I ended up not cooking last night, as my BIL took my kids to the movies. It was kind of nice, so I'll be making the Ritz Parmesan chicken tonight. Then, we are off camping until Tuesday. Camp food, yeah! Tinfoil dinners, Dutch oven potatoes and chicken, yummo!!!
 
:goodvibes Homemade pizza! Not sure what type. I did thai chicken and barbecue recently, so I think I want something more traditional- maybe margherita with fresh basil and tomatoes and fresh mozzarella. I make homemade pizza of some kind almost every other Friday. I'll have to make a salad to so it will fill me up on one or two slices. I'm considering making homemade dressing. Looking around for a recipe now.
 
Leftover Brats or Hamburgers from a catering gig (golf outing) today. Been in a hot kitchen again and I'm not cooking! ;)

There is a dinner after the golf outing tonight where they will have roast beef, fried chicken, scalloped potatoes, & green beans and there will most likely be leftovers so I'll go over and nab some of it for tomorrow. :)

It's super easy...and I apologize for the inprecise measurements. I rarely measure ingredients.

Creamy Avocado Sauce

1 ripe avocado
3-4 scallions, white and light green parts, chopped (I use regular onion if I don't have scallions)
3-4 tbsp finely chopped cilantro
1 small jalapeno, ribs and seeds removed, then chopped (if your jalapeno is really hot, you won't need this much. You can also substitute hot sauce)
1-2 tbsp fresh lime juice
1-2 tbsp sour cream
salt to taste

Put all ingredients in food processor and blend until smooth. Adjust flavors as necessary by adding more lime juice, cilantro, hot sauce or salt. Add more sour cream if you want it creamier.

If you're not serving this right away, put plastic wrap directly on the surface of the sauce and refrigerate. You can also save leftovers this way and have it again the next day...or if you're like me, with nacho chips later that night :blush:
 

I'm just making burgers tonight, and a grilled Italian sausage for DS who hates hamburgers. I am not sure what else I have to go with it except for watermelon.

Ahhhhhhhhhhh Chipotle. Since we moved to the boonies, we no longer have Chipotle. I miss it so.
 
We're having blt sandwiches - but I'm baking refrigerated biscuits instead of having them on bread because we like them on warm biscuits!

For dessert later tonight I made a lemon pie - just like a key lime pie but I used lemon juice instead of key limes. It is the best!
 
I've been sick so I have some catching up to do:

Thursday: a benedryl and bed at 6:30. Boo-hoo!

Friday: I made pizza--really simple margaharita style. I could only have one slice because my stomach was still under the weather.

Saturday (today) hmm...I must be feeling better because right now the plan is to stuff chicken breasts with broccoli and cheddar cheese, wrap them in bacon and do them on the grill with some corn on the cob and a spinach salad.
 
We have an afternoon wedding followed by two receptions today and it's about an hour away. Something tells me we'll get dinner out or pick up something super easy to fix on the way home.
 
There wasn't much roast beef left over from yesterday but I got a bunch of shreds so I'm going to make Beef & Noodles tonight with the leftover scalloped potatoes & green beans.

I want to make grilled salmon tonight, but I have to get to the store first and DH needs to get the propane tank filled. Not sure if those two things are going to happen so I may change the menu.

DH has been out on a landscaping job since early this morning and he may not be willing to go back out for the propane when he gets home.
 
We had Digornio pizza tonight. Just too tired to cook anything. Will probably have spaghetti tomorrow night.

We went to the wedding and then out to a German restaurant we'd been wanting to try.
 
Um I had some cheese sticks and milk...lol. DFiance was working an extra shift and I didn't feel like cooking so I poped a few cheesesticks in. Yum.
