Tonight, NC Beast is having leftover pork BBQ from our day early anniversary lunch out and I'm having some BBQ chicken (frozen from last week) plus some veggies.


Yesterday we had bbq burgers.
 
We had artichoke chicken tonight...it is so yummy.

3 1/2 to 4 cups cooked chicken...cubed
1 large can artichoke hearts drained and cut (I use 1/4 of the big jar at Costco)
1 can cream of mushroom
1 can cream of chicken
1 cup mayo
1 tsp garlic

Place the chopped artichokes at the bottom of a baking pan and then top with chicken. Mix the soups, mayo and garlic and put on top of the chicken.

1 C grated cheese
1 C corn flakes
8 pieces cooked bacon crumbled
2 T butter (melted)

I put the corn flakes and bacon in a zip lock and crush the corn flakes a bit..then I add the cheese and shake it up. Pour on top of mixture and top with the butter. Bake at 350 for 30 minutes.
 
I am in the mood for some comfort food tonight so I am making homemade vegetable soup. If anyone wants me to post my recipe I will. I am making some cornbread to go with it :)

I actually want you send me some, I need a little comfort food, but don't have time to make it. ;)

My Mom is sick, so I'm not home enough to be cooking, and DH is at the mercy of my DD. I am keeping the marguarita chicken recipe though, looks super!

Oh it is. You can also bake it, but it tastes better grilled :) My Kitten-tash was a good companion :)

This sounds so good! What kind of cheese did you use?

I had a bit of a picnic dinner tonight with bread, brie, salad and some leftover curried chicken. The curried chicken salad was really yummy so I'll post the recipe (originally procured by DSis). Three notes: I never make this quantity. It's pretty easy to 1/3 or 1/2. I never use celery...yuck. I buy a pretty decent brand of curry powder. The kind you get in a lot of supermarkets tastes gross. I like the sweet curry from Penzeys Spices (they ship).

Curried Chicken Salad -- Serves 6

6 split chicken breasts, skin on
olive oil, salt, pepper

1.5 c mayonnaise
1/3 c dry white wine
1/4 c mango chutney (Major Greys is a widely available brand, although this time I used Hot Mango Chutney by Crosse and Blackwell)
3 tbsp curry powder
1 c diced celery
1/4 c chopped scallions, white and green parts
1/4 c raisins (use golden raisins...they look nicer)
1 c roasted cashews

Preheat oven to 350 (or prepare your grill). Rub chicken with olive oil, salt and pepper. Cook (or grill) until done...about 40 minutes in oven, about 25 on the grill.

Remove skin and dice chicken into bite-sized pieces. Put in glass or ceramic bowl with celery, scallions, raisins and cashews.

Combine mayonnaise, wine, chutney, curry and 1.5 tsp salt in a food processor. Mix until smooth.

Combine mayo mixture with the rest of the ingredients. Serve at room temperature.

One other note: This can be made in advance so the flavors combine better, but leave out the cashews until ready to serve. They get mushy in the refrigerator. And don't forget to let the dish come to room temperature. It doesn't taste as good if it is too cold.
 
I'm making bbq chicken breasts, sweet potato fries and steamed broccoli as I type this. Nothing to elaborate, I have a cold and my head feels wonky.
 
Tonight we are having leftover homemade vegetable soup and cornbread. Boy I tell you, it sure was good. I need some comfort food and it did the trick!! :)

ETA: Just a little vent. I am so thankful to those of you who post regularly. A WFD thread was posted tonight and it got 3 pages worth of responses. Kinda makes me bummed. :(
 
I have a package of chicken breast and 6 ears of corn, I guess we are grilling. I am thinking maybe kabobs marinated in Lawrys.
 
I'm back! :)

First off, I must point out that I NEVER out celery in my curried chicken salad, or anything else for that matter! I do not know where Dsis got that idea.

Tonight we are grilling brown sugar-spice crusted chicken and corn on the cob. Sliced tomatoes and basil and crusty bread on the side.
 
I think we're going to Red Lobster for dinner tonight. Gotta go check out the menu on their website.

