The What's For Dinner Thread - November '09(recipe index in OP)

Hi everyone, I'm checking in quickly before I take Hailey outside to play in the snow! Yes, we are getting snow in coastal SC. Right now there hasn't been any accumulation, but I want her to be able to see it falling.

Thank you all for the kind thoughts and prayers for Jessica. She is still in the ICU and will be there for at least the next couple of days. I'm so crazy that I can't remember if I told you all they had removed her breathing tube and inserted a feeding tube. She is awake at times, but unable to talk because they have wired her jaws together. Her recovery is going to be slow, but thank the Good Lord, she should recover. It was just such a freak accident and we are all thankful that she is alive and that her injuries were not worse.

Hailey doesn't know anything has happened to her and wouldn't understand if I tried to explain it to her. She will probably wonder where Jessica is after she doesn't come next week, but I'll take Hailey to see her when she is moved to a room and her facial swelling comes down enough that Hailey would recognize her.

Gretchen -- Thank you for the update on Jessica. I'm so glad to hear she will recover in time.

Ellen -- Tell Doug to Break a Leg tomorrow! I'm sure you will be happy when this whole thing is over. This is why I don't do theater anymore. I don't think my children would appreciate me disappearing for two weeks.

I'm so surprised Jay got the package already. I only mailed it last Friday. I think it takes longer for packages to get to Greg! Anyway, I am glad Jay got it, and I hope the cookies weren't TOO crunched in my attempt to shove as much into that little box as possible. My kids were trying to poach some of the stuff, so I had to seal it up quick.

Sheryl -- I don't know if this would work for you, but I always give my kids money before we leave for Disney. That way, they feel like they are spending their money and not mine, so they are a little bit more discriminating in deciding what they want to buy.

Vickie -- Good luck on the lotto! Don't forget your friends. :laughing:

Wendie -- Good luck to Ross!

Nancy -- I'm glad you and Buddy are feeling better today.

Dinner ended up being bratwurst, pierogies, baked apples and sauerkraut.

I truly apologize for not being a better friend & letting this slip by...

Just got home a little bit ago, got Chipotle for dinner. :love:

Went to run errands first and OMG people are nuts out there. :eek: Nearly got hit by a County plow/dumptruck. There were accidents all over the place. Glad I'm home out of that craziness.

Late Tuesday and yesterday the company that plows our neighborhood parking lots had the little front end loader thing dumping snow into a dump truck. Now the street that my parking lot is off of actually ends in a T shape 40-50 feet beyond where the entrance is. Went I left the house today I saw why they had to use the dump truck, the entire space, 4 car widths wide at the bottom of the T and the top of the T was filled with about 8 feet high of snow! :scared1: I'll take a picture for you all tomorrow.
 

Gretchen I am glad to hear an update on Jessica. That poor girl. I hope Hailey is having fun in the snow.

Ellen I am sorry I forgot all about the box I had put togethe for Jay. Is he at the same address? I am so sorry. :upsidedow

Thanks for the update. She does have a long road ahead of her but I'm glad she's getting good care.

Nancy- thanks for making me feel less guilty. Z and I did make a card for Mike today and had a lot of fun doing it. I don't think he cares that I didn't do much else either. I think I'll try the jello hearts tomorrow though, that sounds like it would be a huge (uneaten) hit!

Here is the Tabouleh Recipe- I made it without chicken because I wanted it as a side dish, it was ridiculously easy. Its an old Cooking Light recipe.

Chicken and Feta Tabouleh

3/4 cup uncooked bulgur
1 cup boiling water
2 cups chopped skinless, boneless rotisserie chicken breast
1 cup chopped plum tomato
1 cup chopped English cucumber
3/4 cup chopped fresh parsley
1/2 cup (2 ounces) crumbled feta cheese
1/3 cup finely chopped green onions
1/4 chopped fresh mint
2 tablespoons fresh lemon juice
1 tablespoon extra-virgin olive oil
1 teaspoon bottled minced garlic
1/4 teaspoon salt
1/4 teaspoon ground cumin
1/4 teaspoon black pepper

Place bulgur in a medium bowl; cover with 1 cup boiling water. Let stand 15 minutes or until liquid is absorbed.
Combine chicken and remaining ingredients in a large bowl; Add bulgur to chicken mixture; toss gently to combine.

Laura Hope Greg will be back to normal soon.. I'm sure you get a lot of loving support from your family. I have 3 sisters and 1 brother . I don't know what I would do without them

Michelle When my kids were growing up some Valentin's Day were filled with good stuff (heart shaped pancakes, bags with candy, crayons etc, other years
not so much) this year I did manage packages to my two college daughters with socks tank top gum etc. It cost more to mail them than what the contents were worth My husband getting a dollar card from Walmart and my son candy from Walmart and a $5 bill

I am having a dinner party tonite to celebrate this year
on the menu salad carmelized shallot mashed potatoes, seared scallops and tenderloin steaks in manhattan sauce roasted asparagus and two friends are bringing deserts I'm making placecard in the shape of hearts tied with a Lindt truffle let's see if the truffles make it too dessert

Michelle-I tend to forget that the kids don't really think about the cost or effort that goes into a special day. I think my very last minute efforts were as much fun for them as the ones I planned out for days. :rotfl2:

Well anyway we are having the PW short ribs with mashed taters tonight. Costco had some nice looking ribs last night.:thumbsup2

Shortly we are headed out into the sunshine to go to Alex's class and then to do errands. Then back home to clean oh the joy :rolleyes1

I just remembered I didn't get Alex a card for tomorrow yet I better add that to my list.:upsidedow

Just popping in to say Hi! We had a horrible travel day yesterday...delayed flight & horrible weather but we're making up for it today. We opened up the Tequila Bar aka The Ditch today....Margarita flight...yum! Oh and we had an excellent meal at Il Mulino last night!

A friend just called and wants to bring us dinner tonight. She isn't cooking so said she'd pick up something but wanted to know what we wanted. I always hate being asked that because you don't know what she's thinking price wise. You know? I finally got her to mention a few restaurants to see what she was thinking and she mentioned Chili's which is good with us.

Here's a picture of dinner tonight -- pan-seared cod with a tomato beurre blanc sauce, sauteed spinach and peas and oven-roasted potatoes. It was kind of inspired by the Jiko fish with vegetables of the moment dish, but much simpler and lighter.

Hey y'all,

I've been busting my patootie today. But the big stuff is loaded, just the little last minute bag, car snacks & ice chest to load in the morning! We'll be stopping about 2 hours out of WDW. I don't like wasting a Disney hotel night on a day we arrive so late:rolleyes1, so we won't arrive at WDW until Monday morning. A is really excited! I am too, now that the work is done! :goodvibes

Kat, I was worried about your flight with the weather. Glad you're making up for lost time!

It's going to take a long while and we're hoping it's going to stay just cold enough to slowly melt, if we have a fast thaw there will be lots of flooding.

We went shopping today and they had one of the roads near Costco shut down, they were plowing the right turn lane. I swear it was the same vehicles from when I nearly got hit yesterday. :rotfl:
