Nan ~ OH.NO!! I hope Marisa's knee is going to be alright. That is the last thing she needs. I would be furious with the Landlord also. Shame on him.
You are so right - I love having a snuggly little body next to me. When our Kids were little/babies/toddlers we practiced the "family bed". So we always had our kids close and I love it now with my grandbabies.

Kimmar ~ Thanks!! Now I am going to have to go to the store to get everything for stuffed peppers. I haven't made them in ages and we love them. Yours sound amazing.

PIO ~ Good luck herding your kittens. This doesn't sound like a good 4 months ahead of you. But I have faith that you can do it. I like your idea of the red peppers. I am going to try them.

Well today is the calm before the storm - literally. Starting tonight we are to have blizzard conditions through the night. I just hope everyone gets home from Church before it all starts. It is a fast mover so by morning, around 9 or 10 it should be moving East. It could be a rough morning to get to school and work. But the brunt of the storm will happen over night. Oh yippie!!

WFDT ~ Beef stew (in the crock pot) and crusty rye bread (in the bread machine). Man my house is gonna smell good when I get home. :p

…..I make mine in a Dutch oven…..about ten minutes before they are ready to be served I put a [hefty] portion of shredded mozzarella cheese on the top of each pepper, so it can melt!

I do mine pretty similar except I bake them and use cheddar instead. We should have those again soon. :scratchin
 
….:scratchin…..:idea: I have an idea! Let's all schedule a "Stuffed Pepper Sunday" for sometime next month! We could all share our recipes and compare notes….I've also stuffed poblanos in the past too, which came out really awesome!

Not the 16th or the 2-3rd. Im busy both of those days. Although I should make them Saturday so the Sunday dinner will be easy.

I even have my food porn pictures documenting the making of peppers. I can't believe I've been on this thread for four years now! I took pictures of the making of peppers back in 2010 meaning to post them and never did, so now I can use them to help with my recipe! :cool1:

Sounds great to me - I am in!!

We have about 3" of snow on the ground. It was beautiful when we went to bed and white when we woke up. The wind is the worst part as it can drift our drive shut even with a few inches of snow. We do have a HUGE wind break to the North so that helps a lot. It is suppose to be in the 40's tomorrow. This was a wetter snow so we will get the benefit of the moisture and that is a good thing.

Dinner tonight will be what we should have had last night. All courtesy of Sam's club. Asian salad, fried rice and egg rolls.

Not much planned for this weekend. I love weekends like that. I was thinking last night what I was going to do. Hummm........I can't think of a whole lot that needs to be done. I might spend the time baking and filling the freezer with a few fast meals.

If I could ask for a few prayers I would really appreciate it. My furbaby, Cooper (boxer) isn't feeling well. He didn't get up with Doug yesterday morning, didn't go out, and didn't eat. He checked on him in the morning and he went outside. When I got home he didn't meet me at the door but did get up. He went outside and I got him to eat and drink some water. But mostly he just wanted to sleep. He never asked for treats while I was doing the dishes - which in and of itself is not like him. When I got up this morning he was down with Doug and had eaten and gone outside. But still in bed and when he got up it was really slow. I am worried!! He is only 6 which isn't that young but not really old yet. Of course it is Friday and I am torn about taking him in or just letting him be. He is eating, drinking and going outside. He just seems really sleepy and sore. I don't know what to do. But prayers would really be appreciated!! Thanks.

Ellen - I hope Cooper is feeling better today. Seems like there are a number of furbabies that aren't doing so good here. :hugs:
 
Chicken Tenderloins with Parmesan Couscous




My starting ingredients:

  • 1/2 cup Couscous - cooked following instructions on the packet (add 1/2 cup hot water and allow to soak for 5 minutes)
  • 1/2 cup Parmesan - grated
  • Salt and Pepper
  • Paprika - 1/2 teaspoon
  • Turmeric - 1/2 teaspoon (this was a mistake!!!!)
  • Chicken Tenderloins - 500 g




Preheat oven to 190 C for a fan forced oven; or 200 C in a conventional oven.


1. Mix the Couscous and the Parmesan together and season with salt and pepper.







I tasted the topping mix and thought it a little bland. So I added the paprika and turmeric. The turmeric was a mistake as it clashed with the parmesan. I would stick with paprika next time.







2. Gently press the chicken tenderloins into the mix to get a coating. Place on an oven tray.








3. Cook in the preheated oven for 15 minutes.








4. Serve with whatever side you like. I ended up making a salad with spinach, apricot and some of the reserved parmesan/couscous mix (without the paprika and turmeric).







5. My dinner!
