Hi, ladies! :wave2:

Sorry I haven't been posting here but we finally moved into our new house this week and my computer just got hooked up today ~ this is me when I saw the Dis, LOL :yay: :dance3: :cheer2:

Anyway, since we are basically living out of boxes at this point, we have been doing a lot of BBQing and take out. Tonight we grilled thick cut pork chops seasoned with a Creole rub and had some homemade fries on the side. :sunny:
 
Tonight I am making spaghetti and meatballs, but using fettucini noodles instead. I am having sundried tomato basil bread with it :)

WFD at your house?
 
I have to work today so dinner will be whatever DH throws together ~ which will likely be frozen dinners or pizzas ;) .
 
London broil, baked potatoes and fresh corn on the cob. oh, and some veggie kabobs too
 

Wow! I just found this thread with all these yummy recipes! Can't wait to try them all.

I have tried to read each page but it is quite long...May someone please be kind enough to let me know what EVOO is? It may sound like a silly question but I cannot figure it out...I probably missed it from an earlier posting.

Thanks for all these wonderful recipe ideas....sorry for the silly question.
 
Curry Chicken, rice and whatever veggies I find at the farm market. Yum
 
Usually sundays we go to dinner at my boyfriends parents house with the rest of his family but they are out of town. So tonight we are having little ceaser's pizza and crazy bread. Yum!!!

We stayed over at my parents' house this weekend. Yesterday we had fajitas with guacamole, sour cream, grilled steak and chicken, Spanish rice, cumin corn and refried beans. My brother was bemoaning the fact that he overcooked the steak, but I didn't complain since the steak is usually still mooing when he cooks it the way he likes it.

Today, we had swordfish with pesto, Mom's famous eggplant sticks, sweet potato sticks and broccoli, which Mom put Molly McButter on...Dad can't have butter, but I can't stand the chemical stuff. I didn't eat the broccoli. Everything else was yummy though, and the pesto was so garlicky, there is no need to fear vampires here tonight.
 
I have been at my Moms everyday, so no cooking in my house!

Tonite we had a great meal. DS and DDIL are going home this evening, so i wanted a nice dinner before they got on the road. We had shrimp cocktail and bruschetta on garlic bread for starters. I fixed a tomatoe, cucumber and onion salad, fresh corn on the cob, baby corn and sugar pea stirfry, grilled steaks and a turkey medalion wrapped in bacon for DD.
 
We are having leftover spaghetti and meatballs for dinner tonight, along with more sundried tomato basil bread :)

I am so excited to find this thread! Haven't seen it previously. I love to cook, and plan monthly menus, so most days I should be able to contribute! :)

This week is VBS at church, so we'll be having your standard "gourmet" kiddie food. Tonight is Hot Dogs, Cheese Puffs and Grapes. Mmmmm, doesn't that sound yummy?? :teeth:

Yesterday DH and I joined his parents for dinner out. They wanted to go to a Japanese teppanyaki type place. I had never been to one before, and if I do not go again, that will be fine with me.

Tonight DH is working late, so I am making something easy: grilled turkey, carmelized onion, and cheddar paninis, with veggie slaw on the side.
 
Here are a couple of new recipes I tried last week. We ate them as lunch! (Along with a bunch of other junk food... at least these had healthy stuff in them!) Hope you enjoy...

Made these for our weekend away with friends. Consensus was, I should've made a triple batch (at least!!) of the spinach dip! I made a double batch of the hummus, which was also very good. But the spinach dip was amazing!! (Both are from the 12 Best Foods Cookbook by Dana Jacobi, I highly recommend this cookbook!!!)

Curried Spinach Dip

1 tsp curry powder
1 tsp cumin
1/4 tsp turmeric
1/8 tsp cayenne pepper
1 vegetable boullion cube
2 tsps canola oil (I used olive)
1 small red onion, finely chopped
1 large clove garlic, finely chopped
1 10oz bag frozen spinach, defrosted, squeezed dry
2 tbsps light cream cheese
1/2 cup fat free plain yogurt
salt/freshly ground black pepper to taste

Combine first 4 ingredients in a bowl. Dissolve the bouillon in 1/2 cup hot water and set aside.

Heat oil in medium skillet over med-hi heat. Saute onion until soft, about 4 minutes. Mix in garlic and continue cooking until onion starts to brown, about 3-4 minutes. Mix in spices.

Add spinach, pulling it apart with your fingers. Pour in the boullion. Simmer until spinach mixture is dry (5 minutes or so).

Remove from heat and mix in cream cheese and yogurt. Season to taste with salt and pepper. Serve warm, accompanied by pita chips or crackers.

Black Bean Hummus

15 oz can black beans, drained
1 clove garlic, minced
1/4 cup soft silken tofu
2 tbsps tahini
1 tsp cumin
1 tbsp olive oil
1 1/2 tbsps lime juice
salt/pepper

Process all ingredients in food processor. (Season to taste with s/p.) Serve in a bowl, garnished with a sprinkle of sweet paprika.
