Well, I seem to have survived the ooky chicken.

Tonight we are going to buy a new grill after work, so dinner will have to be fast--probably panini.
 
Yesterday we had pizza and that raspberry tart. It was so great. I will definitely post pics! The raspberries were fresh from the garden and tasted great! I used fat free half and half instead of the heavy cream and cut the sugar down to 1/4 cup and put it in a reduced fat graham shell, so I was worried that I cut too many things out, but oh man, no one knew it was reduced at all. The mascarpone was so creamy and tangy and the almond flavoring came through, but everyone just commented on, of all things, the orange marmalade, what a brilliant idea! The orange with the raspberry combo was what everyone raved about! Thanks, Laura!

Tonight, I will be in my grad school class, and they are ordering food, so probably a salad or turkey sub. It's kind of nice to order all together and get a break from a 4 hour class, but I miss a real meal, too! lol. I have catfish defrosting and I will use that for tomorrow's dinner.

I am very excited because it turns out a few of my dear, dear friends (former roommates from when I worked at WDW) will be coming to WDW when DBF and I are going next month! I have lots of acquaintances in NJ, but only 2 real friends, one of whom just had a baby, so I don't really go out much with them. My best friend who lives in NC, as well as 3 more dear friends are meeting us in WDW, so I am sooo excited! :cloud9:

I will see you guys over on the WISH thread, too! I definitely am trying to lose!
 
Éclair Cake - Paula Deen

Cake:
1 (14 -16oz) box graham crackers
2 (3 ¼ oz) boxes instant French vanilla pudding
3 ½ cups milk
1 (8 oz) container Cool Whip, thawed

Frosting:
1 ½ cups confectioners’ sugar
½ cup cocoa
3 tbl butter, softened
1/3 cup milk
2 tsp light corn syrup
2 tsp pure vanilla extract

Butter the bottom of a 13 by 9 by 2 inch pan. Line with whole graham crackers. In bowl of electric mixer, mix pudding with milk; beat at medium speed for 2 minutes. Fold in Cool Whip. Pour half the pudding mixture over graham crackers. Place another layer of whole graham crackers on top of pudding layer. Pour over remaining half of pudding mixture and cover with another layer of graham crackers.

For frosting, blend together sugar and cocoa. Add butter and milk, mixing well. Add corn syrup and vanilla. Stir until creamy. Cover cake with frosting and refrigerate for 24 hours.

Note: I couldn’t find the French vanilla pudding at my store. I bought cook and serve custard instead, used the same amount of milk called for in this recipe, and I let it cool before I added the Cool Whip. I don’t know if the French Vanilla would make it any better, but I know Kenny polished off what I put in his bowl and said he would eat more if it wasn’t so rich.

I have tried a similar version of this recipe using pistachio pudding. It's really yummy. Instead of Paula's frosting, I use Betty Crocker frosting that I warm up in the microwave and pour over the top. Then I refrigerate and let it set up.

This is really good with different flavors of pudding. Banana cream is really yummy, as is cheesecake.

Where in NJ are you? I am in NJ too...you can always bring a raspberry tart here and hang out!!! ;) I was also on the CP...back in 90 though...I see from your signature you were at Vista Way as well...I was there too! 1711 to be exact! :)

Camping was so much fun!!! It was also nice to be up in the mountains and away from the 105 degree heat!!!

Don't you love those bars??? And they're so easy to make, too!

i can't believe i just found this thread...this is great for me because
A. i am super nosey about what other people eat
B. I am trying to cook more and eat out less ( good for the waist and budget)
C. Yet another addicting DIS board works for me.

I think i may try that BBQ chicken/hashbrown casserole tonight..that sounds soo good!

Let me share the very tasty salad we had the other night for supper, actually we had marinated steak tips on the grill with it as well, but the salad made a terrific meal in itself:
Romaine Lettuce, organic dried figs ( cut up), Great Hill Blue cheese ( very mild and creamy blue, made coincedently by my BFs family in Marion,MA), walnuts and red onion. I dressed it with just Balsamic vinegar and YUM..done. I also served toasted Roasted Garlic boule bread with olive oil...good stuff :):thumbsup2
 
Dinner tonight will be a turkey roast that we cooked last night. I'm planning on roasting some red skin potatoes and making corn on the cob.

Got to sit down and do my menu plan for the week. Got to head for the store. We're seriously short on food here!

I had heard that our section of the country is the only one that has Fireman's carnivals and parades as fund raisers. Do any of you have these as annual events?

i am a little late here, but i just went to our town's fireman's fundraiser/parade this weekend too! My boyfriend is a FF in the neighboring town so he actually drove in the parade this year. Our carnival is called " Kid's Day" and we had the BEST fireworks this year...not quite " wishes" caliber..but def. up there. :goodvibes

Glynis, It looks beautiful up there! Your kids are so cute & look like they were having a great time.

Don't know WFD yet. DD & SIL came over Saturday evening so I did do a little cooking this weekend. Grilled some huge porterhouse steaks I had marinated in red wine & garlic. I also fixed some really good scalloped potatoes. I made a bechamel sauce with white sharp cheddar & mozzarella cheese, covered sliced red pototoes with the sauce & baked about 50 minutes. It came out so yummy! Served a caesar salad with it & felt like we ate like royalty.

Welcome! That salad sounds fantastic! We don't eat enough salad in my house, mostly because we seem to let it all go bad before we eat it =( I need to get better about that, esp now that it's hot outside and salads are nice and light.

If you try the chicken/hashbrown recipe, let me know what you thought!
 
Tonight we're having chicken enchiladas. I can't decide if I want to mix the black beans into the chicken mix or serve it on the side. I may serve it on the side with some cheese on top.

Becky, I wanted to ask you for the recipe for your fav cheddar souffle. Will I need a special souffle dish to bake it in?

Sheryl, I'll let Becky give you a recipe, but I can tell you that you don't need a special souffle dish. I have a round ceramic baking dish I use.

Stephanie -- I guess between your experience and mine, we should be wary of people claiming allergies to onions.

We didn't end up having sandwiches, since I don't have any sandwich bread in the house. Instead, I made linguine with an alfredo-like sauce, bread and cucumbers. Even the kids said, "Mom, we didn't want this!" Sorry, kids, Mom hasn't been to the grocery store in a while. I am planning to rectify that tomorrow.

Dinner tonight turned out fine. However, my fridge seems to be acting up again. DH had an appliance company "fix" it last week. He is tinkering with it now. I hope we can ressurect it one last time.
