Fajitas made with the leftover flank steak from last night! Oh, I better check the fridge though, DD's BF is here and he may have confiscated the steak while I was napping! :goodvibes
 
I'm making BBQ pork chops and I'm not sure what else yet.
 
Tonight we are having leftover homemade veggie soup. It was really good and it's always better the next day.

WFD at your house?
 
I'm going to be gone most of the day so to keep it simple, I'm just frying up some burgers and chicken patties when I get home and I'll probably toss some fries into the fryer ~ not health food by any means, LOL but at least they'll eat. ;)
 

Tonight we will be having beef burriotos smothered with green chili. A quick meal since older DD has volleyball tonight and DH has a coaches meeting at the high school.
 
I actually had time to put a pot of pinto beans in the crock pot this morning before coming to work so we'll be having some time of mexican food. DH was saying yesterday that he wanted some beans. It's raining outside so we'll probably end up having chili with beans or frito pies for the kids who don't eat beans.

I am making my husband's numer 3 favorite :) It's a Rachael Ray recipe. It's Spaghetti and Meatball Stoup (I keep the "stoup" in there because it really is thicker than soup, thinner that stew). I am serving it with garlic bread. Here's the recipe:

1 carrot, diced
1 medium yellow onion, chopped
3 garlic cloves, chopped
1 (14 oz.). and 1 (8 oz.) can of tomato sauce
3 cups chicken stock
1 package portobellini mushrooms, thinly sliced
1 pound ground beef or turkey
½ cup Italian bread crumbs
½ cup grated cheese
1 large egg, beaten
2 T. chopped parsley leaves
½ lb. spaghetti, broken in half
1 cup basil, torn or shredded


1. Combine beef/turkey, cheese, bread crumbs, egg and parsley. Roll into 1½ inch balls. Set aside.


2. Heat a medium soup pot over medium heat. Add EVOO. Sauté carrots, onion, garlic, and mushrooms for 5 minutes. Add tomato sauce and stock and cover pot. Turn up heat and bring to a fast boil. Cook for about 5 minutes.


3. Remove lid and slide meatballs in soup. Bring back to a boil and add noodles. Reduce the heat and simmer soup for 10 minutes or until meatballs are done and spaghetti is tender. Stir in basil and remove from stove. Serve with bread and cheese.

I know this post is ancient..Look at the weather,lol...I'm gong back through the whole thread and saving recipes to my recipe folder...I'm wondering how this is? I can't wait until next month when I start cooking some of my warmer meals
 
Last night we went out to dinner--split an antipasto, then DH had a parmesean risotto with local tomatoes, and I had a seared chicken with fontina cheese and mushroom sauce, grilled asparagus, and yukon potatoes.

DH is taking a client to dinner tonight, so I am just making myself a BLT, with tomatoes from the farmers market.
 
Tonight is DS10's open house at school and of course it's right at dinner time. I'll be making a fast easy dinner when we get home. Grilled smoked sausage, mac & cheese (the blue box) and canned corn. Definitely not gourmet, but DS likes it.

Just FYI, this is MY take on a Rachael Ray recipe. I changed a few things around. Here's a link to her recipe, it may sound better to you.

We are having Italian Beef in a Bucket Sandwiches

Italian Beef in a bucket
INGREDIENTS:
3 1/2 pounds beef roast: sirloin tip or rump roast
12 ounces (jar) Italian Giardiniera drained
12 ounces (jar) pepperoncini peppers
1 envelop Italian salad dressing -zesty Italian
10 ounce can beef broth
PREPARATION:
Place roast in slow cooker (3 1/2 quart). Mix all other ingredients together, draining oil from giardiniera - mine was water packed. (When adding giardiniera and pepperoncini, use 1/2 jar for a mild version or all for a spicier version).

Serve on Kaiser rolls with Parmesan or Provolone Cheese
 
If you like spicy (not hot...but flavorful), pepper jack cheese is great on italian beef sandwiches too! Yum!

We just had BLTs, with french fries for the kids, and VT blueberries on the side. Simple, but yummy.
 
Macaroni and cheese with green beans. I felt totally uncreative tonight. We may have some fruit or some ice cream later.
 
I haven't posted in a while because I've been put on bedrest for the rest of the pregnancy so no more cooking for me. Our family is sending food during the week (DH works late a lot) and DH is cooking on the weekends. My mom asked me if I had any new recipes I wanted her to try so I came here to browse.

Sunday DH made Paula Deen's baked spaghetti and it was pretty good. We'll have that and grilled chicken tenders tonight. It's clean out the fridge night.

liamandcaili I would love to hear more about your mom's famous eggplant sticks :) . Sounds yummy!
 
Hi! Well, I went away for the weekend and yesterday I was in severe pain at work, called dentist this morning and had my wisdom tooth pulled today. So, my dinner was a scoop of tuna salad and some passion fruit sorbet. :) Minimal chewing for me.

That's okay - over the weekend my parents took my boyfriend and I out for some fabulous dinners: Friday was Chinese food, Saturday was the best lobster bisque and broiled lobster tails (the others had french-fried lobster tails). Sunday we went to Applebee's and the waitress gave us lots of extra sides to make up for a really long wait. I had a half size grilled chicken Southwest salad with no dressing, trying to be good but ended up eating a few bites of the loaded mashed potatoes and buffalo fingers, too.

I have a lot of canned crabmeat here. I'm thinking of ideas for using that for tomorrow. Any suggestions?

We had Rachel ray's Honey Nut Chicken Strips ( can you tell I just got a new cookbook :) ) , broccoli and fries . The chicken strips were yummo!!!
