The What's for Dinner Thread- June 2012 (recipe index in OP)

Boston Pizza.

DBF has a coupon so we're having pizza. :)

Last night I made a slow cooker recipe: chicken, rice, and cream of chicken soup. You cook the chicken all day in 4.5 cups of water, shred it, put it back in the water, throw in two cups of rice and let that cook on high for about 30 minutes, then throw in the soup and mix thar up and let it cook for another 15.

It's so tasty, and goes great with some crisp raw veggies!

Good morning! I am so disorganized that dinners have been very crazy! WE eat but the meals are haphazard at best. For instance, last night we were not really hungry, and I did homework until 6:30, so Buddy had chicken noodle soup from a box (don't judge....he likes that stuff! LOL) and I had ramen noodles. ( Kady likes it and so I bought some to keep here, and all of sudden I am hooked!)

I have pork chops to cook tonight after the insurance guy leaves.

PIO- I chuckle when you talk about your seasons, Your last day of summer, and we are at 0 today! Wicked cold and windy!
Ellen- I have to drag my slow cooker out. I have not used it in years, but I have to figure something out. It has been so long since I have worked outside my home, that I have let cooking be one of the aspects i have not managed to incorporate into this new schedule. Cleaning is the other! Ethan must have been so darn cute! I missed Nola's concert and felt so badly. These events are very special.

Buddy is doing better. He was totally in denial where he would be after the surgery, so he was having a really hard time dealing with this healing process. He is having a hard time with some noise, it seems to get caught like a ping pong ball in his head, so I hope that changes. He also is a tad off balance, which adds to his headaches, so the dr gave him a prescription for vestibular therapy. I call to get that started today. He is feeling way better though!
 

TGIF!!!!!!! I don't have enough explanation marks to say how glad I am that this week is over.

Kimmar ~ The potatoes were perfect. It totally surprised me how good it all was and how so darn easy.

Kogo ~ I love my crockpot and your recipe sounds wonderful. How many chicken breasts did you use? And was the soup a can of Cream of Chicken soup?

PIO ~ Your easy dinner sounds good. Sometimes the easiest is the best. I look forward to Doug golfing in the summer - egg sandwiches here.

Nan ~ You really should get your crockpot out. There is nothing better than walking in the door after a day of work/school and smell dinner and know it is all ready. I have lots of recipes that I know you and Buddy would love. Let me know and I will get them to you.
I am so ready (and I know you are too) to have Buddy feel better. Bless your hearts! You both are in our daily prayers.

We have a jam packed weekend and I am really looking forward to it. We have a District BBall game tonight. Winner goes to State. Tomorrow we get Lilly in the morning as her Momma and Daddy (and 2 other couples) are going to Lincoln to stay with Matthew (OH the fun they all will have) and going to a dueling piano show. They should have a great time. Ethan has a wrestling match all afternoon on Saturday and another one on Sunday. At least Lilly and Liam will get to play. This Nana will be on the bench a LOT this weekend. This is qualifying for Ethan to go to State. I really hope he does good. When I took him to school this morning he was a bit nervous. Hopefully once he is there the nerves will fly away.

....well, I haen't decided yet what we will be having for dinner tonight, but we ordered Chinese food [at school], so I am getting steamed dumplings for lunch.....CAN'T WAIT! :hyper:

Nancy - Disorganised dinners seem to be in vogue right now. Glad that Buddy is doing better. Sorry some noise still bothers him and I hope that subsides soon.


Ellen - Busy week? Must be a cosmic thing. This last week is the first week this year where I feel like I've run a marathon....all on the same spot. Been frustrating to put so much energy into the week for so little outcome.

My weekend has just started. A bit of vegemite toast for breakfast with a cup of tea. My little princess cat seems to be over the worst of things and there is a little change in personality. All she wants to do is hang around us now. She follows us from room to room and even wants to be picked up and cuddled a lot. We're making lots of happy memories with her. Sadly, my other cat is feeling a little left out and there have been a few more cat spats in the house than normal. We're trying to make sure that both cats have their lovey dovey time with us but it may be a while before the other cat forgives us.

I'm hoping to get in the garden this weekend. My garden needs to be weeded again. DH was making noises about wanting to grow some winter vegetables. So if we get the weeding done, we might get some organic compost and start preparing a bed or two.

I tried it out!!!!


DH thinks it YUM and a good snack.


If you like cookies - And who doesn't - these might fill the bill.

They are eggless, dairyless, there is no flour or sugar. And surprising really good.

3 mashed ripe bananas
1/2 cup applesauce
2 cups oats
1/2 cup almond milk
1/2 cup raisins
1 t vanilla
1 t cinnamon.


My starting ingredients:







Adding the milk





Mix all together






and drop by spoonfuls on a greased cookie sheet.







Bake at 350f or 15-20 minutes.








THANKS!!!! It's so nice to have this snack. I've been missing that munchie at night. This fits the bill completely.










ps. I ended up making my own apple sauce. Most of the commercially available stuff had sugar in it.


