Nepotism is alive and well in NOLA! Rick hired me to work for him for the next few weeks-so I'm waiting on UPS to bring me a laptop. And I already have my potential earnings earmarked for the Louisville house. How sad is that?!?:rolleyes1 Guess that's my motivator to get up and work.

Boy do I agree with this statement! DH made me go through my cookbooks and get rid of those I don't use. What a hard decision!!!

I hope that DH never sees how many cookbooks that I have! He thinks I am a packrat as it is so if he knew about my books he would have more to grumble about And then I'll get a little grumpy, and we all know what happens to his dinner if I get grumpy......:rolleyes1

Hi Y'all, I'm back, I haven't been feeling well, just getting the regular stuff done has been wearing me out, so I haven't been dissing. Just my same old back & neck pain nothing new, it's just been a bad weekend.

Bob & I celebrated our 31st wedding anniversary today. Yeah, I'm that old! ;) But Bob did rob the cradle! :goodvibes He took off & we went out to a nice rest. for lunch. Food was just okay though.

Happy Anniversary to both of you! 31 years together! I hope that you both enjoyed youre day.

I hope that you are trying to rest, Sheryl. You are such a nurturing wife and Mom and Nana but please remember that you need to take good care of yourself as well. I hope that you are feeling well soon. :hug:

Tomorrow we have no after school anythings!! So I get to cook a real meal again!!

I am not sure what to have for dinner. I have a lot of errands again today so I may reheat the leftovers from last night. I have chicken though so if I am home in time I 'll make a chicken and stuffing dish.
 
Morning all--

I have a busy morning, P/T at 9:30, and then I have an appt with a new orthopedic dr. at 11am, this one specializes in hands and wrists only, so maybe I will get some answers as to what is wrong. In between appts I will go see my mil (ugh),as she lives a lot closer to the hospital where I have both appts. then I do.
I then have to pick up a few more things for my grandmother as she gave me another whole list yesterday when I brought her groceries to her....she forgot some things....She is 25 min away, but that is ok...she is 93, the fact that she still knows how to make a grocery list out is amazing, lol.
After all this though...I get to go home and stay in until tomorrow afternoon, when I have to go register Kris' truck, and Ross has football. I will have almost 24hrs at home.....I might actually get to finish dusting it!!

Dinner tonight will be a chicken friend rice dish I make, and fresh green beans on the side.

Lindsey--When I make a batch of margarita's up, I always make for the kids "mocktails"...............I use margarita mix, rose's lime juice, and a few splashes of sprite, and fresh limes. If this is to sweet for the adults, (though it shouldn't be with the sprite and fresh lime) you could add a bit of non alcholoic beer to it to cut the sweetness.

On the dip I always go 1 and 1 even, as well. If you have the chips and dip before dinner you might want the cornbread to go along with the lasagna, but I think you would be fine without it as well. Make it simple so you can enjoy the company and don't have a million things to do.

Morning all. Dinner last night was yummy--I tried out a new boxed (gasp) chinese meal-had to add the chicken. And it was really good, Wanchai Ferry I think it was called. Tonight I'm going to make some pesto (if my neighbor still has her bumper crop of basil) with fusili and I'm gonna try my hand at making some foccacia. The recipe for the foccacia said it was a good one for novice bread makers, that certainly describes me! Have a great Tuesday all!
 
Good Morning All. What a sad day. My heart goes out to all families that lost a loved one due to this tragedy 6 years ago. I remember it like yesterday...so many people I knew were affected. Let us keep them all in our thoughts and prayers today...

Glynis, I have to admit, when I read this my first thought was that DH would have to pull my cookbooks from my cold, dead fingers. I have too many, but I don't intend to part with any of them. I am not a pack rat about anything else, but when it comes to recipes, I have a "you just never know" philosophy.

I'm so glad your DS loves the shells, mine could eat a dozen!

DS can't quite manage a dozen yet, but he's getting there. I tripled the recipe and I think I have enough for he and his Daddy to have the leftovers for dinner tonight. DD9 will eat chicken nuggets and DD8 will eat a PB&J. Neither one of them likes tomato sauce :confused3 . I'll probably have a salad and be thankful I don't have to cook.

Glad you are feeling better BTW.

:lmao: :lmao: I know the feeling. I'm in charge of Kenny's checkbook for the business and do all of the accounting work. Anything more would be pushing it for sure.

This is almost exactly what I was going to suggest. I am usually guilty of over-reaching and I don't seem to get to enjoy our company very much. I've sworn to try and simplify for the next dinners I host. It's no fun watching everyone else have a good time as you race through the kitchen all night.

I, too, remember 9/11 like it was yesterday. Undoubtedly one of the saddest days of my life. My prayers are with all who lost a loved one.

Dinner tonight will be Ham & Swiss stuffed chicken breasts, pasta and green beans.

Ok, here we go. Bear with me because this may get long. I am having a Mexican themed dinner this weekend. My husband's good friend from work (actually she's my good friend, too!) and BIL are coming over. I decided to do a big Mexican type dinner.

I am going to make the Mexican lasagna I was posting about a few weeks ago (just a recap: seasoned beef, black beans, queso blanco, flour tortilla, and a few other things), Spanish rice, and tortilla chips and dip.

