Hello, everyone!

After a VERY long day, Scott finally arrived in Orlando. Since it's just me for the week, I am not going to do a lot of heavy cooking. Today I am probably going to have throw-together spaghetti (jarred sauce, noodles, black olives, and frozen meatballs) and a salad.

What a busy weekend we had. I watched the boys all day Saturday and came home pooped. They are such a blast and keep this Nannie hopping.

Sunday we traveled 2 1/2 hours (each way) for a Mission presentation. We were very close to where my Momma is buried so we went the extra miles to see her grave and decorate. Didn't go on Memorial Day as we knew we would be here in a couple weeks. We didn't get home till 4:30, but decided it was so nice out and the sun will shine till at least 9. So we changed real quick and hit the Country Club for a quick 9 holes and a late dinner. Didn't get home till 9:30. Fun weekend but it went so fast that I can't believe I am back at work.

WFDT ~ BBQ chicken, potato salad and cucumber onion salad.

WFD - turkey kielbasa on the grill, pasta salad (made with tortellini), and watermelon with an herb sugar and honey drizzle. Its a new recipe I found. Hopefully we'll like it!

Let's warm up the place with this Lemon Cake recipe. I did post it on the last thread and I threatened....er......promised to include pictures. So here is the recipe, complete with food porn.


Lemon Cake


Ingredients for the Cake:

  • Lemon, 1
  • Unsalted Butter, 250 g - softened to room temperature
  • Castor Sugar, 200 g
  • Eggs, 4 - large
  • Self Raising Flour, 250 g - sifted
  • Baking powder, 1 teaspoon
  • Pinch of Salt




Ingredients for the Syrup:

  • Castor Sugar, 150 g
  • Juice of 1 lemon



Preheat over to 160 C. Line an 18 cm round cake tin with baking paper.



1. To make the cake, zest and juice lemon (for the syrup).

Pulverise the zest with the sugar in a food processor.

2. Sift flour with salt and baking powder and add to the food processor with the butter and eggs.

Process until smooth.

3. Pour the cake mix into the prepared tin, smooth the top and bake for 1.5 hours.

4. To make the syrup, mix the sugar with the lemon juice.

It will be crystalline as the sugar does not dissolve fully into the lemon juice.

5. Turn the hot cake out onto a serving dish.

Spoon the syrup over. If you leave the cake/syrup to cool, the syrup will form a sugar crust over the cake.

Morning, all! Nothing exciting to report here. Again, it's just me, so I don't know what I will make for myself today. Scott is having a great time in Orlando, I just miss him like crazy!

PIO-You are killing my will power..........I WANT CAKE!!!!!!!!!!!!!!!!!!!!!!!!

Today is a wicked busy day. I have weigh in, a visit to Crop for chemicals, a trip to take Buddy's cousin for a fitting, back to Marisa's to catch Debbie before she heads back home and then a meeting tonight for Relay. Marisa wants me to get a feel for the committees available.

I left plenty of chicken in the fridge for Buddy and I will fix some veggies and a chicken salad at lunch to have for dinner as well.

Well, my merry-go-round keeps turning. Supposed to go to my godsons 7 on 7 game today but with this weather I think I might have to pass on that, it's a tad wet out there. He does have two a week for the next month so I will be able to catch a couple this summer.

Have mounds of paperwork to get through but this year my office actually looks semi-decent. :goodvibes It usually looks like a paper truck exploded.

Dinner these days is usually fast food or whatever I can grab out of the fridge.

We have another beautiful sunny Tuesday! I have done absolutely nothing today, and here before long I will head out to the pool. I really need to get packing, however I'm putting it off.;)

Dinner tonight is fajita salad.

I tried to get on yesterday, but the DIS wouldn't recognize my password. Don't know what happened, but here I am!

Sorry I dropped off the face of the earth. Alan took last week off work, and that always screws up my computer time. We did get a lot of projects done around the house, and Alan found time to take the kids camping, fishing, and a couple of other fun trips, as well. I got quite a bit of "me" time where they dropped me off at a book store or mall. It was quite nice!

Dinner tonight will be Grilled cheese pizza sandwiches and some kind of soup. It has been unseasonably cool here this June.
 
Raining here again. I had dinner at Marisa's this evening.Grilled chicken and a big salad. I'm hungry already!
 
Evening all. It's Wednesday night. Dinner tonight was at mum's. Curry, rice, stir fry and Asian soup.

Not much else to report except that work is keeping me busy.

I will probably stop by again in a little while and post another set of food porn from Hong Kong.
 
Good morning, everyone! :coffee: Man, I am so proud of myself. As I have mentioned before, Scott and I haven't spent a whole lot of time apart since we got married, and when we have, I don't sleep. Well, this week has been totally different and I'm so glad I figured out something to help!

(Please don't laugh!)


We sleep with a sound machine going and when I am settling in for the night, I turn on an episode of "Little House on the Prairie" on Youtube on my phone, turn my phone over, and put it in my chair. It helps me relax and makes the house not feel so empty. Yippee!! :happytv:

Anyway, dinner was a bit of a splurge yesterday. I ended up getting Pizza Hut delivered. I haven't had pizza from there in forever. I got enough to have today so I will be eating that and a salad probably.

Dang, I'm so bored. If you are friends with me on Facebook (please add me if you aren't, PM me!), you'll see where I wrote, "Someone tear me away from Law and Order, SVU!" I have parked my butt in front of the tv and watched it on Netflix. I am not getting anything constructive done, lol.

LOL!!!!!!!!!!!!!!! My cousin watches both of those shows so I immediately chuckled. Sorry;) LOL! Her sister called to "thank" me when I told her that Hallmark Channel was running a Murder She Wrote marathon and Buddy ran for cover!
 
I used to watch Law and Order: SVU a looooooong time ago and for some reason just stopped. Everyone now and then, when it was on tv, I would watch an episode or two. Well, recently I discovered I could stream it on Netflix.

HUGE mistake!!!! I started at the beginning of the series a few weeks ago and yesterday I began season 7. Oy. I have no life, but I am ok with it ;)

ETA: I am not ashamed or embarrassed to admit I think Chris Meloni is a total cutie patootie. I love the Stabler-centered episodes. Meow!!! :upsidedow:faint:
