Thought ya'll might get a chuckle....

Rick and I are paring down from 2 apartments made into 1 to just the small one. This is my "new" kitchen- where the magic happens!:lmao: :lmao: :lmao:

Feel free to chuckle, I do everytime I cook in there. Ignore the mess, I already cleaned (after I took this) so it'd be nice for Rick's grand return

The white shelving is starting to pull away from the wall- sooo there's some renovations coming down the pike.

The thing I find the funniest?

When we lived in Indianapolis my walk in closet was bigger than this kitchen!:rotfl2:

Now that is what my DH would call a "one butt" kitchen!
 
Morning Y'all,

I don't know what I'm going to cook today. Maybe beans or a roast.

Lulu, how did Glynis's roast come out in the pressure cooker? I always cook roast in the pcooker, so I might try it with Glynis's recipe.

Lauren, I feel bad for your DF. Flying with any kind of sinus problem stinks! Hope he feels a lot better by tomorrow.

liamsaunt, Your fish tacos sound yummy. That batter is different from any I've ever tried. I will have to try that soon. Thanks for posting the recipe!

Lindsay, Your chili sounds good! I love A-1, especially on grilled chicken sandwiches!:confused3 :laughing: I wonder if you can handle tabasco because it's red pepper instead of black pepper. I've heard that red is easier to digest than black.

Kathy, While planning the remodel, did you have a spot for your designated freezer?:laughing:

Gee, when you can't cook everyone's dinners sound so darn good. Things are looking a bit better. DH called in sick to work and says he could have everything in working order by tonight. I guess it wasn't a lie(calling in sick), since he is near death:laughing: ! Hopefully I'll be headed to the grocery store later this afternoon, I've got menus planned throughThursday. I'd better not get too excited.:rolleyes1

Lauren - I sure hope DF is feeling better before he has to leave. I'm sure he will be because you're taking such good care of him.:hug:

Sheryl - no, current renovation didn't include the designated freezer, but plans are rolling around my mind.;)
 

Sounds like everyone had relatively good weekends. I can't wait to try Lindsay's new chili recipe!

I didn't have to cook all weekend (yea!), so I'm trying to get back into the swing of things. Dinner tonight will be Sloppy Joe Skillet with a green salad on the side. No dessert for us tonight.

Last night I made Cherry-Topped Chicken with Saucy Poached Pears for dessert. Yummy!
 
Ummm, no, I do not cook in the boa. It's a leftover from closing the store that I haven't figured out what to do with yet! You know you live the "decadent" life when you have a spare boa lying around!:rotfl2: And DH got paid so I can go get my toaster oven this week- finally! I can bake in the kitchen (well, to some degree) instead of running over to the old apartment!

Glynis- Rick wants ta kiss ya! We had Glynis' pot roast yesterday and he loved it! He said- "all that time you spend on DIS is good for something besides Disney! Wondered why you were on there so much when you know everything anyway":rotfl: :rotfl: My knowledge knows no bounds! I stun myself-now look away while I look that up!:lmao:

So, it's leftovers here all week to clean out the fridge before leaving. Except maybe a package of brownie mix when I get the toaster oven- because I KNOW I have to try it out to make sure it works!;)

Tonight I am making nachos out of the leftover chili. Oh WOW, was it good! I will post a recipe!

ETA: Here's the recipe that inspired mine. Below is MY version of it:

Lindsay's Kitty Chili

2 lbs. ground beef
2 Tbs. grill seasoning (Montreal Steak variety)
1 medium onion, chopped
1 bell pepper chopped (your choice of color)
3-4 garlic cloves, chopped
2 cups beef broth
2 15 oz. cans tomato sauce
A few shakes of Worcestershire
A few shakes of Tabasco
1/2 cup of A1 (trust me, it sounds totally odd, but it works!)
2 cans kidney beans, rinsed and drained

Brown the ground beef seasoned with the grill seasoning. Drain. In a large soup pot, preheated to about medium high, saute the onion, garlic, and pepper until the onions are good and tender. Add meat. Season with the Worcestershire, Tabasco, and A1. Stir. Add the beef broth and tomato sauce. Stir well. Add beans. Bring to a boil, cover, and let simmer for a few minutes (I cook my cornbread during this process).

This ROCKED with a little dollup of sour cream!

Your version sounds so delish. I'm definitely gonna try it. :hippie:

Found some really beautiful strawberries at the store this afternoon, so we're definitely having strawberry shortcake for dessert--thinking about Velvet shrimp for DH and I. The kiddos can have leftover pasta--it's all they'll eat anyway:rolleyes:

:cool1: I'm so glad for you & especially your DH!!! I think he was much closer to getting put in the freezer than he realized!!!! Or maybe he did realize it, and that's why you have a working kitchen!:lmao:

OMG it feels so good! Cooking is my therapy and I've been on edge all weekend. DS has a baseball clinic to teach this evening so DH & I might go out for dinner. DH will be around for a while, there's still a few minor things yet to be done!:lmao:
 
Oh yeah, I decided on red beans & rice with andouille sausage and sauteed spinach for dinner tonight.
 
I am making Glynis' Pot Roast (for the fifth time since finding it on this thread!) *except* this time I am trying it in a pressure cooker. I will let you all know how it turns out!

I want to cook it this week, did you cook it in the pressure cooker? Did you add the gravy mix at the beginning? No explosions hopefully! I know the instructions for mine says to not cook thick things like pea soup. Wondering if it worked out okay.
 
You all are so brave. I am soo afraid of a pressure cooker. I'm not so fond of leaving a crock pot while I'm at work but I do,"cause I love the idea of dinner being done. I haven't yet won the lottery so no maid for me. I thought once of hiring a wife but I couldn't do that to another human much to cruel :rotfl:

I suppose I should go see what I'm making for dinner.

I'm soo glad you don't wear the boa while cooking. I had a awful picture of you flinging it over your shoulder and it getting caught in the oven door. :eek:
 
Everything sounds so yummy here. I love A1, Lindsay, so I will put that on my list. :)

Glynis' roast in the pressure cooker came out great. I added some extra liquid (low salt beef broth and wine) for fear of the pressure cooker malfunctioning with only 1/2 cup water, but it ended up that I had some extra liquid. I just made a roux and thickened it and it tasted *great*. The meat was nice and tender. I cooked it about 40-45 minutes once it came up to pressure (hissing) and it was a 3 1/2 lb. roast. It was a little pink inside, which is how I like it.

I added everything at the beginning, but mine has that same warning, so I added extra liquid and then while the meat was resting, just made a roux and thickened the gravy pretty easily. You do end up with extra gravy, but I like gravy (over rice, veggies, even a baked potato etc.) so it wasn't a problem. :)
