Here too :thumbsup2. I am using Vigo though because I have no patience for the soaking and slow cooking thing and I have extra beans and smoked sausage to add. I have to make something for the dissenters in the family....sausage and something, maybe baked sweet potatoes and steamed broccoli for Kady.

I hope you enjoy them! I stopped soaking my beans long ago, as long as they're cooked for 3-4 hours they come out perfect without the soaking process.:goodvibes
 
I am wondering if your DH is going to be anywhere near Timmy. He is doing the door to door thing but says he has not seen "too much". I pray that this is true and not editing for his Mother.

DH doesn't know where he is going to be located yet. He thinks he will be on one of the borders, but as of now, he doesn't know more than that. I will let you know when he tells me.

As for the coffee machine, the plugs over there need adapters. DH had a guy in his unit who got a brand-new XBox, couldn't wait to plug it in, and fried it before anyone could tell him better. Also, DH says not to write the names of high-end items on the package or packing slip. Things like XBoxes, IPods, etc tend to get "lost."

This is the first afternoon I have the house to myself. It is very quiet.

Dinner tonight is going to be rushed, like Wendie's. Caili has skating after school, and then I have to bring Liam to soccer practice after that. We won't be getting home until after 7, so I think I will just make myself some pasta after the kids go to bed. I'll make them some grilled cheese to eat on the go.
 
She is her mother's DD and loves to eat out, so how can a Nana say no? Actually, Buddy and I try to do something alone with her once in a while because living with us does not allow her to have that special feeling that kids should have about their Grandparents.

Nancy, I think she will look back and feel even more special about you because she had so much of your time and attention. :goodvibes

Yesterday we were at Ross tournament, and it was 95 outside and humid...so you can only imagine what it was like inside a packed gym and kids fighting (remember in Maine there is no A/C in the schools)...Ross did great he placed 3rd in fighting, and did weapons for the first time and did NOT drop his bo staff and came in 5th.

Congrats to Ross for the fine job in the competition. Congrats to you and Kris for not collapsing due to heat stroke. The things we do for our children. :sad2:

I have a feeling that my Db does not know that his wife has asked us for money for this, as he himself would have asked me on the phone the week b4 when we were talking about it, and he said that he would pay 80% and have my df pay 20%...........I am going to give him a call this week and act like I think he knows, and just make sure he understands why we can't do it all etc etc.

I think this is a marvelous idea! If he really has no idea, this should stop her guilt trip on its tracks.

Thanks to everyone for your kind words and concern. I rested most of yesterday and finally feel human today.

Tonight we are having Kathy's mexican stuffed shells, a specific request last night by DS. He also requested that I make "more than I did last time" so there would be some left over tomorrow night. But with the way his appetite keeps growing, I don't know if that is possible. I guess I am on the way to him eating us out of house and home. :rolleyes:
 

Hello I didn't get a chance to post while at work. I got busy trying to get stuff done so I can go on vacation with out worries.

Glynis we occasionally talk disney so no not a lie at all ;)

WOW what happened to our warm weather. Some how fall happened it's cold outside. I bought a new slow cooker recipe book. I so love cook books. I could open my own library.

Oh I almost forgot we are having frozen pizza (cooked of course)

The potato/leek soup was so good I'm tempted to try it myself. I learned so much about Julia from the book. I had no idea she was a spy during WWII!!! Cool, huh???

She was an amazing woman who broke down barriers in so many areas. In her day women had set roles, and chef was never one of them, her courage and determination spearheaded change for women....She was wonderful!

He did not fry the coffee machine.......he blew everything else out! I guess it took to much power, so one of the guys is going to direct some electricity somewhere else ( I think that is what Gail said. Honestly I don't think she heard much after he said he is fine) We never put labels on the boxes, sad but true the things that happen.

Enjoy some of the quiet, you are going to need some down time just to recharge.


Kathy- I did not have a real recipe, and you know what I do to recipes anyway :rolleyes1, so I am not sure how they were supposed to be. I will confess that I used canned beans and I don't think I will do that again. They were good, and I will make them again, but the next time I need your recipe.

I roasted sweet potatoes, steamed broccoli and had smoked sausage for the ones (Buddy) who would not touch anything with beans. We will have leftover cheesecake for dessert.

Boy do I agree with this statement! DH made me go through my cookbooks and get rid of those I don't use. What a hard decision!!!

