It's super easy...and I apologize for the inprecise measurements. I rarely measure ingredients.
Creamy Avocado Sauce
1 ripe avocado
3-4 scallions, white and light green parts, chopped (I use regular onion if I don't have scallions)
3-4 tbsp finely chopped cilantro
1 small jalapeno, ribs and seeds removed, then chopped (if your jalapeno is really hot, you won't need this much. You can also substitute hot sauce)
1-2 tbsp fresh lime juice
1-2 tbsp sour cream
salt to taste
Put all ingredients in food processor and blend until smooth. Adjust flavors as necessary by adding more lime juice, cilantro, hot sauce or salt. Add more sour cream if you want it creamier.
If you're not serving this right away, put plastic wrap directly on the surface of the sauce and refrigerate. You can also save leftovers this way and have it again the next day...or if you're like me, with nacho chips later that night
