Well, we did all of our BBQing over the weekend and I have to be to work this afternoon so I'm just going to have DH pop in a Freschetta pizza for everyone. :sunny:

OK, I got permission from my partner to share his mother's recipe for spanish rice. (It's really pretty simple, and he changes it up from time to time, but here's what he did yesterday at least!)

Mother Ford's Spanish Rice Recipe

1 lb. lean ground beef
1 medium onion, diced (about 1 cup)
bell peppers, diced (about 1 1/2 cups; we like to use different colors for visual interest)
1 1/2 cups long grain rice
1 (12oz to 16oz) can diced tomatoes with chilies (or regular diced or stewed tomatoes)
1 can tomato paste
enough water to add to tomatoes and paste to make the proper balance for the rice according to its package (usually 2:1 or 3:1 liquid:rice)
chili powder to taste

Preheat oven to 375. Brown ground beef with a little chili powder, add onion and bell peppers, cook until veggies are tender. Meanwhile, in a glass casserole, mix together the tomatoes/chilies, tomato paste, and water, then stir in uncooked rice. Add the beef/onion/pepper mixture, stir, cover and bake for 45 minutes. Remove cover, stir again, and cook another 15-30 minutes until liquid is absorbed and rice is tender. Remove from oven and let sit for 10-15 minutes for the flavors to blend. Serve.

NOTE: If using regular diced or stewed tomatoes, add more chili powder to the casserole before baking.

Thanks for sharing your recipe, buckylarue! That's really different from what I thought it would be. Sounds tasty.

Today we had another big family linner. The menu was grilled cornish hens that had been marinated in oil and cuminseed, with a mango-jalepeno-red bell pepper salsa. Potato salad, roasted carrots pureed with cumin, and an heirlooom tomato-basil-fresh mozzarella salad (tomatoes were not that good unfortunately) were the go-withs, along with leftover eggplant sticks and orzo salad from yesterday for those who wanted it.
 
First, Thank you buckylarue, for the spanish rice recipe. I am going to try it one night this week.

Now I need to get up to speed on grilling, mine do not look so good as these. :confused3

Yesterday, we had a last minute late late BBQ with a mixed bag of goodies. Potato salad flavored with cucumber and herbs, baked beans, tomatos and cucumbers, grilled steak ( not so good) hotdogs and hamburgers.
For dessert we had an apple berry pie and a Lemon pie from the bakery, and I made some really good ice box lemonade squares.

Spray a 9 inch sq pan with Pam

Combine 18 crushed graham crackers with 1/3 cup melted butter.
Press in pan
Beat one 12 oz can of frozen lemonade, thawed with 1/2 gallon nonfat frozen yogurt.
Spread over crust and freeze for several hours. Cut into squares. Add a little cool whip if desired when serving. This makes more filling than you need, I saved the extra for an afternoon treat. It is very lemony, but hit the spot on a very hot day.
 

Plans were changed, we are staying in tonight. I am making Rachel Ray's Smoky Chicken Patties (Boo Patties), and onion rings. The recipe is on the main page.

Tonight I think I am grilling turkey burgers and serving on toasted foccacia with red onion, tomato, and cheddar. I have some potato salad leftover from yesterday to go with.
 
My dinner tonight, unfortunately, was terrible. I made grilled clams, a tasty garlicky sauce for them, corn on the cob and salad. However, when I took the clams off the grill, they were completely sandy. So sandy that there was no way I could just rinse them off and salvage them. To make matters worse, the ones that weren't too sandy, were flabby. I threw them out and microwaved myself a baked potato. Considering that I had some of my mom's leftover potato salad for lunch, I am feeling kind of gross.

I am going to have to think up something really good for tomorrow...oh but I can't. DD has ice skating. Really good takeout then.
 
Tonight I am finally making meatloaf and smashed potatoes for dinner. I had planned on making it last week but didn't have everything I needed for it.

Yesterday I ran errands, and then took my DGD to McDonalds. Well I couldn't resist a Big Mac, and paid for it. I felt lousy for the rest of the day, so we ate leftovers out of the frifge. I'm not sure about tonite's meal. I'll check out the market later.
 
I think tonight I am going to make one of my favorite sandwiches: vegetarian pan bagnat. The sandwich has fresh mozzarella, tomatoes, onions, kalamata olives, basil, olive oil, balsamic vinegar, and salt and pepper all loaded into a hollowed out crusty breadloaf. You wrap the sandwich in foil and weight it down for a while so that all the juices mingle. This is great for a picnic. If I am feeling especially ambitious I might also make a couple of devilled eggs: DH has been asking for them lately.
 
DD has been sick today (no ice skating) and I have had to deal with a couple messy clean-ups, so to say I didn't feel much like cooking, or eating, is an understatement. I just made some homemade macaroni and cheese for DS and I ate some of it.

DD is feeling better now, so hopefully I'll get to cook something good tomorrow.

Will you post the recipe/detailed instructions? That sounds delicious!

It's 4:30 pm here and I still have no clue what we're having for supper. I don't feel well and I'm totally uninspired. I have chicken, ground pork and ground meat in the freezer that I need to do something with. Fortunately I have plenty of sides and veggies to go along with it, I just want something different for the main course.
 
Roast, potatoes or cous cous (not sure if I have potatoes at home) and corn.

Last night we had chicken fajitas(chicken was marinated in a honey-lime marinade) and refried beans with cheese. Strawberry shortcake and cupcakes with raspberry buttercream frosting for dessert(leftover from Memorial Day dinner).

Tonight it looks like BLT's...not sure what else.

I finally came up with something. We're having meatballs in brown gravy with either rice or mashed potatoes with broccoli and corn on the cob. I'm still trying to eat out of our freezer and pantry (they're both full, but I really don't know what's in there) so our dinner combinations might get interesting over the next week or so.
 
It's after 7, and DH, DD and DSIL are over at the greenhouse, so I have ordered pizza. I was in the yard until 6:00 tonite, so trying to feed them when they get home and then clean up after was more than I could think about.

liamandcaili: I'm glad the your DD is feeling better. I remember those days.
 
I want to know about the raspberry buttercream frosting too!

And thanks, Nancyg. She had an apple juice and a couple saltines...I am sure she will wake up starving in the morning. Now if I could only get the Lysol smell out of my house, maybe I would too :)
 
Where the heck is this year going?!

Tonight we are having garlic roasted chicken with rosemary and lemon (recipe is on page 1 already). I am making a side of tomato parmesan angel hair pasta and probably some green peas.