It was interesting to me that she didn't learn how to cook until she was 37! That sure gave me hope that I could turn into a good cook!!
 
Lindsay, you can title that chicken dish Chicken Roulades with goat cheese, basil, and sun dried tomatoes.

Tonight we are going simple with a baguette stuffed with brie (and proscuitto on DH's), and a mixed green salad with peaches and dried blueberries in a raspberry-olive oil-white wine vinegar dressing.
 
Hi Y'all, I'm back, I haven't been feeling well, just getting the regular stuff done has been wearing me out, so I haven't been dissing. Just my same old back & neck pain nothing new, it's just been a bad weekend.

Bob & I celebrated our 31st wedding anniversary today. Yeah, I'm that old! ;) But Bob did rob the cradle! :goodvibes He took off & we went out to a nice rest. for lunch. Food was just okay though.

Hi Ladies! I am back. I have sub clinical Hyperthyroidism. My labs stayed the same since my last test so she put me on meds. I did not get the script yet so I have no idea what it is. She didn't seem too concerned...and I didn't think to ask alot of questions...Ha, I guess I am not too concerned as well! :rotfl:

Well, after a weekend (again!) of suffering, I have one ear that won't pop. This was just a head cold I think, but my ears have been crazy for over a week now and I hate it! WAAAAHHHHHHH!:sad1:

Nepotism is alive and well in NOLA! Rick hired me to work for him for the next few weeks-so I'm waiting on UPS to bring me a laptop. And I already have my potential earnings earmarked for the Louisville house. How sad is that?!?:rolleyes1 Guess that's my motivator to get up and work.

All of our plans for DL are confirmed. And there's only the sleigh ride for Christmas to book and I'll be done planning for that one. Anyone seen Sheryl lately?!? I have some F&WF questions!

Wendie- When I first read that I wondered if your DB knew about that email-why not just mention it on the phone? But Rick says absolutely we need to meet up at Christmas, and then asked if he needed to pack his costume so Ross would know us....:headache: Men! What a goober!

There was alot of eating out over the weekend so I may just cook tonight, maybe, possibly....maybe I'll order soup from the Chinese take out place. I have tuna steak cubes marinating though. Maybe that. As you can see I am very decisive today.:rotfl2:

Lori, Hope you & Rick can continue to get along with you doing so much work for him! I don't think Bob & I could manage it! What kind of F&W questions do you have? I'll help if I can.


No cooking tonight, we have tons of rest. leftovers in the house. We went out Friday night for my sisIL's birthday. We ordered out for the LSU game & then went out again today! So I haven't been working at all in the kitchen!

The boys had the cheesy pigs in a blanket, with corn and peas, and I was in the mood for special K.....simple quick and gooood!!!

Tomorrow we have no after school anythings!! So I get to cook a real meal again!!

Lori - have fun working for Rick. I used to work for my DH, that's how we met. He used to say he was the boss for two weeks and I've been the boss ever since!!

Ok, here we go. Bear with me because this may get long. I am having a Mexican themed dinner this weekend. My husband's good friend from work (actually she's my good friend, too!) and BIL are coming over. I decided to do a big Mexican type dinner.

I am going to make the Mexican lasagna I was posting about a few weeks ago (just a recap: seasoned beef, black beans, queso blanco, flour tortilla, and a few other things), Spanish rice, and tortilla chips and dip.

Here are my questions:

  1. I was going to make my own salsa con queso a la salsa & Velveeta. I decided to go to our local Chili's and get some of their salsa (I have a tummy sensitive to hot things and their salsa doesn't bother me. Plus both BIL and friend LOVE it!). What is the ratio of salsa to Velveeta? I though I remembered it being 1 jar of salsa, 1 box of Velveeta. Anyone have any idea?
  2. I am going to make virgin margaritas. Virgin because my husband doesn't like alcohol at all and the coworker is coming from almost and hour away and I don't want to have to worry about her driving home. I have some Sweet and Sour mix, limes, and a few juices. Anyone have a good recipe they'd like to share? Oh, another thing. I'd prefer it not be frozen. I'd like to get some things together early Saturday morning. A pitcher of margaritas being on of them.
  3. I tossed around the idea of making Mexican cornbread to go with our dinner, but decided the chips and dip would suffice. Agree/disagree?