Here are my questions:

  1. I was going to make my own salsa con queso a la salsa & Velveeta. I decided to go to our local Chili's and get some of their salsa (I have a tummy sensitive to hot things and their salsa doesn't bother me. Plus both BIL and friend LOVE it!). What is the ratio of salsa to Velveeta? I though I remembered it being 1 jar of salsa, 1 box of Velveeta. Anyone have any idea?
  2. I am going to make virgin margaritas. Virgin because my husband doesn't like alcohol at all and the coworker is coming from almost and hour away and I don't want to have to worry about her driving home. I have some Sweet and Sour mix, limes, and a few juices. Anyone have a good recipe they'd like to share? Oh, another thing. I'd prefer it not be frozen. I'd like to get some things together early Saturday morning. A pitcher of margaritas being on of them.
  3. I tossed around the idea of making Mexican cornbread to go with our dinner, but decided the chips and dip would suffice. Agree/disagree?

All of that sounds very yummy to me!!! For the con queso, I would just do it to taste. Start with the whole jar of salsa, and add the cheese a bit at a time until it suits you. Yummo!!!

I don't know much about margaritas, so I can't help you there, sorry!

The cornbread wouldn't be too difficult if you use a boxed mix, and add a can of chopped chilies and some cheese to the mix. However, I don't think you would need it, the chips and dip sound like they'd be just enough.

You could do some quick jalapeno poppers from Costco or something if you want something else. Just a thought.

Well, when my cookbooks took over 2 bookshelves, he insisted that something be done. So, I've been going through all my cookbooks, making copies of the recipes that I actually use and love. Usually, I only have maybe 10-12 recipes per book that I've tried and liked. Once I get them copied, I donate the books to Good Will. I'm sure there are some other cook book addicts out there that will appreciate them. So far, I've donated 4 banana boxes full of books, and there are more to go! At least this way, I'm keeping all the recipes that I like, and compiling them into a book that I'll be able to use.
 
Dinner tonight is leftovers. I made the Ground Turkey Casserole from this thread, and it is wonderful!!! It made a ton, though, and without Alan here, there will be plenty for me and the kids for the next few days.

Just letting you all know that I'll be out of town from Thursday night until Monday morning. My baby brother (34 yrs), is FINALLY getting married!!! We love his fiance, and I think my dad finally told my brother to marry her, or risk having us (the family) accept her and get rid of him! It's going to be quite the extravaganza! The ceremony is taking place in my Dad's theater which is a replica of Shakespeare's Globe theater. My camera is packed and ready to take a plethora of pictures! I can't wait to share it all with you!! My sister is making the wedding cake, and she is really an artist! It's going to be so much fun!!!!!!

Lindsay, You're dinner plans sound yummy! I think Wendie's mock-margarita's sound great! A few years back we were lucky enough to be invited to an Astro's game in a suite. We had the best Margarita's from a mix I've ever had. I asked the suite hostess how she made them & it was the bottled Margarita mix with a good splash of Sprite! So anytime I have a margarita from a mix now I'm looking for a can of Sprite! If you decide you want to fix cornbread, here is a very yummy & easy one I've made. (I don't think you need to fix it though.)

CHIPOTLE MEXICAN CORNBREAD
Printed from COOKS.COM

2 boxes Jiffy Cornbread Mix
3 eggs
2/3 cup milk
1 6 oz can chipotle peppers drained
1 tablespoon pimento peppers
1 can cream corn
1 chopped white onion
1/2 cup vegetable or peanut oil
1 cup grated cheese, any kind

Combine all of the ingredients in a large mixing bowl. Let mixture rest for about 10 minutes or while oven is preheating to 450°F.
Bake in a large pan for about 30 to 40 minutes.

The above is the original recipe & here's my version using the things I usually have on hand in the pantry.

CHIPOTLE MEXICAN CORNBREAD

½ chipotle pepper in adobo sauce chopped
1 can corn

Lindsay, your meal sounds good. I don't think you need the cornbread since you are making the lasagna. My suggestion would be to offer a green salad alongside, to cut some of the richness of the rest of the meal. Only if you like salad though!

I have pictures of last night's dinner but have not had the chance to upload them yet. I'll do it tonight.

Tonight I am going to the fish market after work to see what they have. I have a craving for halibut, so maybe that...

Nancy, I am glad the coffee maker didn't get fried. One of the things DH always requested when he was there was good, strong coffee. His dad misinterpreted this and sent him a huge can of Maxwell House -- nothing against Maxwell House, but that's what the soldiers get in their MREs (Meals Ready to Eat, for non-military lingo folks).

Lauren, I am glad you found out what is going on with you and that it is a manageable condition. Take care of yourself!

Lindsay, enjoy your dinner. Your meal sounds good to me, and I don't think you'll need the cornbread.

It is rainy and dreary here today, so I am making roast chicken. I have been craving it for a week now, and it is finally miserable enough to make it. We need the rain, so I am not complaining. Sides will be mashed potatoes, gravy, roasted butternut squash and sauteed spinach.
 
Lindsay- your meal sounds good! I would go with the cornbread, but only because I love it, not because your meal needs it. I agree a green salad would be nice.

Laura- we are having roasted chicken and stuffing too. I also made an apple cake with cream cheese frosting. My baking has not been so good lately so I hope this one turns out good :thumbsup2

It is so gloomy today. I guess it fits the day, I have been melancholy all day but I seem to keep the news on anyway. My heart is breaking all over again for the families who lost loved ones and for us as well :sad1:.

Just bumping. Anyone else care to give me some help? :) Anyone have any tips on the margaritas??
 
Lindsay- I use the Margarita mix whenever I have them. There is also a bucket type thing that my sister bought. You freeze it after adding tequila, (you could leave it out) and it was pretty good.
