium chicken stock (broth)
In skillet, saute' chopped onion in a tablespoon of olive oil until golden. Let sit in skillet until cool. Add fontina cheese. Meanwhile, slice chicken breasts in half [sideways] to form a 'pocket'. Sprinkle with salt, pepper, and garlic powder. Divide prosciutto into 4 parts (one for ech piece of chicken). Stuff pocket with prosciutto and 3 leaves. Divide the cheese/onion mixture into 4 parts and stuff into pocket. Repeat with the 3 remaining pieces of chicken. Place in same skillet and, over low-to-medium heat, lightly brown each side of chicken breasts, being careful not to spill contents in pocket. Sprinkle 1 t. parmesan cheese over each chicken pocket. Add wine and chicken broth. Cover and simmer over low flame for about 30 minutes. Serve with rice. Serves 4.
