Yes he's glad but he's been non-stop chatting all day about the camp. We watched the DVD from their week and I tell you all the kids were crying when it was time to leave. They had the time of their lives! Boy do I have a pile of laundry to tackle.:laundy: This will be me tomorrow.

I'm glad he's back and chattering! They do come home with a lot of wash though, don't they? :confused3

Grrr...DH just called and asked me to host some of his friends who are in the area Tuesday night. I don't know them, he won't be here, and it sounds like they don't eat most of the food I eat. Arrgghh! Although it isn't as bad as the time he invited over people and the woman claimed to be allergic to onions and garlic, I am still a little peeved.

I would hate that! I know you'll be fine and they will love your food and you, but it is so hard to have company when you know nothing about them.

Dis you say allergic to onions and garlic?????????????? Is that really possible? She would be a walking talking hive if she came to my house. I don't know how to cook wiithout onions and garlic.

Dinner tonight did not really happen. We planned on a roast pork after a shopping spree but DS and DDIL had to take a fast trip to Providence to get Erica's Mom. I'm not sure what happened but she woke up in a lot of pain and went to the hospital. She was sent home but is in a lot of pain so they went to bring her home to stay with them.

Dinner then changed to DH request Hamburgers on the grill. We just got in the door and there was a storm. inner then changed to grilled ham, cheese and tomato sandwiches.

We'll have the roast tomorrow.
 
Argh, argh, argh!! Raw chicken. That is right, raw chicken!!! My inlaws served (practically) raw chicken. Chicken that was sitting out on the counter, nice and warm, when we arrived at 2 PM, and that was even warmer at 4 PM, when they decided to cook it. Totally raw--pink and squishy in the center! ARGH!! If you never hear from me again you will know that it is because I am dead from food poisoning. Because, you betcha that I ate it!! Better eat it than fight! ARGH!!! :scared:
 
Laura, I'll be glad to share the recipe. I couldn't find the recipe in Nanny's collection for the longest time and searched through all of the recipe boxes in Mom's cabinet. I happened upon it one day and was so excited because it had been years since I had it. The cake actually starts with a boxed mix and imagine my surprise when this recipe was on the cake mix box. I searched for years and Duncan Hines had it all the time. :rotfl:

Anyway this is the recipe for Sock-it-to-me cake:

Cake:
1 pkg. Golden Butter Cake Mix
4 eggs
1 cup sour cream
1/3 cup vegetable oil
1/4 cup water
1/4 cup sugar

Streusel Filling:
2 Tbl. cake mix reserved
2 Tbl. brown sugar
2 tsp. ground cinnamon
1/2 - 3/4 cup finely chopped nuts (I use pecans)

Glaze:
1 cup confectioner's sugar
1 to 2 Tbl. milk

Preheat oven to 375 degrees. Grease and flour a 10 inch tube or bundt pan.

For streusel filling comgine 2 Tablespoons cake mix, brown sugar, and cinnamon in medium bowl, stir in nuts.

For cake, combine remaining cake mix, eggs, sour cream, oil, water and sugar in a bowl. Beat at medium speed with electric mixer for 2 minutes.

Pour two-thirds of batter into pan, sprinkle in streusel filling. Spoon remaining batter over filling. Bake for 45 to 55 minutes or until toothpick inserted in center comes out clean. Cool in pan 25 minutes, and invert onto a serving plate and then cool completely.

For glaze combine confectioner's sugar and milk in a small bowl. Stir until smooth and then drizzle onto cake.

My grandmother would make that cake too I guess all great cooks think alike :hug:

Your story made me laugh because it reminded me of a Friends episode where Phoebe and Monica are trying to recreate Phoebe's grandmother's chocolate chip cookie recipe. It ends up being the Nestle Tollhouse recipe on the back of the chocolate chips. I guess this is a case of you had to be there, but it was pretty funny.

