Congratulations Caili!! :banana: That is great to finish the program with a 1st place!:cheer2: Laura, Sounds like a busy but fun weekend! You are right I need a tripod, I had tried a little table top one & that didn't work well.

Becky, That fish taco looks awesome! I like chinese take out but I notice that I get headaches & just overall feel yucky after eating it. Even though I usually have to drink gallons of water afterwards.

Dinner tonight is red beans with smoked sausage & andouille. I still have leftovers from last night, but I feel like red beans. I have tons of washing to do, it is rainy &dreary here today, so I guess I just feel compelled to cook red beans. :confused3 :laughing:

Last night's dinner was delish. I made Stuffed Chicken Florentine, with a ricotta sauce on top. Mushroom Barley Risotto & roasted pearl onions.

Gretchen- There are worse things to happen than summer school. Donny failed science in his sophomore year and summer school was 20 miles away. I took him that time, along with a schoolmate whose Mom told him that she did not care how he got there, she was not taking him. I told Donny that was his one time and if he ever failed again, not only would he pay for the class he would also find his own way there. He knew I meant it and that he was on his own after that. That was the last time that happened, his summer was ruined, his Mom was a bear and he hated walking ;);)

Buddy is one of the most spoiled men on the planet! Before we got married he was eating his own food, that meant hot dogs and once in a while spaghetti with ....wait for it.....jarred sauce. Cheap jarred sauce. His fridge was pathetic! We stopped in at Gail's house on a leftover night and she literally cleaned her refrigerator out on him. He figured out she was teasing him when she gave him a bowl of olives :lmao::lmao:and a can of cranberry sauce :rotfl2:. He still has the nerve to tell anyone who listens that the only foods he will not eat is liver and asparagus :laughing:. His buddy told him last night that he does no look like he is starving or deprived despite his constant :scared: at my meals.

Aimee- glad that the pup is eating and drinking.

Rogue- Let's hope your DH has no more bad weeks :thumbsup2

Dinner is a Shepard's pie and a salad. W hav WW so once again, it is eat whenever you are home.
 
Sheryl- I am feeling way better today. What a difference a day makes! How are you feeling?

Nancy, I think it was posted, but it's not on this latest one. Here it is just in case. I actually like it better than rice risotto's because the barley holds it's texture. Last night I did use a little white wine in it, but I've left out the butter everytime I've made & not noticed it at .


Mushroom Barley Risotto
yield: Serves 6
recipe from Bon Appetit
Barley replaces rice in this twist on the classic Italian risotto.

(*This is my light version, no butter or wine.)

4 1/2 cups chicken stock or canned low-salt chicken broth (I used Kitchen Basics Natural)
2 teaspoons butter ( I didn’t use)
1 cup finely chopped onion
1 cup pearl barley
2 teaspoons chopped fresh thyme or 3/4 teaspoon dried
1 bay leaf
2 teaspoons olive oil
1 pound assorted fresh mushrooms such as oyster, stemmed portobello and stemmed shiitake, sliced (I only had white mushrooms)
1 garlic clove, minced
2 tablespoons chopped fresh Italian parsley
juice of half a lemon (my addition)

Bring chicken stock to boil in heavy medium saucepan. Remove from heat, cover and set aside.
Melt 2 teaspoons butter in large nonstick skillet over low heat. Add onion and sauté until translucent, about 5 minutes. Add barley, thyme, bay leaf and 2 cups warm chicken stock; bring mixture to boil. Reduce heat and simmer until most of stock is absorbed, stirring frequently, about 5 minutes. Add remaining stock 1/2 cup at a time, allowing stock to be absorbed before adding more and stirring frequently until barley is tender, about 50 minutes. (Instead of the following the next step I added the mushrooms after sautéing the other vegetables I also seasoned the vegetables.)
Meanwhile, heat oil in another large nonstick skillet over high heat. Add mushrooms; sauté until beginning to brown, about 3 minutes. Stir in garlic. Reduce heat to medium; cover and cook until mushrooms are tender, stirring occasionally, about 3 minutes. Squeeze Lemon Juice and mix in parsley into Risotto. Check for seasoning. Season with salt and pepper (fresh ground) . Spoon risotto into bowls, serve immediately.
 
Here is the recipe for Corned Beef and cabbage that I am using tomorrow I am not sure who to credit but it was from here. I am on my way to see if I can get some maple sap to cook my dinner in, it is a subtle difference but really good.

