Today I am making something with ground beef. I haven't decided yet. I think I may make hamburger steaks with sauteed mushrooms and onion, with a salad, or something. I am going to get my hair colored this afternoon and will cook before I go, and this is sounding good.

Dinner last night was spectacular! The cauliflower soup was a hit with everyone, and I did make the 7-grain bread. It was delicious! Gonna make some more in a day or 2. I'll post the links to both recipes.

Dinner tonight will be some kind of eggs. I saw a recipe on AllRecipes for something called a River Omelet. Don't know what the name is referencing, but it looks really good. I've got eggs, bacon, tomatoes, cheese... so I think that's what we'll be doing for dinner tonight. With homemade 7-grain toast!

It is not fit for man nor beast out there today. Elizabeth called me at 6:30 this morning asking if I would take Ethan to school as it was too cold to take the baby out. My car said -9 and with the windchill they are saying it is close to -20. Just to damn cold. But the sky is the prettiest blue I have ever seen.

Fran is doing much better than a few months ago, she is still a little weak, but is getting stronger.

I don't know how humans survive in those conditions! :scared1:

...I know it's a bit late, but Tuesday night's dinner was:

Chicken Stuffed with Golden Fontina

4 boneless chicken breasts (not thin breast cutlets)
1 cup shredded fontina cheese
2 slices proscuitto, diced
12 baby spinach leaves [uncooked]
1 small red onion, finely chopped
4 t. grated parmesan cheese
olive oil (for saute`ing)
3/4 c. white wine
1 c. low-sodium chicken stock (broth)

In skillet, saute' chopped onion in a tablespoon of olive oil until golden. Let sit in skillet until cool. Add fontina cheese. Meanwhile, slice chicken breasts in half [sideways] to form a 'pocket'. Sprinkle with salt, pepper, and garlic powder. Divide prosciutto into 4 parts (one for ech piece of chicken). Stuff pocket with prosciutto and 3 leaves. Divide the cheese/onion mixture into 4 parts and stuff into pocket. Repeat with the 3 remaining pieces of chicken. Place in same skillet and, over low-to-medium heat, lightly brown each side of chicken breasts, being careful not to spill contents in pocket. Sprinkle 1 t. parmesan cheese over each chicken pocket. Add wine and chicken broth. Cover and simmer over low flame for about 30 minutes. Serve with rice. Serves 4.

Hmmmm :scratchin Both of the above sound like viable options for dinner tonight. We need something simple!
 
Morning. It snowed for a while, yesterday, but during the night it all turned to rain, so we woke up with no snow in our yard, but our mountain is covered in white stuff. That's where I like it to stay! Our forecast is more rain today, with warmer temps. Hooray!

I have ended up with a nasty head/chest cold, so I'm juiced up with medicine. Guess Timmy and I will be staying home. Alan gets off work at 1:00, and doesn't have any classes today, so he should be home by 2:00, and I'm hoping that I can sneak a nap in when he gets home.

Jen ~ It was cold yesterday but even colder this morning. With the windchill they are saying it is between -20 and -17. That is just to darn cold.

Scott is going out to lunch with a coworker so I am on my own today. I am thinking of making "Poor Man's Spaghetti" which is angel hair (today), jarred spaghetti sauce, and black olives ;) I know, I know, but it's a quick comfort food without much cooking.

Good morning everyone!!

Well I am here to say that Boot Camp did NOT get the best of me. I guess Zumba had me in better shape than I thought I was. So far I am not sore - I sure thought I would be. I really liked it and will be going back.

I had to chuckle this morning as I was getting ready for work. The weatherman said - I kid you not - "Today is going to be warmer we should reach at least 10, and with the windchill we will only be about -8. SERIOUSLY!!! What kind of good news is that??? I couldn't believe it.

I haven't seen my boys for a couple of days so I am going over after work to snuggle on them. I can't wait.

