I love reading and catching up on this thread even though I don't have time to post as much....

Last night we also had BLT's. We had local corn on the cob to go with it and fresh peaches for dessert....easy but yummy.

Tonight we had tacos from a local place. They're awesome. Their corn tortillas are handmade and are real thick and soft...almost like a cakey tortilla...not sure how else to describe them, but they're famous around here...
 
Tonight we went to Olive Garden to take DD and an old friend out before they go back to college. DH had spaghetti and meatballs, DD had chicken parm, friend and I had shrimp and asparagus over parmesan risotto! (different and good!)
 
The night before last we had grilled salmon, mashed potatos, corn on the cob. It was so good. Last night we had chicken sandwiches from Sunday's leftovers.

I have some ham steaks in the fridge, so I think I will grill them and serve with a salad and veggie. I don't know what kind of starch yet.
 
Tonight I am making crockpot cheesy chicken with rotini. We are having French bread with it. Recipe is on page 1. It is real comfort food :)

Today I'm going to get the grill going and put some steaks on before work...I'll make a pan of fried potatoes and a pot of fresh green beans with bacon pieces, too. :sunny:
 
Tonight DH has to wine and dine the client again (blah!) so I am going to have dinner with my parents. We are getting indian food, yum! I'm picking it up after work, and I need to narrow down the order. Right now I have about five entrees and three appetizers on the list--a bit much for three people!
 
Thank you all so much! I am a stay at home dad, and I am always trying to come up with ideas for dinner. I can't wait to run through this list...

I thought that I would add one of my personal favorites... King Ranch Cassarole.

1 can cream of mushroom soup
1 can cream of chicken soup
1 (10 ounce) can rotel
1 (4 ounce) can chopped green chilies
2 cups chicken broth
18 corn tortillas, cut into quarters
2 cups cooked chicken, chopped
3 cups shredded monterey jack and cheddar cheese blend

Preheat oven to 350.
In large bowl, soak tortillas in broth for 2 minutes.
Remove tortillas and set aside.
Add soups, Rotel,& chilies to broth.
Mix well.
Grease a 9 x 13" baking dish.
Layer 1/3 tortillas, 1/3 sauce, 1/3 cheese& 1/2 the chicken.
Repeat layers twice, ending with tortillas, sauce, then cheese.
Cover with foil& bake for 45 minutes.
Remove foil, bake an additional 5-10 minutes.


I hope that it helps others as much as this thread will help me :)
 
I love the King Ranch casserole. I haven't fixed that one in a while.

Tonight we're picking up BBQ and taking it to MIL's for her birthday. So no cooking here. :thumbsup2 I just hope she has on her air conditioning. It's deadly hot and she often just runs fans. :rolleyes:
 
Back from camping and trying to jump back into a "normal" routine. Just found out that my niece and her husband are in a babysitting bind, so I volunteered to watch their kids. So, we will be having a very simple barbecue of hot dogs, hamburgers and corn on the cob with potato salad on the side. Hopefully that will feed my family plus the 6 other kids. Maybe I'll make cupcakes for dessert. Hmmm, might need to think about that!

Do you put anything on your salmon when you grill it? I usually brush it with evoo and sprinkle with garlic salt, season salt, and lemon pepper. I would like to try something different though.

Tonight we're either having BBQ chicken leg quarters or chili. I'm going to let DS10 decide. It was his first day back to school and he wasn't very happy about it. Hopefully it wasn't as bad as he made it out to be. :rolleyes:

I sometimes use a Teriyaki baste and glaze on my salmon. Oh man, I'm drooling just thinking about it!!
 
I was supposed to have a meeting tonight so it was going to be "Fend for yourself night" but the meeting got cancelled and I didnt find out until 3. I hadnt had lunch so I stopped at Quiznos and got 2 different subs to share....one Classic Italian and one smoked brisket. Those will be lunch and dinner.

The maple-glazed salmon recipe listed on Page 1 is excellent. You can even just make the glaze and not bother with the cedar plank.

I also like honey/mustard glaze (equal parts honey and mustard) on salmon, or sometimes I marinate it in Good Seasons Italian dressing for 30 minutes and grill it. When the fish comes off the grill, I drizzle melted butter over it. If I'm feeling ambitious, I add garlic or herbs, or both to the butter. Hmm...I may need to get some salmon for tomorrow.

Here's another tip: my previous fishmonger (we moved) recommended that whenever you grill fish, you should marinate it in olive oil for at least 30 minutes before grilling. It keeps it moister. I usually also add salt, pepper and sometimes lemon juice.

Tonight we just had take-out pizza. I spent the afternoon weeding my garden and staking up my tomato plants, so I didn't feel like cooking.
 
Tonight my mom brought over chicken with cheese and french fried onion rings on top, green beans with parmesan cheese and flavored rice. The chicken and green beans were delicious! I've asked her for the recipes and I'll post them here when I get them.
 
I watched WorkOut this afternoon and she was having mexican and it looked wayyyy too good so we ordered mexican take out. It was really good!

Dh and Ds are leaving today to go camping (dd and I will join them tomorrow afternoon) so it's girls night here. We are going to make some Mexican something (corn tortillas, lean ground beef and black beans, fat free refried beans and low fat cheese) We are on Weight Watchers, so we are going to try to have something "special" yet stay on track. We are going to watch a chick flick (Chocolat maybe) and have fun!

I used a foil package for this salmon, and seasoned it with garlic powder, onion powder, dill, kosher salt and pepper. I also melted some butter and rubbed it in, and then let it sit in the fridge for about 30 minutes. It really was very good. The recipe said to grill for 15 minutes, but this was a 2 lb piece of fish, so it took longer.

I am going to use a maple glaze and finish the fish with bacon the next time.

I'm reading all of the posts before I respond the next time because I missed this. Thanks for the tips, my fish is usually or or miss :confused3 , and I see that you use fish often in your meal planning, so I am looking forward to following your suggestions :thumbsup2.
