We are having leftover spaghetti and meatball stoup tonight. Boy was it good!!!

As of this moment -- I may change my mind when I go into the kitchen -- I am making grilled chicken rubbed with cumin, served with avocado/sour cream sauce, rice (plain for kids/I'll jazz mine up with herbs, scallions and maybe some almonds), and sugar snap peas.
 
Happy EARLY morning everyone!

My husband and I are heading up to Pigeon Forge with my BIL today. We are going to eat breakfast at the Apple Barn. MMMM MMMM MMMM!!! I can't wait! We are stopping in K-ville at West Town Mall to do a little shopping. I absolutely cannot pass the place knowing there's a Williams-Sonoma store in there and not stop :)

Tonight we will probably just have a snack for dinner. This breakfast will be our big meal of the day.

Wow, you were up early today, Lindsay! I hope you had a great time.

We had grilled halibut, potato salad and snap peas. The halibut was just okay -- I wasn't in the mood for it. I really wanted a hamburger! -- but my potato salad was really yummy today.
 
We are having leftover turkey tacos (I used cilantro, chili powder, cumin, garlic power, onion, red pepper, black pepper, salt, adobo all purpose seasoning, 1 small can of tomato sauce, & a touch of sugar to reduce acidity) from the other night and fresh avocado.



LindsayDunn228---I have relatives near that mall. We usually go to the Steak n Shake to escape the relatives.
 
We are going to my ILs tonight for a cookout, which means burgers pre-made from Wal-Mart (nothing wrong with that, but my MIL adds no seasons, not even salt and pepper, so it's rather blah), and hot dogs. The other catch about the burgers and dogs is that they cook them on a SMALL Foremann grill, so you have to do everything one at the time = cold food. Oh well.

Interesting turn of events yesterday. My BIL lives in Cookeville and was down for the weekend. So we picked him up and were on our way to Pigeon Forge. He informs us he forgot to pay his rent and it was due yesterday and he left his checkbook at home.

So we drive 1 1/2 hours to PF, about 30 minutes back to the mall (bad traffic), then 1 1/2 hours to Cookeville, 2 hours home. ARGH!!!! My husband said if he'd known we were going to spend so much dang time on the road, we would have scrapped going to PF and headed to WDW!! :)
 
We've been so busy around our house we haven't had much time for cooking (nothing good anyway). Today I'm going to throw a roast in the crockpot with seasonings and baby carrots. I'll make garlic mashed potatoes and something green to go with it. If I have enough time I'm making a banana pudding for dessert!

I hope there's enough tomorrow for french dip sandwiches.
 
We did the usual Sunday linner at my parents'...once again without DSis. We had maple-glazed, cedar plank salmon, macaroni and cheese made with gruyere (wow, was it rich!), fresh peas, tomato and basil salad and cornbread. I am very full.
 
Tonight we are having a meal I found on kraftfoods.com. Here's the recipe:

Cheesy Tuna Dinner
1 can (10-3/4 oz.) condensed cream of mushroom soup
1-1/2 cups milk
2 cans (6 oz. each) tuna, drained, flaked
1 cup frozen green peas, thawed
2 cups MINUTE White Rice, uncooked
1/4 lb. (4 oz.) VELVEETA Pasteurized Prepared Cheese Product, cut up


MIX soup and milk in medium saucepan. Bring to boil on medium heat, stirring frequently.


ADD tuna and peas; mix well. Return to boil.


STIR in rice and VELVEETA; cover. Reduce heat to low; cook 5 minutes. Stir until VELVEETA is completely melted.

This has been a busy weekend for us. We spent the day today at my in-laws, and we we came home after swimming. I grilled some sausage for me and DS and some chicken for DD. I also had pasta fresca...kids had pasta with olive oil and parmesan...and the kids had some red grapes. I know it's not a vegetable, but they ate it, and they wouldn't have eaten spinach. At least, not tonight.

We are having a "different" 4th this year. We did some cookout stuff over the weekend with the ILs, and most of my family is out of town right now. My husband and I are going to go see Superman Returns this afternoon and going to my grandmother's house to eat. She is making my absolute favorite (grandmother-wise!). She is making her beef stew. I know that sounds odd, but her's is delish!!!

We went to a family friend's house after a very hot hour watching the town parade. We had typical 4th of July fare...hotdogs, hamburgers, potato salad, watermelon, corn on the cob. It was good, but the swim in the pool was the best part of the day. I hope everyone had a great 4th!
 
Tonight I am making grilled margarita chicken with a side of kinky succotash. Here are the recipes:

Kitten-tash (as my husband calls it)

1/2 red onion, chopped
1 green/red pepper, chopped
a good handful of frozen corn (about a cup, I just add until it look like I have enough)
1 can black beans, WELL DRAINED (before I start cooking I dump the contents into my strainer and just leave it- you can also just rinse them)

Saute onion and pepper until tender (not mushy). Season with salt and pepper, to taste. Add corn and black beans. Cook until heated. Adjust salt and pepper. Serve!


Margarita Chicken
2 large limes
2 cups liquid margarita mix
1 cup vegetable oil
1 cup chopped fresh cilantro (you can omit this if you like)
2 t. salt
Sprinkle of pepper
3 T. tequila
3-4 boneless, skinless chicken breasts


1. Cut limes in half. Squeeze juice into a shallow dish or large Ziploc bag; add squeezed lime halves to juice. Add margarita mix, next 4 ingredients and tequila. Wisk (or seal bag and shake) to blend. Add chicken; cover or seal; chill at least 2 hours or up to 6 hours. Remove chicken from marinade, discarding marinade afterward.


2. Coat grill with cooking spray. Place on grill over medium heat (300-350). Place chicken on grate. Cook 6 minutes on each side or until done. Serve with white rice and Kitten-tash.

I hope that everybody had a safe and happy 4th. We were busy the entire weekend. I help my Mom and Aunt on Saturdays, and this week was no exception. My Mom is not well, so my sis, her DD and I cleaned her house and did the yardwork. I cannot remember what we had for dinner.

Sunday, my DS and DDIL arrived so we had a nice grilled steak and chicken dinner with baked potatoes, broccoli and green salad.

Monday we had a family picnic at my home with all of the traditional selections...baked beans, mac and potato salad, sauerkraut, bbq meatballs, hotdogs, hamburgers and turkey burgers, and grilled chicken. All homemade, and yummy!

Yesterday, we had grilled marinated pork chops with leftover sides from Monday.

Today is grilled chicken with baked potatoes and whatever I find in my fridge.

DS and DIL are in NY checking their home, and will be back on Friday if all goes well there. I can't wait!
 
We're having leftovers from yesterday- burgers, grilled chicken, veggie burgers, salad and homemade pico de gallo and light tortilla chips.

Pico de Gallo

12 seeded and chopped tomatoes (not hothouse)
1 minced Vidalia onion
2-3 minced cloves garlic
1/2 cup minced cilantro
3-4 minced and seeded jalapenos
1 small sliver (the size of a dime or nickel) of habenero (no seeds for the love of all that is good)very finely minced
the juice of two limes
salt to taste (a pinch per tomato)

Once all ingredients are clean and chopped, give them a toss.

This is a basic recipe, but you can change the proportions to suit your taste.

This is also wonderful on grilled chicken, tacos, fajitas, in eggs, in rice, etc.
 
I'm having curried chicken salad served on a bed of lettuce and leftover cornbread. The kids are having hotdogs, macaroni and cheese, and carrot sticks.
 
Lemon Garlic Shrimp, baked potato and green beans and tomatoes.
