The What's For Dinner Thread - Feb '09(recipe index in OP)

Hi Guys,

I need some prayers for my brother...I found out today that he is extremely ill with stomach cancer. He can really use some prayers and good thoughts. He is my oldest brother and Godfather, has a young daughter and is truly a very down to earth, nice guy.

I am so upset by this...and trying not to be so my BP does not go up.

Do you remember all the whining I did about having to wear red? All I could picture was fire engine red ;)

Nancy -- Did Marisa and Kady have fun in Boston? They are traveling around a bit this week.

The kids and I are going over to my neighbor's house later this afternoon. The kids are all going to watch Wall-E, and the adults are going to socialize. I am not sure what time we'll be back, but I'll only have to fix dinner for me. The kids are having pizza after the movie.

They had a ball! The hotel was very nice and they loved the aquarium. Huge bonus was a Ben and Jerry's that offered several kinds of sorbets for Kady. She is generally lucky if there is one kind for her but this one had at least 5 different kinds for her to choose from. Marisa said Kady thinks they should head back for ice Cream :lmao::lmao: They are in NYC today and called to tell me it was a good thing they did not listen to us about packing boots. I guess the Nana knows best when it comes to enough outerwear is not always working.....they were sweltering :confused3:confused3

WE loved Wall E! It was a cute movie.

Have the kids seen The Secret of Ember? WE watched it last night and it was good.

Bethany....they are everywhere.....could this be another dream in the making?:rotfl:

I made a vegetable soup and had that for supper. Buddy is not feeling too spiffy so he had a boxed chicken soup.....he is not fond of vegetable soup I guess :confused3

Aimee, sorry to read about your troubles at work again. It's ongoing for you there, isn't it?

Well, church work is typically like this but we have had a difficult year or two. That said, this hopefully is just a bump in the road and we can continue on the really good path we're on and get past it. :thumbsup2

I think he is just stressed and so he feels lousy. Between all of the last week and having his sister with us all day, :sad2::sad2: He and his brother have both done all that they can to help her but she seems to be entrenched in her own mess and there is no digging her out. When she blurted the cancer thing it was horrible. He is between a rock and a hard place, she is not known for her honesty so this could be another story, she is not receptive to me going to the Dr with her and I could not make heads or tails out of what she was talking about. She really is not capable of understanding treatment options IMO, she told us she won't let them amputate her leg, will not accept Chemo, and is going to find another Dr for a second opinion.

At that point he was barely breathing. It never got better.
 
I'm here to report a meatloaf success!!! It was so delicious!!!! Katie loved it, Alan loved it, Leslie loved it, Jacob liked it, and Mary tolerated it. No one outright hated it, and I count that as a success!

I promise I'll post the recipe tomorrow, but right now Timothy is clamoring to be fed! I have just a few moments to post while Katie changes his diaper and puts him in jammies.

Nancy - I'm so sorry that Buddy is having a hard time. Sometimes siblings are just not worth the effort. Alan has a couple that use dire illness as a way to garner attention, then they "miraculously" recover. We just don't pay too much attention anymore.

Well, I have good news to report from my sister's hearing today. First of all, thanks to all sending good wishes and prayers her way. It helped her be more confident. She was awarded primary custody of their daughter and now she can start finally, moving forward with her life. And in true form xbil lost it in court--just when he was trying to convince the judge all the talk of his temper was lies, he blew up. So much so, that the bailiff escorted my sis and mom back out of the courtroom. Nice, huh? Thanks again!

We're headed to Florida in the morning and I might not be able to jump back on until we get back Monday night. Try not to chat too much while I'm gone, okay?:laughing:

NYC places love the heaters. My friend in Baton Rouge only remembers being hot in NYC because of how hot everything is inside.

I have read the book The City of Ember and it was very good. I think it's the same thing. :confused3 The book has a sequel but I forget the name. Something like the People of Sparks.

We went to Cirque de Soleil today. It was the Saltimbanco show, and I thought it was good. Typical acrobatic Cirque stuff with amazing acrobatics and good music.
 
Yesterday I got a spinach alfredo pizza for dinner. It was soooooo good. Later I changed into my pajamas, poured a nice glass of Rosa Regale and watched a semi-good movie, "Flight of the Phoenix." I had a good evening :)

Tonight I'm making shredded chicken BBQ sandwiches. They are so good and make me think of warm weather.

My thoughts and prayers to all of you going through a hard time right now.

Here is the recipe for the meatloaf, if anyone wants it. I got it from the crockpot 365 blog.