WFDT ~ Turkey (it's in the crockpot) with dressing, cranberry salad and rosemary rolls.

Morning, all! Gray and cold is the weather here. Blah! Luckily, I'm heading to bowling in about half an hour, so I can hope to forget the dreary weather and have some fun!

Last night's oven omelet was a success! The kids ate it up without a murmur! Alan and I didn't get to sample any, as we had to go to the viewing for our friends son. I was expecting it to be very sad, and it was... however, they really made a huge effort to celebrate his little life. It was like a reception, with all of Peyton's favorite foods served, along with chocolate milk and apple juice. His mother is doing ok, but you could tell it was a strain to keep a smile on her face. I just thank my lucky stars that nothing like this has ever happened to me. I don't know how you survive something like that.

Anyway, Alan is off work at 1:00 today, so he's promised to take me out tonight. We'll see. I know he's been craving Thai food, so we'll probably end up at our favorite hole in the wall place. It doesn't look like much from the outside, but the food is outstanding!

YIPPEE Skippy its Friday!!!! (too bad it wasn't payday Friday, but oh well !!) We had snow overnight got about 3 - 4 inches.. not bad .. not really good but it's the northeast and that is what happens to us in the winter - someday I hope to move south and not worry about the icy snow weather...

Well change in plans for dinner tonight - we are cleaning out the fridge and freezer for leftover night .. so onto the menu : 1 sm cheese pizza, 1/2 of a veggie calzone, 1 serving sloppy joe, 1 serving chicken taco, 1 serving cream cheese spaghetti,1 serving of maccaroin with butter, 1 serving taco meat . I'll be serving the rest of the shoestring FF and the sweet potato FF with it.. and might do some cut up cold veggies cause the lettuce is gone :(

my freezer is stocked full of most dinner items for the next 2 weeks (I have to purchase 1 lb ground beef, 1 sm chicken pot pie and 1 ham steak) My pantry has enough rice - white and flavored, pasta - white and flavored, potato - instant and whole to make it for the next 14 days . I will need to purchase veggies - fresh, frozen and canned for some of the meals. Man it feels good to say that I am sure I can come in under my Grocery Budget for the next few weeks !!!

OMG these sound sinful!!! I might try to make these over the weekned

Warm Choclate Melting Mugs (from Taste of Home)

10 ServingsPrep: 20 min. Bake: 20 min.

Ingredients
1-1/4 cups sugar, divided
1/2 cup baking cocoa
2 tablespoons all-purpose flour
1/8 teaspoon salt
3/4 cup water
3/4 cup plus 1 tablespoon semisweet chocolate chips
1 tablespoon brewed coffee
1 teaspoon vanilla extract
2 eggs
1 egg white
10 fresh strawberry halves, optional
Directions
•In a small saucepan, combine 3/4 cup sugar, cocoa, flour and salt.
Gradually stir in water. Bring to a boil; cook and stir for 2
minutes or until thickened. Remove from the heat; stir in the
chocolate chips, coffee and vanilla until smooth. Transfer to a
large bowl.

•In another bowl, beat eggs and egg white until slightly thickened.
Gradually add remaining sugar, beating until thick and
lemon-colored. Fold into chocolate mixture.

•Transfer to ten 4-oz. ramekins coated with cooking spray. Place
ramekins in a baking pan; add 1 in. of boiling water to pan. Bake,
uncovered, at 350° for 20-25 minutes or just until centers are set.

Garnish with strawberry halves if desired. Serve immediately. Yield: 10 servings.

It's Saturday and I'm going to have to get my last minute things tomorrow for Chinese New Year. For now, I'm going to get my 'ang pow' or red packets ready (filled with money) to give the kids on Monday.


Dinner tonight? I checked the fridge. We have sooooo much zucchini and there is sufficient egg plant there too; plus 2 tomatoes. I've just sent DH out to get 2 more tomatoes, an onion and some capsicum. I think we have enough basil in the garden as well. So, looks like Ratatouille for dinner tonight. I'll serve it with some couscous.

