They are really moist. I think, if you wrapped them up really well, they'd travel ok. I made them and took them to the zoo an hour away. They were fine. A little broken apart, but yummy!
 
Dinner tonight was the melt in your mouth ribs from this thread. Katie said they were her very favorite ribs, ever!!! DH loved the chili powder in the recipe. He wasn't expecting that, and it was a good surprise!

My meals won't be too much to write home about the next 2 weeks. Alan is leaving to cover a major trial in the south end of the state, and I hate to do too much experimenting while he's gone. So, I'll probably jut keep it simple for the kids.

Wish me luck in taking care of the kids and house while he's away! Laura, I don't know how you do it! My hat's off to you! Your husband (and your family) will remain in my prayers while he is gone! Please tell him thank you from my family! We appreciate his sacrifice (and yours)!

Well, dinner was a mixed bag today. First off, it was sports central around here. Both football games were on--DH and all are Pats fans, and my Dad, from Philly, where we were all born (well, not DH!) is still a die-hard Iggles fan. Plus, the Sox were on...Needless to say, after today's debacle I stressed that in the future all Sunday food will be served at HALFTIME, not when the men decide to show up. Like it or lump it, as I like to say.

Given the nutsiness of today, I have few pictures to share. Here is the macaroni and cheese. If you are thinking it looks a little overbaked, well, that's because it sat in the oven on warm for an HOUR :rolleyes: It did taste good though.

We also had the veggies I mentioned earlier. I did take a picture of my chicken but was rushed so the quality is not good. No photos of the steak.

Here is Liam's plate. He the kid-friendly mac and cheese I made...and put KETCHUP on it! ARGH! GROSS!! Look at your peril!!!

The chicken recipe is easy, here it is, for four people.

Four boneless skinless chicken breasts, pounded thin
4 ounces goat cheese
16 basil leaves
4 tbsp sun dried tomato spread
2 eggs, beaten
1 cup plain breadcrumbs, seasoned to taste with salt and pepper

Divide the cheese into four equal portions and roll into thin logs.

On the underside of your thin pounded chicken, spread equal amounts of the sun dried tomato paste. Top with basil leaves, then the cheese. Roll the chicken up tightly, tucking in the ends. Roll the chicken in eggs, then crumbs. Set in the refrigerator and allow to chill for at least one hour, or overnight.

Melt butter and saute chicken on all sides to brown coating. Bake in 350 degree oven until done to your liking.

Tonight I'm making MY French onion soup (does anyone else ever do that- have something out and then make it at home?? I know, I'm a freak). It feels VERY "fallish" here today so a soup will hit the spot (especially with a crusty piece of french bread and melty gooey cheese!!):thumbsup2

If you're a freak, then I am too. I am sure Becky and I will be making our fried calamari again in the near future because we thought the dish we had out Friday was not as good.

Actually, Buddy and I try to do something alone with her once in a while because living with us does not allow her to have that special feeling that kids should have about their Grandparents.

Nancy, from everything you say about Kady and the things you do for her, I am sure she feels very special.

Jen and I supervised in a chair drinking Margarita's lol. I think we had a very important role....oh and we also ordered the Pizza's.

I had dinner with my parents and Becky and BIL tonight, later than usual since we had to wait for the end of the Patriots game, the Red Sox game and the Eagles game (Dad is from Philly). I'm not sure how many pictures Becky took, but we had steaks (a little less cooked than I like, but not mooing), macaroni and cheese (yummy!), spinach (I could have eaten the whole bowl), and broccoli.
 
Anyway, the french food was really good. Our hostess made 3 items from Mastering the Art of French Cooking. We had a potato/leek soup, Blue Cheese tarts, and Orange Bavarian. So yummy!!!

I would have loved to be there. Julia is my Hero so anyone cooking her meals gets a :thumbsup2 from me.

I second what Glynis said. You have a lot of support but you still have a great deal of responsibility that you shoulder alone. That there are some who do this without friends and family is heartbreaking. Way more than the call of duty IMO. Thank you.

I am wondering if your DH is going to be anywhere near Timmy. He is doing the door to door thing but says he has not seen "too much". I pray that this is true and not editing for his Mother.

Gail sent him a Kuerig coffee machine which did get to him. (Now we know the address is good) When he plugged it in he blew out the electrical in his barracks. One of the guys took it and is moving it to another area and is going to direct more power to it. Marisa called the company we get most of the pods from and was told they will not do a military discount, I am miffed. These guys share everything so we send plenty of whatever we put in the box. I think that this will take a lot of coffee for all of these guys and I cannot understand why they will not discount the stuff we are sending to Iraq. I'm going to call them and then I'll try Green Mountain and see what they say.

Wendie- congratulations to Ross. I cannot imagine how hot he must have been in that gym!

Chicken Pot Pie Soup


1 tube of refrigerated biscuits
1 package chicken tenders (1- 1 ½ lbs.), diced
3 T. butter
1 medium yellow onion, chopped
3-5 carrots, diced
Salt and pepper
2 t. poultry seasoning
3 T. all-purpose flour
1 cup frozen hash browns
2 c. milk
1 box of chicken stock
¼ t. nutmeg
1 c. frozen peas

1. Preheat oven according to directions on biscuits. Arrange biscuits on cookie sheet and set aside.

2. In a medium pot over medium to medium high heat, cook chicken in butter for 2 minutes.

3. Add veggies and season with salt and pepper and poultry seasoning. Cook 5 minutes more, add flour and cook another minute.

4. Add potatoes, then stir in milk and chicken stock. Add nutmeg. Bring soup to a boil then turn heat back to a simmer. Cook for another 10 minutes. Put biscuits in the oven while cooking. Add peas.

5. Break up the biscuits into the bottom of a bowl and add soup.



 
Hey all! Sorry I've been absent again. DSIL was here from Thurs. to today--and we were busy doing that "girl stuff" aka shopping all weekend. Not too much to report on the food end (SIL is EXTREMELY picky--so it's mostly burgers and pizza when she's here) We did end up going out for a girl's night on Sat. and I had some yummy Spinach Canneloni and a Grand Mariner Creme brulee. Yummo! Today we'll get back to normal around here. I think it's gonna be chinese tonight--I do have to go to the store, so maybe not! have a great Monday all!
 
morning all--

Today is damp and rainy....I have errands to run, and my gram's groceries to go get......I love to stay in on rainy days, an it seems like those are the ones I always have a million errands that have to be done on.

*update on the whole SIL asking for $ for my dm dental bills......I sent her an email explaining our financial commitments to my gram etc, and she sent an email back saying that she guesses what we are saying is that we have a lot on our plate, and that she takes it as we are not going to help them out with my dm dental bills..that she will have to look into the cost again, and maybe they will just have to pay it all themselves....(then she tried the guilt) that it is to bad we can't help, as she thinks it would really help my dm self esteem to have her teeth fixed.
I have a feeling that my Db does not know that his wife has asked us for money for this, as he himself would have asked me on the phone the week b4 when we were talking about it, and he said that he would pay 80% and have my df pay 20%...........I am going to give him a call this week and act like I think he knows, and just make sure he understands why we can't do it all etc etc.

What annoys me the most is that my dm has the money to fix her teeth, she is just to tight to spend it, and always waits for others to cough it up.....about 10 years ago b4 I took over my grandparents $, she wrote a letter, and guilted them into sending her 600.00 for new glasses, and said for them not to tell anyone she asked for it......they sent it, and she just kept it......that is when I took over their finances and she never asked for anything again.

Anyway...such is life.............................Tonight Ross has a photo shoot for karate to promote the Skirmish that is coming up in November.....then from there we have to come home and change, and get him to football practice (which he will be 45 min late for)...which goes until 7:15.....(oh and did I mention it is RAINING today ugh)...............needless to say supper will be very quick, and fast................Pigs in a blanket with a fresh veggie plate...using up the rest of the farmers market finds from Thurs.....I wish our market was more then once a week....and it will end in Oct :(

Ok I am off to attack the day..............hope you all have a great one!!!

I have to make something for the dissenters in the family....sausage and something, maybe baked sweet potatoes and steamed broccoli for Kady.

Hi Ladies! I am back. I have sub clinical Hyperthyroidism. My labs stayed the same since my last test so she put me on meds. I did not get the script yet so I have no idea what it is. She didn't seem too concerned...and I didn't think to ask alot of questions...Ha, I guess I am not too concerned as well! :rotfl:

Well, after a weekend (again!) of suffering, I have one ear that won't pop. This was just a head cold I think, but my ears have been crazy for over a week now and I hate it! WAAAAHHHHHHH!:sad1:

Nepotism is alive and well in NOLA! Rick hired me to work for him for the next few weeks-so I'm waiting on UPS to bring me a laptop. And I already have my potential earnings earmarked for the Louisville house. How sad is that?!?:rolleyes1 Guess that's my motivator to get up and work.

All of our plans for DL are confirmed. And there's only the sleigh ride for Christmas to book and I'll be done planning for that one. Anyone seen Sheryl lately?!? I have some F&WF questions!

Wendie- When I first read that I wondered if your DB knew about that email-why not just mention it on the phone? But Rick says absolutely we need to meet up at Christmas, and then asked if he needed to pack his costume so Ross would know us....:headache: Men! What a goober!

There was alot of eating out over the weekend so I may just cook tonight, maybe, possibly....maybe I'll order soup from the Chinese take out place. I have tuna steak cubes marinating though. Maybe that. As you can see I am very decisive today.:rotfl2:

The potato/leek soup was so good I'm tempted to try it myself. I learned so much about Julia from the book. I had no idea she was a spy during WWII!!! Cool, huh???

Well, I keep up with the kids since it's either keep up or be eaten! We all do the best that we can!

Yes, the ribs were the melt in your mouth. They were good, but not my favorite. I enjoy a sweet taste, and these were really more Mexican in flavor. My kids did love them, though!
 
All this talk of Christmas trips has me really envious!!! We were going to be going to Texas at Christmas for a nephews wedding, but they've moved the date back until next spring. So, no fun trip for me this winter. Oh well! I'm still trying to talk Alan into using the OT for a quick DL trip!!!

Anyway, dinner tonight will be a ground turkey casserole. Quick and easy and kid friendly. I got the recipe from this thread. Love all of the recipes we've tried from this thread. If my kids seem to be too picky, I simply tell them that these are DISNEY recipes. Is that really a lie????
