Well, I seem to have survived the ooky chicken.
Tonight we are going to buy a new grill after work, so dinner will have to be fast--probably panini.
Éclair Cake - Paula Deen
Cake:
1 (14 -16oz) box graham crackers
2 (3 ¼ oz) boxes instant French vanilla pudding
3 ½ cups milk
1 (8 oz) container Cool Whip, thawed
Frosting:
1 ½ cups confectioners sugar
½ cup cocoa
3 tbl butter, softened
1/3 cup milk
2 tsp light corn syrup
2 tsp pure vanilla extract
Butter the bottom of a 13 by 9 by 2 inch pan. Line with whole graham crackers. In bowl of electric mixer, mix pudding with milk; beat at medium speed for 2 minutes. Fold in Cool Whip. Pour half the pudding mixture over graham crackers. Place another layer of whole graham crackers on top of pudding layer. Pour over remaining half of pudding mixture and cover with another layer of graham crackers.
For frosting, blend together sugar and cocoa. Add butter and milk, mixing well. Add corn syrup and vanilla. Stir until creamy. Cover cake with frosting and refrigerate for 24 hours.
Note: I couldnt find the French vanilla pudding at my store. I bought cook and serve custard instead, used the same amount of milk called for in this recipe, and I let it cool before I added the Cool Whip. I dont know if the French Vanilla would make it any better, but I know Kenny polished off what I put in his bowl and said he would eat more if it wasnt so rich.
I am very excited because it turns out a few of my dear, dear friends (former roommates from when I worked at WDW) will be coming to WDW when DBF and I are going next month! I have lots of acquaintances in NJ, but only 2 real friends, one of whom just had a baby, so I don't really go out much with them. My best friend who lives in NC, as well as 3 more dear friends are meeting us in WDW, so I am sooo excited!![]()

I think i may try that BBQ chicken/hashbrown casserole tonight..that sounds soo good!
Let me share the very tasty salad we had the other night for supper, actually we had marinated steak tips on the grill with it as well, but the salad made a terrific meal in itself:
Romaine Lettuce, organic dried figs ( cut up), Great Hill Blue cheese ( very mild and creamy blue, made coincedently by my BFs family in Marion,MA), walnuts and red onion. I dressed it with just Balsamic vinegar and YUM..done. I also served toasted Roasted Garlic boule bread with olive oil...good stuff![]()