Corned Beef Brisket with Cabbage

3 pound corned beef brisket
1/2 C. chopped onion
2 cloves garlic, minced
2 bay leaves
1 medium head cabbage, cored, cut into wedges
1 C. maple syrup
1/2 C. mustard
1 Tbs. horseradish

Place meat in large saucepan with onion, garlic and bay leaves. Add water just to cover. Cover. Bring to boil. Reduce heat to medium-low; simmer 1 hour. Drain. Cover with fresh water. Cover; simmer 2 or 3 hours or until meat is tender. Remove meat from pan, reserving liquid in pan. Add cabbage to reserved liquid in pan and cook until tender. Meanwhile, mix syrup, mustard and horseradish. Place meat in shallow baking pan; spoon 1/2 of the syrup mixture over meat. Reserve remaining syrup mixture for serving with the meat (I don't do this, but pour all the mixture over the meat). Bake at 350 degrees for 20 minutes or until meat is well glazed, brushing frequently with remaining syrup mixture. Heat pan drippings; pour over meat. Serve with cabbage.

Forgive me girls...I have not been keeping up so my responses may be out of whack!

Do you believe I measured Andrew yesterday (he always seems to get taller when he is away for the weekends) and he is now 5'4" at 11??? Our nephew that was here yesterday is about 6'4" 6'5" and will be 17 soon and he was 5 foot at Andrew's age. At this rate my A is gonna be like 7 foot (not really but he'll probably tower over me)!!! :scared1:

Sheryl, we loved the NUVO!!! Gotta get another bottle...;) It has a really nice, perfumy taste. My neice also surprised us with a visit and she brought Mimosa ingredients (I am so proud of my neice...this is the one that spent a semester in Australia and she just spent Spring Break in New Mexico volunteering for Habitat for Humanity). It was a nice day! Your dinners look so good!

Happy Birthday!!!​

Well, we had T at the doctors again on Saturday. I was rushing to get ready for my dr appointment on Friday and I ate quick then fed him and I guess I had some crumbs on my shirt and a poppy seed got in his ear. I got it out but then worried that something else got into the canal. I needed peace of mind so we had him checked. All is OK and he was 8#s 3 oz so he is gaining nicely.

I also have to go back to the dr tomorrow. My incision is opening a bit. The doctor glued and taped it together on Friday but it did not hold. I think it has something to do with being a little chubby...:rolleyes: or that our bed is high...:confused3 Can anything ever be normal for me?

Charles is home from the hospital...he has to be on oxygen though and is still in lots of pain. We are going to try to see him this week...I think its best we get there soon...:sad1:


OK, I am babbling...sorry! Can you tell the baby and Tom are sleeping?

Glad you enjoyed the Nuvo! You know when I was nursing (way back in the day) my dr. told me to have one beer every evening!! Said it helped to produce milk! I just wished it would have made my child sleep. :laughing:
 
Sheryl, I know I have been a little bad (I have been better than normal though) but the stairs (we have a bi-level) and the bed are a big factor. I am being good today...promise!

The lactation nurse at the hospital did tell me one drink is fine and that it all wears off as soon as the tipsy feeling goes away...but I can't have just one...its like potato chips!!! I may have one beer tomorrow though!

We're back at the skating rink tonight, so dinner will be quick. I'll either have the leftover Chinese food or some pizza Becky gave me. The kids will probably ask for mac and cheese.

For the glaze, combine 1/4 c. apricot preserves, 2 Tbsp. brown sugar and 2 tsp. dry mustard.

Lauren- Okay.....another Mom face coming through. :mad::mad: Those are frowns. If the stairs are an issue then ask Tom to cart your stuff to whatever floor you are going to stay and then.....stay there. Order take out. Use paper plates and plastic cups. Use something to help you get in bed. You feel good but the stitches popping are telling you something but you are not listening. If you can see the results of too much on the outside then I worry what is happening on the inside, which heals even more slowly. Now sit in your favorite chair, turn the TV on and watch mindless shows.

Robin- How did I miss your birthday????? Happy Birthday!
 
We planned separate trips for Amanda (last November) and Patrick (May) so Kenny could have some one on one time with each child. We intentionally scheduled Amanda's first and were holding Patrick's over his head hoping it would entice him to do reasonably well in school. No such luck as he is apparently on a quest to be the oldest living 7th grader. He is currently failing math and english so no vacation for him. And maybe not a summer vacation either since he may be in summer school. :sad2: I swear, that boy has been on restriction since the first interim report came out.

Stupid question alert! I don't recall ever tasting corned beef and neither does DH. Never bought it or seen it in the store. 1) what does it taste like? 2) where the heck will I find it in the store?

