Well, the game was a lot of fun, but darn it, it was COLD outside! I can't believe May is right around the corner. I forgot to mention that I made a rice dish to go with the tacos. It was easy and everyone really liked it. Warning, though, it makes a ton!! I think I'll be eating it for lunch all week. I got the recipe from Cooking Light magazine, I think.

Fiesta Rice

2 tsp. olive oil
10 ounces frozen corn, thawed
1 tbsp. butter
1 cup chopped scallions
1 1/2 cups uncooked brown rice (I used texmati brown rice)
2 tsp. ground cumin
1 tbsp. minced garlic
3 cups chicken broth
1 tsp. ground black pepper
salt to taste
1 can ro-tel tomatoes with chiles, with their liquid
1 can black beans, rinsed well
1/2 cup chopped cilantro
juice of one lime

Heat oil, and saute corn for about 10 minutes, until slightly browned. Set aside.

Melt butter in same pan. Saute scallions about 5 minutes, until tender. Add rice, cumin, and garlic. Saute 3 minutes. Add chicken broth, ro-tel tomatoes, pepper, and salt to taste. Bring to a boil, lower the heat, cover, and cook until rice is tender and liquid is absorbed--about 45 minutes.

Remove from heat, stir in corn and black beans. Cover and let stand 10 minutes. Stir in cilantro and lime juice and serve.

Serves 8

Rotel
Cheddar Cheese Soup
Cream of Chicken Soup
Cheese
Put it all in the crockpot and enjoy as a chicken taco salad (the South Beach in me:))

Sandy - Congrats to your DS, you must be very proud of him!!!

DH has one foot in the freezer, the work came to a standstill this evening and I may not have use of my dishwasher or sink unless he takes off work a few days, which we really can't afford for him to do because he made need to take off for baseball playoffs later this week.:mad:

So if I have to wash dishes in the bathtub, believe me that will not happen, there may be no cooking until this mess get fixed.

Sorry to vent, just had to get it out.

Look at the bright side, you may be able to get your favorite fried green tomatoes and shrimp since there will be no washing dishes in the tub. :) I am sorry things with the kitchen didn't go as planned this weekend...:hug: . If you were closer, I'd invite you over for dinner...:)

Kathy, I feel your pain with the kitchen remodel.:hug: When we redid our's all that eating out actually got old very quickly! I would love to see pics of the finished job, it sounds really nice!

I'm off to cook my only meal of the weekend! A filet on the grill, sauteed mushrooms, broccoli & baked potatoes.

We had a great time at the fair! Ate & drank way too much. Alexis was sooo cute up on stage! She really enjoyed all the games too!

Tonight we had Rachael Ray's Devilish Chili Cheese dogs. They are one of DH's favorites. If anyone is interested, I will post the recipe.

Kathy - I don't blame you for not wanting to wash dishes in the tub! It looks like there is some serious takeout for the next few days for you!!!

Tonight I am making nachos out of the leftover chili. Oh WOW, was it good! I will post a recipe!

ETA: Here's the recipe that inspired mine. Below is MY version of it:

Lindsay's Kitty Chili

2 lbs. ground beef
2 Tbs. grill seasoning (Montreal Steak variety)
1 medium onion, chopped
1 bell pepper chopped (your choice of color)
3-4 garlic cloves, chopped
2 cups beef broth
2 15 oz. cans tomato sauce
A few shakes of Worcestershire
A few shakes of Tabasco
1/2 cup of A1 (trust me, it sounds totally odd, but it works!)
2 cans kidney beans, rinsed and drained

Brown the ground beef seasoned with the grill seasoning. Drain. In a large soup pot, preheated to about medium high, saute the onion, garlic, and pepper until the onions are good and tender. Add meat. Season with the Worcestershire, Tabasco, and A1. Stir. Add the beef broth and tomato sauce. Stir well. Add beans. Bring to a boil, cover, and let simmer for a few minutes (I cook my cornbread during this process).

This ROCKED with a little dollup of sour cream!

Lindsey- I love trying new and different chili recipes. It looks yummy!!

Kathy- I think that everytime dh walks through the kitchen and doesn't work on it you should take out the tape measure, and measure the size of the freezer, then look him over real good, then turn and then measure the freezer again, maybe he will pick up his pace, lol!

supper tonight is going to be spag. with my doctered up jarred sauce, and I will serve it with a big salad! It is raining here (again) so this meal just seems cozy to me today.

Hey all--sorry I've been MIA the past few days. I worked all weekend, so WFD around here consisted of pizza and McDonalds.:rotfl2: Not sure wfd tonight--need to go to the store this afternoon

Kathy ~ Sorry about your kitchen. Did you watch D.H. last night? Looks like we need designated freezers for our DHs. :rotfl2: Probably a good idea, you never know when the neighbor kids are going to break into your basement to get a popsicle. :rotfl2:

WFD? We're having beef stir-fry with white rice and egg rolls for dinner.

We had the Carpenter from HE$$ for our renovation and he was planning on leaving me without a sink! The Plumber heard and came right away but I still had one day in teh bathtub...it was not something I was planning on doing again, the carpenter wanted me to go without a "few weeks", so I can feel your pain.

Dinner last night was really good. We had a baked spiral ham cooked in a pineapple juice/brown sugar clove sauce and then glazed. We also had mashed potatoes with a gravy made from teh cooking liquid, steamed French green beans, candied carrots, a marinated vegetable salad and the pineapple bake. I have got to learn to read the directions before I start because although it was very good, it I had started it out right it would have been perfect :thumbsup2.

Tonight the girls have a knitting class so we are just going to have the leftovers from yesterday. Is that okay with you , Marisa?

Thats fine! I loved the pineapple bake!! I am having the leftovers for my lunch today!!

:lmao: The freezer is definitely still an option! But I have to say he did work very hard all weekend. With the hours he works 1PM-9PM he will be able to put in some time in the mornings, not sure how much will get done though.:sad2:

DF is home sick today...:sad2: ...he has really bad allergies but I think its a bad cold this time...I am trying to doctor him up since he is going to France tomorrow...I just got done making breakfast, soon lunch...wth??? I thought people didn't eat when they are sick???

I am throwing chicken in the crockpot and serving it with a salad. I am on a Good Seasons dressing kick (with balsamic) and can't get enough salad...

Tonight we are having some of the leftover fiesta rice, and I am making chicken breasts stuffed with pepper jack cheese, seared off and then roasted in the oven with some kind of sauce. I have some honey-chipotle mustard that might work. Vegetables are baby carrots and spinach tonight.
 
Tonight was going to be orange chicken but I cahgned my mind and is now going to be a parmesan lemony type pasta with shrimp! YUM!