2 granny smith apples
juice of 1/2 lime
1/4 cup water
1 t cinnamon








Simmer for 15 minutes.








Blend together to create apple sauce.

We are having roll ups and artichokes. Normally I do the roll ups on a charcoal grill. I might still do that. The rain is gone. Basically you slice flank steak against the grain. Roll it up pinwheel style and wrap it with a piece of bacon. I par cook the bacon so I don't have to make the steaks well done and the bacon is still crispy.
 
Week 5 of the Quit Sugar diet and I'm still following the "light" guidelines (which means keeping fruit into the diet). I think we have another 3 weeks to go. I'm not sure how much sugar I'll be eating after that; but this last 5 weeks has shown me how little sugar I did have in my life. Aside from the first couple of days, it's been easy to give it up. About the most that I miss is having jam as an option to spread on my toast in the morning.


Dinner tonight was gnocchi and a marinara sauce.

It was an unusually busy Monday for me. Lucky I had some sauce frozen in the freezer and I ended up getting gnocchi from the supermarket.

PIO ~ So glad you all liked the cookies. When I saw it I knew it was meant for you. We love them and really satisfies my cookie craving but is still good for me and the grandbabies. They really like them also.

Today is only to get to 5, with a low overnight of -12 and a windchill of -25 to -35. I would take snow over these cold temps. But the weather guy this morning did predict that we won't see anything this cold again until spring. He'd better be right!!

We had a ball with Lilly this weekend. I love that baby!! The only bad thing about having her is - the house is so quiet without her. I have little finger prints all over that will not be cleaned for awhile. :rolleyes1 I am so lucky and glad that I get to see her so often. With the cold weather we pretty much hunkered down. Only left the house to go to Church. The ladies knew that Lilly was coming for the weekend and if I hadn't have brought her to Church yesterday I would have been in trouble. ;)

WFDT ~ Strawberry jalapeno stuffed pork chops (when Stephanie and I went shopping last weekend we stopped at our favorite meat place and they had these. Sounds interesting ... huh?) roasted potatoes and a kitchen sink salad.

Morning Girls,

I hope you all are having a GREAT day.

We are up to 22 this morning. I swear when I walked into the Church this morning it was almost balmy. It is just amazing how a warm up of even a few degrees makes such a big difference.

I have bit the bullet and joined Weight Watchers. I am at a stand still and can't seen to get to my goal weight. Until I hit menopause I always had the opposite problem - I had a hard time keeping weight on. But once I hit the big M it played with my Thyroid (am now on medicine). I don't have a lot of the nasty symptoms but the weight gain. I am very active and try to watch what I eat, but let's admit I also like to eat. KWIM? So I joined yesterday - it was free to join and I am on a 3 month plan. We shall see how it goes. Right now I am completely confused, overwhelmed and feeling a bit dumb. Hopefully it gets better, but there is a LOT to get through and try to figure it all out. Wish me luck.

We had a wonderful cruise, and celebrated Texas Independence Day on Saturday ( i know a day early) with great food and drinks, and Sunday I started my ETL program...

So dinner last night was Black Bean burgers, and a huge salad.
 
well dinner last night was Cauliflower, Chickpeas, and a Cheese sauce made from cauliflower and no diary!

I have had a terrible headache for three days now, withdrawals are a pain!

Brandi ~ Welcome home!! I thought of you often and was hoping you had a great vacation. It was cold here so I was living through you for the week. :lmao:

Ok, well I just couldn't figure out the online Weight Watchers so I called to cancel it yesterday and talked to the neatest lady. She suggested that I go to the meetings, as they have the point charts and everything I really do need to get started. I am so a hands on person. I need to see it - ya know it's a control thing. :rolleyes1 Anyway the online is all done by computer or your smart phone. And call me old, but I just couldn't figure it out. I feel a whole lot better and will go to a meeting on Thursday. Get my stuff and do this!!!

I tried the best side dish last night. I couldn't wait to share it with you all.

Kale and Squash

1 yellow squash - diced
1 zucchini squash - diced
1/2 bunch of kale
1 T chili powder
salt and pepper to taste
2 T butter
2 T olive oil

Melt 1T of butter and 2T of olive oil in a pan. Add the squash and chili powder and salt & pepper, with a spatula brown till soft but not falling apart. Remove to a serving dish.
If needed add another T of butter to the pan. Add the kale that has been removed from the stems. Use tongs to coat it and cover for a few minutes till it softens. Add the squash back in to combine. Serve This was delicious and very good for you!!

Today starts my very favorite time in the Church - LENT! We have dinners on Wednesdays with a service following. On Thursday's we have Lenten Lunches at the other churches in town. Doug is in the Community Choir that will have their Easter Cantata before Easter. I just love the Easter season.

WFDT ~ Worship Committee is serving tonight and they are having Ham & Scalloped potatoes. I have no idea what else, but I know it will all be great.

Ellen, sounds like a wonderful recipe for Kale and Squash... I have another 5.5 weeks before I can have oil or butter, so I could make it without I am sure!