Edit: I'm having Grilled Garlic Shrimp and Pan Seared Scallops with lemon sauce. and maybe some clam chowder.
 
Hi, guys. I thought I'd hop on to add mine before I go to the store to pick up a few things. It's Thai Chicken pizza, based on a recipe I saw on the Food Network , but with my own changes.

Thai Chicken Pizza

2 leftover grilled chicken breasts
1 jar Thai Peanut Sauce (12 - 16 oz)
1 can coconut milk (16 oz.) I use "lite"
2 T cornstarch
2 T water
1 bag ready made pizza crust dough from freezer section (10 - 12 oz.) or use your favorite homemade dough recipe
1/2 cup unsalted peanuts, chopped
1 1/2 cups mushrooms, sliced
1 1/2 cups bean sprouts
1 red bell pepper, sliced
5 scallions, sliced
2 cups mozzarella cheese, shredded I use part skim

Preheat over to 400 degrees.

Put peanut sauce and coconut milk into saucepan. Whisk together cornstarch and water. When peanut sauce mixture is warm, add cornstarch slurry, whisk well and bring to a boil. Remove from heat to cool and thicken.

Roll out pizza dough and press it into a pizza pan (I use 12")

Spread sauce on dough. Put half of peanuts, half of sprouts, half of scallions, sliced chicken and veggies (mushrooms and pepper) on top of sauce. Sprinkle cheese and remaining bean sprouts over the top. Bake until cheese bubbles and begins to brown- about 20 minutes. When done, slice into 8 slices and sprinkle remaining peanuts and scallions over the top.

You can add red pepper to the sauce if you like it spicier. I'm serving this with a salad with Asian Sesame dressing (Ken's lite) and probably a cocktail since it's Friday in the summer. :sunny:
 
Nothing too exciting for us here today. I made myself a cheeseburger, and grilled some sausages for the kids. I also made some orzo pasta with butter and chives. DS and DD think no meal is complete unless some sort of pasta is involved. They also each had a huge bowl of blueberries.

For the record: I never said that DSis puts celery in her curried chicken salad. I know she doesn't. She hates celery as much as I do. However, the original recipe, written in DSis's handwriting, has celery as an ingredient. She claims a demon must have seized her hand. Feel free to ignore or include the celery at your own discretion.

Just wanted to stop in, I haven't posted in a long time, summer is busy with the kids all off school etc.

Spent a week in Florida panhandle for vacation, and now back to work!

Lindsay, sorry about your driving to PF and having to spend so much time on the road!!
We had an extra-long drive to Panama City this time. DD was at a camp in Murray Ky, we picked her up on the way, then headed down toward Nashville, of course we hit there right at rush hour, so we were slowed down a lot. Spent the night in Alabama, then went on the next day to the condo we rented in PCB.

Originally we thought we might stop in Memphis, (DD 21 and DD 11 are both Elvis fans) but that didn't work out time wise.

Anyway, glad the thread is still here, I may get back to cooking something decent now. Family reunion is today, we bring a dish to share, and then probably will get KFC or Subway for our main meal.

Lindsay, your corn/blackbeans sounds like something I'm making to take along, its a cold salad, I'll post it later when I finish working here.

This afternoon we are going to my coworker's wedding and will probably go out to eat depending on the food at the reception (please don't take this the wrong way. It's just if they have a lot of food there's no need for us to go out to eat. If they just have cake and mints we will, know what I mean??)

So no cooking for me tonight!

Good Morning Lindsay et al! I have no idea what we will have for dinner. Supposed to be in the upper 80's here (very hot for Maine) and I think I caught ds's strep throat. None of which makes me want to do any cooking. Chinese maybe, or pizza. OR dh can cook!
 
Mermaid02, hope you feel better soon. I'm sick too, but just a cold. :sick:

I have nothing in the house to cook and I don't feel like going out in the rain to go shopping. Orginally, I was going to make my version of McDonald's Asian salad, now it might be take out pizza. :umbrella:
 
I'm making gardenburgers on onion buns. I'll also have mango slices and strawberries on the side. I know it doesn't sound too exciting but I love gardenburgers since I don't eat meat.