I have now reached the ripe old age of 29. My sister in law sent me a Rayman Rabbid (?) game for the wii. It's such a simple game, we had so much fun playing it.

Luke has been having trouble sleeping again. He has been pointing at his tooth again. It looks like now the top molar is just beginning to swell and cut.I am really looking forward to getting away in two weeks. I just want some alone time with my two boys. Dinner yesterday was very good at my DM's. My DH who hates corned beef had three helpings and a some beer so he was a happy camper. Something stupid happened yesterday that got me in a little funk, families sometimes I want to scream :scared1: but lately it is tears. Pregnancy hormones are wonderful sometimes.

WFD- no cooking for me tonight. DH is working and I am going to stay home with DS. I will probably just eat a bowl of cereal and banana.
 
Aimee- I can't really describe the taste of corned beef, it's brisket, but tastes nothing like my favorite- smoked brisket. It should be real easy to find in the store in the meat dept, but get it quick. It lasts forever so I usually by a few, because after St. Patty's day it goes up to about 5 or 6 dollars a pound, now the cheap cut is 1.50 and the better cut is 2.50. I usually simmer it for hours, then pour a mix of gouldon's mustard and brown sugar over it and bake just to crust it up a bit. Last night I cooked it in the pressure cooker for the first time, it took an hour and was perfect. I just put the mustard on my plate and dipped instead of cooking it with the glaze. It tastes nothing like the junk you can get sliced at the deli- it's also not a diet friendly meat.
Also, since you always mention Cooking Light, I had to try it when I saw a 3 issues free. I just got my first issue last week and I love it, I never would have tried it without you mentioning it. That's where the black bean soup recipe came from that I will try as soon as I remember to soak the beans.

Nancy- you didn't miss my birthday, it was Saturday and I try not to turn the computor on during the weekend. I hope your taking your own advice and resting after your procedure.

Sheryl- I think I'm the baby of the bunch! The scary thing about being 29 is we were at a 4H event for my daughter and there were alot of high school girls there. They all look so much older than me! I see from your picture of the chicken your into portion control with your onions!
 
I have not posted here in a very, very long time but have been lurking and keeping up with what has been going on with everyone. Between work drama, family drama, and just not feeling that great most of the time lately I have been really lazy about what I've been cooking and didn't really think that anyone would be too interested in my dinners, but I've decided to make an effort to cook more often and better and might have something to contribute. I have also realized by reading and keeping up with all of you ladies that you are very kind and caring and to be honest I could use a little of that in my life right now, so I hope nobody minds if I join in again. Since it's been so long, I should probably introduce myself because I've never actually done that. My name is Susan, I'm 38 and married for almost 18 years with 1 DD, Katelyn, who is 12. I work for a local sheriff's office doing way too much paperwork to get people in jail to court and various other things of that nature. It's never boring which I guess is a good thing.

So, for dinner tonight-I put out boneless pork chops, and I'm thinking of coating them in mayonnaise and bread crumbs and baking them (not terribly healthy, of course, but good) and for side dishes some kind of rice if I can talk DH out of mashed potatoes and either broccoli or leftover baby lima beans from last night, depending on what I want when I get home. If I make rice it will be either yellow rice or rice with brown butter which would be my preference. I may wind up making both rice and mashed potatoes since I usually wind up cooking two separate sets of side dishes for the vegetable haters in the family-DH and DD-anyway. You'll notice when I post what's for dinner that will be a recurring theme with me-one main dish and a whole lot of sides. I try to keep it interesting, though, even if the other two people in the house only eat a few different things between them.

Well, work is piling up so I'd better go tend to it...

This is my recipe! It's what we are going to have for dinner tomorrow along with mom's Irish soda bread, and a new recipe for colcannon with bacon to go along with the corned beef.

Did I ever tell y'all about the woman I met at JFK while we were waiting for our flight home from London? Well, she is originally from Ireland, and had been visiting in Ireland and was on her way home to...wait for it...Utah! In fact, she lives just an hour away from me! We got to talking while we waited for our flight, and she was just wonderful! She got out her leftover Irish Euros and some Irish flag ribbons for Katie to have. Anyway, while we were talking we started comparing recipes for soda bread, stew, etc., and I found that my mom's soda bread recipe is exactly the way her grandmother used to make it back in Ireland! I was so excited! She also gave me the recipe for colcannon that I'm going to try tomorrow! She gave me her address, phone number and email, and I've been in contact with her a bit. Pretty cool!