Blue Cheese and Cherry Meatloaf
1 pound ground beef
1/2 C. dried cherries
1/2 C. blue cheese crumbles (I used gorgonzola)
1 egg
1 tsp. seasoned salt
1/2 tsp. pepper
1 tsp. onion powder
1 Tbsp. fresh basil (optional) I used about 1/2 tsp. dried
1/2 C. dried bread crumbs

In a large bowl, combine all ingredients. Spray a loaf pan with cooking spray. Place meat mixture in loaf pan. Place loaf pan inside crock pot. Cover and cook on high 4 hours or on low for 7-8 hours. The meat is done when it is cooked thoroughly and has browned on top and darkened on the edges. Let stand 15 minutes before cutting.

Be careful when getting the loaf pan out of the crock pot. It was incredibly hot, and we finally decided to just cut the meatloaf inside the crock pot, and remove the pan when it was cool.

This got major thumbs up from Alan and me and Katie. The kids never even guessed that there was blue cheese inside, as it had melted, and just left a nice flavor behind. They did figure out the cherries, but even that didn't weird them out. Definitely a keeper!

Tonight's dinner is up in the air. The kids, at least, will be having pizza at the school. Alan doesn't want to do that (even though I think it would be nice to go and eat and read as a family), so I'm not sure who will win this one. I do know that Alan and I will be having lunch at IKEA. We need to pick up some light bulbs there and a couple of desk chairs.

Ann, Lauren, anyone who does short ribs....aren't they very fatty? I haven't made them in decades. The last one I had was at JIKO.......:love:

I very seldom see them in the stores here. Sheryl, where do you buy them?

Kat, I just happened to see them at Laborie's. Most did look pretty fatty, I had to hunt for a good package. I had buffalo short ribs at AP, that were good & Bob pretty much stole the plate from me. So when Ann mentioned them I just knew he'd like it. I remembered Becky posting a pic that she made for John that looked totally scrumptios.

Sauce turned out really good, but I thought the ribs could have gotten a little more tender?!?!?! This was my first time cooking shortribs, tips anyone?

I winged it, no really recipe. I browned the meat in my LeCeuset after dredging it with flour salt and pepper. I took out the meat and sauteed some onion, garlic and mushrooms. I added a 1/3 cup red wine and a jar of tomato sauce. Placed shortribs back in and simmered a couple of hours.
We had it over gemelli pasta, and bread for dunking into the sauce!!!

Sounds good!:thumbsup2 The tomato & wine should help tenderize the meat, so maybe they just needed more time. A slow cooker or pressure cooker would probably work well.

Sheryl -- Your dinner sounds fantastic to me right now. I could really eat something like that tonight.

I know Becky makes shortribs for her DH, and he claims they are delicious. I am sure she would post the recipe for you.

We did go to my neighbor's house, and the kids both enjoyed Wall-E. My neighbor had all kinds of snacks for us, so I am not terribly hungry. I think I will just put together something small for myself once I get the kids to bed...which is going to be soon. ;)

I was surprised that Alexis had liked Wall-E at the theater, I had worried she get bored with it, but loved it.

The thai curry was good, but soo spicy! I almost had a near disaster on my hands. I'm fixed it all, then tasted it & it was just missing something. Then when I went to put the jar of curry paste back in the fridge I noticed another jar of curry paste. What I had in my hand was Thai red chili paste! So to get the flavor I was craving I added the curry paste & then had to add another can of coconut milk. DH thought it was just perfect. If it makes him sweat it's good!

Glynis, I'm wondering what DH will think about cherries in a meatloaf? I'm always having to convince him with fruit in savory dishes, but then he likes it. The poor man though, I do not like meat loaf & I can't tell you the last time I made one. He of course does like it. So he hasn't had meatloaf in years & now he'll get one with cherries & bleu cheese! :lmao:

No cooking here this weekend. FINALLY, Johnny is going to do some more work in the kitchen - backsplash, painting and trim work. Trying to get this man to do work on our house is like pulling teeth, then when baseball starts that's the new excuse. We're in a Mardi Gras break from baseball so he agreed to work on the kitchen this weekend. Sorry for the rant, I also have a :headache: today.

Going out for seafood tonight.

My short rib recipes are at home, but I will put them up this weekend. With short ribs, I always cook them a couple of days before serving them. Then I just stick the pot in the fridge overnight, and when I am ready to serve, you can take all the fat off the top of the pot. Then I pop them back in the oven for a while longer.

I made pasta carbonara last night, with the addition of shiitake mushrooms. Here is a picture:
