The What's For Dinner Thread - November '09(recipe index in OP)

Turkey question. I want to try Alton Brown's brining method, but don't have space in my fridge to put it. I can use a fridge at work but the directions say to let it soak for 8-16 hours... and it'd have to sit longer than that if it sits at work (more like 20 hours or so). Would that ruin it?

Think this is a question for Becky or Nancy.

I'm going back to my Martha Stewart recipe.....I done so many other things but like her recipe the best.
My Grandma, used to just the cavity with herbs, rub a stick of butter on the skin & but strips of salt pork or bacon on it & it was wonderful~

Found you!!! We've been working frantically to get things ready, and I think the basement is finally guest worthy. It's really looking nice, if I do say so myself!

Dinner was just hamburgers, so nothing too fancy.

I'll check back in tomorrow.

Maria, thanks for the reminder...I just added salt pork to my grocery list today. My DM always used it too.

Do I have time for a frozen turkey to defrost in the fridge if I buy it today? I was thinking around a 20lb one.


We have decided to put on a holiday face and suck it up and go to my DB's house Thanksgiving night. I know I will miss my parents and rest of the family if I do not see any of them that day. Guilt always gets me and I do the right thing. :rolleyes1
 
Aimee My friend does the Alton Brown brine, it is really good. You can brine longer. I brine my chicken.

Ann I think you will be fine. If you want to jump start it you can put it in a sink of very cold water and change out the water frequently. Or if you can find one big enough get a fresh turkey. If you go on butterball website there is $2.00 off coupon
 
Aimee- I have used the AB method too. I used a cooler but I know that you can use a new 5 gallon pail as well. If you brine for that long do not use the drippings for the gravy, it will be wicked salty! Personal experience talking :rolleyes1

I don't blame you for going to your DB's. I would hate that I was "giving in" but I would be more miserable if I did not see my family. In the end you just have to do what you need to do for yourself and let the rest go.

Bethany- I am going to ask what Marisa uses for her Migraines. She said she has not had good luck with Imitrex but I have a feeling it was the Excedrin Migraine. I do hope that you feel better soon.

Glynis- Good job of finishing the basement! I am embarrassed to admit that I almost never finish a project that fast!

Janice- I think I will get that pancake mix soon! I am avoiding it now becasue I need to weigh in before Thanksgiving and I know I gained weight. I do nto wnat to pay.

Maria- I had Pineapple vodka last night. I have some raspberry vodka in the fridge too. It really is like a cordial though. Looking for a recipe for cranberry vodka now :thumbsup2

Dinner is roast pork and seasonal veggies.

Nancy In one of my old Pillsbury or Betty Crocker cookbook there was a recipe for cranberry vodka. It was really good. I will look for it and post it later.

My boys and husband come home today from a weekend of hunting. We have no school this week of Thanksgiving boys are glad my oldest wants to work all week to make some money my youngest and I are going to start packing and cleaning up the truck after hunting.

Bethany- I hope you start feeling better real soon. Glad you got your comfy couch to veg out on?

Today is another busy day, as we continue to get ready for Dad. We ended up canceling the cleaning service, as we had too much "remodeling" to do. So, clean up is all up to us. As I said last night, the basement is ready, now we're moving to the main parts of the house. So, the day will be spent cleaning. To reward the kids for (hopefully) jobs well done, I will make breakfast for dinner, with gingerbread pancakes (I have a great recipe), scrambled eggs, and hot chocolate.

If we meet our goal of number of rooms finished today, we'll all snuggle up in front of our new tv with "Ice Age 3." I'm using that as leverage to get the work done.

Bethany - I used to get really wicked migraines. For me, they come during my T O M. I'll get 2 to 3 during that week. They are horrible, and really the only thing that helps is to just close myself away in a dark room and try to sleep it off. Good luck with finding something to help.

Ann - I've never brined a turkey. I'll be interested to hear how it goes! Good luck with the thawing. The Sunday before is usually when I start to thaw mine out. Of course, I don't need to this year.

Kathy Still go to the doctor. If it is that virus that is making the rounds I heard it takes 2-3 weeks before you feel normal again.

Nancy I found that recipe

Cran-raspberry liqueur

2 c frozen whole raspberries thawed. (you should be able use fresh)
2 c fresh whole cranberries coarsely chopped
2 c sugar
1 tblsp lemon juice (use the real deal)
2 c good vodka

in 2 qt glass jar with lid combine all ingredients stir until sugar is dissolved. Cover tightly with lid. Allow to stand at room temp for 2 weeks, inverting jar every day. Strain through a cheese cloth. Pour into decorative bottles cap tightly.

Makes 3 1-2 cups

I'm sorry, it was Zydeco's! I wasn't feeling well but the boiled seafood didn't impress us at all. The specialty there is clearly fried seafood.

Tonight is the church wide Thanksgiving dinner so no cooking here. I will say that if I feel like I did last night I won't be going. It seems to get worse as the day goes on :confused3 I do have an appt with my GI but not for another couple of weeks.

I am feeling better. The worst of the migraine was over on Wednesday, with some lingering Thursday and Friday. I have also tried Maxalt for migraines, that also was not particularly effective. Like someone mentioned, these are also on a monthly timer. Some months I'll get a few and other months I get off easy with just one. :sad2:

Kathy, glad you are feeling better. Thanks, I know I am doing the right thing. I just hope i deal with it okay and am not to upset after. I know my parents will be thrilled. I am not going to tell them ahead of time and just show up.

Lauri, I hope your boys don't come home empty handed! Did they get anything?

WFD- We just ate McD's on my way home from the store. No dinner for me. DH is going to have grill cheese later.

Greg decided to let me know that Thanksgiving night or very early Friday we are going to Maryland to see my MIL......Not thrilled about it but ok. Then he says if Cameron wants to meet us maybe we can meet her Saturday. I don't want to meet Cameron until she has been to the lawyer & a decision has been made!!!!!!!!!!!!!!!
We aren't seeing eye to eye on this at all.