To those who commenting about getting your hair done, I totally agree about loving it and making you feel/look pretty. It's one of those things I do for myself that really boosts my mood and self-esteem. I have been a brown-ish red for a few years now. I am slowly transitioning back into a black coffee color with a hint of red. My natural highlight is red, so it will always be red in there somewhere ;)

So, we ordered all of our supplies to make homemade sausage this weekend and not everything came. So, no homemade sausage after I purchased all of the ingredients. :headache: That changes dinner this weekend.

Tonight will be homemade pizza...and tomorrow...we'll see. :confused3

Today will be a relaxing day. It's cold out and we'll cozy down and stay warm.

Well winter has finally dumped on us. We got a little over 6 inches of the white stuff. At least it is the powdery stuff.

Mr A decided to get the flu. It made for a fun last day of finals for him. Luckily it is behind him for now. I needed him to help shovel but the poor baby could barely lift is arms. I have a huge baby walking around wrapped up like the mummy and coughing. I need to find something to do out of the house. I don't want his germs.:sick:

Tonight is chicken enchilada soup.

Morning, all! We are eating out, not sure where yet.

To those who commenting about getting your hair done, I totally agree about loving it and making you feel/look pretty. It's one of those things I do for myself that really boosts my mood and self-esteem. I have been a brown-ish red for a few years now. I am slowly transitioning back into a black coffee color with a hint of red. My natural highlight is red, so it will always be red in there somewhere ;)

So, we ordered all of our supplies to make homemade sausage this weekend and not everything came. So, no homemade sausage after I purchased all of the ingredients. :headache: That changes dinner this weekend.

Tonight will be homemade pizza...and tomorrow...we'll see. :confused3

Today will be a relaxing day. It's cold out and we'll cozy down and stay warm.

Well winter has finally dumped on us. We got a little over 6 inches of the white stuff. At least it is the powdery stuff.

Mr A decided to get the flu. It made for a fun last day of finals for him. Luckily it is behind him for now. I needed him to help shovel but the poor baby could barely lift is arms. I have a huge baby walking around wrapped up like the mummy and coughing. I need to find something to do out of the house. I don't want his germs.:sick:

Tonight is chicken enchilada soup.

We have been eating out the past couple nights. I had a bout of Vertigo on Thursday and had to take Valium to stop the spinning, so we ordered Chinese. Last night we were out getting started on the next apartment that needs remodeling. It was late so we went to our favorite Asian Buffet for dinner. As much as I enjoy the nights off in the kitchen and from doing the dishes, I would also like a home cooked meal. I'll have to think about it and come up with something tasty for tonight. Its cold and rainy here so comfort food would be in order.
 
Holy rain, Batman! It started raining here, about midnight, and hasn't let up since! It's amazing!!!

Alan and I had a nice evening out. We went to Winger's diner for dinner last night. I had the Sticky Finger wrap. I love it, because it's big enough for 2 meals!! So, I have lunch all ready for today!

Today, Alan and the kids are cleaning the garage out, while I tackle laundry and cleaning things the kids tend to miss inside the house. Katie is at play practice until 1:00, so we're hoping to be done with all the cleaning by then, so we can do something fun as a family after that. Alan mentioned a movie, but we'll have to see what's playing.

No idea on tonight's dinner. I'll check back in when I've decided.
 
Tonight I am making Brown Sugar Balsamic Glazed Pork Loin in the crockpot.

The loin is cooked, now I have started the glazing process. The glaze is really good! I'm excited for it.
 
I figured out dinner tonight. I had some stuffed peppers in the freezer, all I have to do is pour some tomato soup over the top, cover with tin foil and bake for 45 mins or so. I like to top mine with some cheddar cheese and bake uncovered another 5-10 minutes. Easy-peasy!