I use garlic in just about everything. I should grow garlic since I use so much

Thanks for the well wishes. Migranes have been part of me for so long. I hope Alex doesn't inhert them from me. He's almost at the age were I had my first attack.

It turned out she wasn't really allergic to onions and garlic, she just didn't like them, so her boyfriend told everyone she was allergic. Of course, I didn't know this until after the dinner, so I was extra precautious, since I deal with real food allergies. Of course, I would have accomodated her dislike of onions and garlic :confused3 but I wouldn't have made the rest of us suffer with bland food. I haven't invited them to dinner again.

As for the dinner Tuesday, I've been told they (not the onion and garlic hating couple) don't like seafood and they don't like wine. I don't know what I'm going to serve. I do know that I'm having wine with my meal though.

Why don't we have a puking smiley? Raw chicken already skeeves me out (though I'm getting better!) so I would have created a reason why I couldn't have eaten anything.

Okay, we never did find that recipe but DH remembered it and it tasted the same so I guess he remembered it right!

BBQ Hashbrown Chicken

Preheat oven to 350. Spray 9x13 with Pam. Spread most of a bag of shredded frozen hashbrown potatos in the bottom (evenly - keep frozen). Toss in shredded cheese (we used mild cheddar) and mix with the potatos and pat down to make a good layer. I don't measure anything - just until it looks good. Stick a few globs of butter on top of the hashbrowns.

Then place a few boneless skinless chicken breasts on top of the potato/cheese mixture. We used about 1.5 pounds (3 huge pieces). Pour your favorite BBQ sauce over the chicken until well coated.

Bake until chicken is cooked through. My chicken was mostly frozen when I did it so it took longer than normal but still worked =)

Yum!

I'm waiting to hear from DDIL how her Mom is doing today. I would like them to come for dinner but I don't know how she is going to be. DDIL requested the roast so I'll figure out dinner a little later on.

DH has been on a hamburger kick so maybe burgers and salad with some half sour pickles.

We are having manicotti, meatballs and sausage, salad and bread. The manicotti are the frozen ones you get at the wholesale club and I will use the homemade "gravy" I made a couple weeks ago. Another easy one! :thumbsup2

Thanks Lauren. She does not know how it happened but she got up and she was in agony. There is water on her knee I think and it will take a few days to dissipate. The real problem is that she lives on the third floor and has no elevator. There was no way she could make the stairs. She felt so badly calling them, but it is a good thing that she did. Besides it not being safe to be there alone if there was an emergency, she never would have healed.
 
Morning all! Dinner last night was just a frozen pizza--after my long run in the am, and then working all day--I had no desire to be Julia Childs. Thinking I want something indulgent tonight, homemade mac and cheese sounds appetizing and maybe some derby pie. I guess I'm out on the weight loss challenge;)

Laura--My BIL did the same thing with onions. Had us all convinced he was deathly allergic to onions---so all of us, mom, sis, myself, took extra precaution to eliminate onions from anything we cooked for him. ONly to find out later that he just didn't like them. Guess what? He gets onions at my house now--I spent the first year or so of their marriage picking onions out for him--now he can do it himself! (where's the evil smilie):stir:
 
Dinner tonight is going to be something quick...probably sandwiches, or maybe another cheese plate since I have some left.

I'm in too. Lauren, BTW, I'm planning on making your braised pork chops this week and wondered what kind of rice you served them on.

Dinner tonight is fish (whatever looks best in the seafood market this afternoon) sauteed in white wine with mushrooms, couscous, and steamed veggies.

That's funny Gretchen! I am going to make the pork chops you made last week!!! :) I used plain old white rice. The sauce is really good to pour over...yum!

Late start on the computer, today I woke with a migrane. At least it seems to be manageable now. I need to get the laundry done. I think we are going to have an easy dinner Italian beef sandwich on garlic toast roasted califlower and fruit.

Have you tried the Excedrin Migrane? I get migranes and have a prescription, but when i ran out, i tried the excedrin migrane and WOW!!! gone in less than 20 minutes!! Definate MUST TRY
