Good morning ladies!

:yay: Kyle is home!!!!! He's catching up on some sleep right now. He came home with a DVD of the whole week's activities - I can't wait to see it.

It's gonna be a rainy day today but I've already got Glynis' pot roast in the crock pot, will whip up some mashed potatoes and smother cabbage to go along with it. YUMMO!!

I also made Glynis' white chocolate raspberry bars last night - they're great!!

Oops forgot to mention - Becky that was one huge fish, it looked almost as good as the champagne cocktail!;)
 
I am going to my inlaws today, so no idea WFD. As I've mentioned previously, they are not the best cooks, so I just have to remind myself that it is all about the company! (and then have a snack when I get home!).

Late start on the computer, today I woke with a migrane. At least it seems to be manageable now. I need to get the laundry done. I think we are going to have an easy dinner Italian beef sandwich on garlic toast roasted califlower and fruit.
 
I need to post instead of just reading what everyone is eating!

Tonight- ham steak, honey pecan cornbread, slaw and skillet corn.
Lunch was chipotle tuna sandwiches with oven potatoes with jack cheese/ cantelope for dessert.

Last night- link country sausage, scrambled eggs and toast (after going to the Harry Potter movie)

Night before- tossed salad, cold boiled shrimp (cooked in beer and Old Bay) and fresh corn on the cob (variety How Sweet It Is- and it was!).

My boss and his wife are coming over for lunch this week (Wednesday) as my birthday gift to him. Plans so far are for crabcakes with jalapeno tartar sauce, slaw, oven potatoes and green bean bundles followed with Lemonade Stand Pie.
I love the new slaw dressing I got from Rachel Ray- I've never been a fan of mayonnaise-based slaw dressing and this rocks (to me). Equal parts of honey, cider vinegar and olive oil with grill seasoning added. She had sesame and poppy seeds in hers but I passed on that. The measurements were 1/4 cup of each and 1-2 TB of grill seasoning. :banana:
 
Kathy - so glad Kyle is home. I made your Mexican stuffed shells for dinner tonight and Kenny, who normally does not like any mexican food, loved them. He even said he would take the leftovers for lunch tomorrow.

I made a coffee cake for Kenny because I just wanted to pull out my mixer today. It is a sock-it-to-me cake from my late grandmother's recipe. She used to make those all of the time and smelling it brought back so many wonderful memories.

We just had BBQ pork chops, mashed potatoes and green beans. It was good. Easy clean up too- gotta love that!

Gretchen -- I can't resist recipes for baked goods. I would love your coffee cake recipe, if you don't mind sharing. I understand, though, if you would rather keep it a family recipe.

I had linner today with my parents. Since Beck was off to her in-laws, that meant meat was a prominent feature on the menu. We had barbecued ribs, potato salad, cole slaw and cornbread. It was a great summer meal. No pics, though. If I start taking food pictures too, it might send my dad over the edge.

My brother (AKA The Grillmaster) has a tip: Add a little beer to your barbecue sauce and it won't burn.
 
Laura, I'll be glad to share the recipe. I couldn't find the recipe in Nanny's collection for the longest time and searched through all of the recipe boxes in Mom's cabinet. I happened upon it one day and was so excited because it had been years since I had it. The cake actually starts with a boxed mix and imagine my surprise when this recipe was on the cake mix box. I searched for years and Duncan Hines had it all the time. :rotfl:

Anyway this is the recipe for Sock-it-to-me cake:

Cake:
1 pkg. Golden Butter Cake Mix
4 eggs
1 cup sour cream
1/3 cup vegetable oil
1/4 cup water
1/4 cup sugar

Streusel Filling:
2 Tbl. cake mix reserved
2 Tbl. brown sugar
2 tsp. ground cinnamon
1/2 - 3/4 cup finely chopped nuts (I use pecans)

Glaze:
1 cup confectioner's sugar
1 to 2 Tbl. milk

Preheat oven to 375 degrees. Grease and flour a 10 inch tube or bundt pan.

For streusel filling comgine 2 Tablespoons cake mix, brown sugar, and cinnamon in medium bowl, stir in nuts.

For cake, combine remaining cake mix, eggs, sour cream, oil, water and sugar in a bowl. Beat at medium speed with electric mixer for 2 minutes.

Pour two-thirds of batter into pan, sprinkle in streusel filling. Spoon remaining batter over filling. Bake for 45 to 55 minutes or until toothpick inserted in center comes out clean. Cool in pan 25 minutes, and invert onto a serving plate and then cool completely.

For glaze combine confectioner's sugar and milk in a small bowl. Stir until smooth and then drizzle onto cake.
 
Tonight we're having a bbq chicken hashbrown casserole. It's really yummy, cheesy, and easy. If we can actually hunt down the recipe I'll post it! DH found it in the magazine while he was in college and has held onto it desperately for years because it is yummy =)

Yes he's glad but he's been non-stop chatting all day about the camp. We watched the DVD from their week and I tell you all the kids were crying when it was time to leave. They had the time of their lives! Boy do I have a pile of laundry to tackle.:laundy: This will be me tomorrow.

Thanks, Gretchen. The recipe sounds yummy. Your story made me laugh because it reminded me of a Friends episode where Phoebe and Monica are trying to recreate Phoebe's grandmother's chocolate chip cookie recipe. It ends up being the Nestle Tollhouse recipe on the back of the chocolate chips. I guess this is a case of you had to be there, but it was pretty funny.

Grrr...DH just called and asked me to host some of his friends who are in the area Tuesday night. I don't know them, he won't be here, and it sounds like they don't eat most of the food I eat. Arrgghh! Although it isn't as bad as the time he invited over people and the woman claimed to be allergic to onions and garlic, I am still a little peeved.
