I didn't get to do much yesterday, I've got a stomach bug still today.:sick:

Nancy - I hope Buddy enjoyed his sandwich, doesn't he always?:rotfl:

Lauren - your post right behind mine on the LeCellier thread was hysterical! Now onto the address list issue. Sweetie you need to explain to DF that when we don't get what we want, when we want it we start clearing out our freezers and if he doesn't understand I'll be happy to fill him in!:lmao: :lmao:

Sheryl - our renovations began due to the extensive damage we had. But we figured we might as well tear down a few walls and make the "great" room I'd been wanting. So now the living room, dining room and kitchen are one "great room"! Everything in the kitchen came out from flooring to cabinets. All that will be left after this weekend is new furniture for the living area!:worship:

DS went to the fair last night and had a great time!

ugadog - I like to roast the brussel sprouts with a little EVOO, salt & pepper. They come out so sweet!

We'll probably get Chinese take-out tonight, if I can stomach it!!

Last night was leftover pork loin with fried green tomatoes (Kathy?;) ) and fried mashed potato/corn fritters. After looking at the plate I figured I should have just fried the pork loin too so everything was unhealthy!:lmao: :lmao:

DH comes home today so I'm hoping to find the salmon pinwheels, with grilled brussel sprouts, portobellos and onions.

Tomorrow is Glynis' pot roast that Rick requested before he left.

Rick and I are paring down from 2 apartments made into 1 to just the small one. This is my "new" kitchen- where the magic happens!:lmao: :lmao: :lmao:

Feel free to chuckle, I do everytime I cook in there. Ignore the mess, I already cleaned (after I took this) so it'd be nice for Rick's grand return

The white shelving is starting to pull away from the wall- sooo there's some renovations coming down the pike.

The thing I find the funniest?

When we lived in Indianapolis my walk in closet was bigger than this kitchen!:rotfl2:

Thanks, I try to be creative with that electric skillet! The bonus? Not once have I had to tell Rick to get out of the kitchen! When only 1 person fits in at a time it kinda takes care of itself!:rotfl2:
 
Yesterday I amde a pizza. It came out really tasty, though perhaps I was a bit heavy handed with the red pepper flakes.

Today I am making some kind of fish--maybe fish tacos. I suppose I should get off the computer and drag my lazy self to the store and see what looks good...
 
Kathy- Hope you are feeling better. You sure are feisty today :lmao::lmao::lmao:. When we renovated we did the same thing, one big great room. I have a breakfast bar that keeps the kitchen clutter hidden, but everything else is open.

Lori- You don't fool around when you say small, do you? No laughing from me though, I lived with a tiny kitchen fro 15 years if you opened the oven door you hit the person sitting at the table.

We are having pizza and munchies. We are having the friends over that were here last week...I promised myself I wouldn't drink so much this time...I also have a horrible headache...

400 degrees for about 30 minutes - depending on the size, if they're large. I'd check them after 15 or 20 minutes. You want them to be browned and a little crusty on the outside and soft on the inside! YUM - enjoy!!
 
Today I am going to try and make some homemade chili. I know I make black bean chili all the time, but I am going to make regular today. I haven't made chili since 2004, when I started having troubles with spicy foods. It was all in the chili powder. Anyway, I am going to toy around with an interesting recipe I found and see how it tastes. If it's good, I will post a recipe :)

ETA: If you are wondering why my black bean chili doesn't bother me, it's because while cooking I add a little Tabasco, which oddly doesn't bother my tummy. That chili is more of a smoky-coriander-y type chili, not a hot and spicy one. Make any sense?

I have been craving keilbasa on the grill so I think I may make that. I am not sure if DS will eat too much of it so I will make him a burger.

Thanks for all the well wishes - I'm feeling much better, so good in fact I ate Chinese food last night!

DH's friend :rolleyes1 who was supposed to help him finish up our kitchen was a no-show yesterday. I thing that surely qualifies as "freezer material". So, DH may have to continue into next weekend.:sad2:

Today we are having Sunday linner at my sister's house--we are having a picnic of cold fried chicken, potato salad, and cole slaw, and then we are all going to watch Liam's first little league game of the season.

The fish tacos came out really good yesterday. Here is the recipe, in case anyone wants to try them:

Fish Tacos

1 1/2 lbs. fish--I used haddock, but any kind of white fish would be fine
2 cups beer
2 cups flour
1 tbsp. ground cumin
1 tsp. cayenne pepper
2 cups cabbage, shredded
2 tbsp. rice wine vinegar
2/3 cup mayonaisse
1/3 cup plain yogurt
2 chipotle peppers, seeded and minced
salsa of your choosing
guacamole (recipe to follow)
flour tortillas
1 cup flour, seasoned with salt and pepper to taste
oil for frying

Combine the beer, flour, cumin, and cayenne, whisking until smooth, and then set aside for about 30 minutes.

Combine the mayonaisse, yougut, and chipotles and set aside

Combine the cabbage and rice wine vinegar and set aside.

Wrap the tortillas in foil and place in a preheated 300 degree oven.

Heat the oil to 375 degrees. I used my deep fat fryer, but if you are going to do it in a pan, use about 2 inches of oil.

Cut the fish into pieces about three inches long and one inch wide. Put the flour, salt and pepper in a ziploc bag, add the fish, and shake to coat. Dredge the fish in the beer batter, letting excess drip off, and then fry, a few pieces at a time, until fish is just cooked through and batter is browned. Remove fish to a pan lined with paper towels and keep warm in the oven. Repeat until all fish is cooked.

To serve, place a few pieces of fish in a tortila. Top with the chipotle-yogurt mixture, some of the seasoned cabbage, some guacamole, and salsa to taste.

Guacamole

2 ripe avocadoes
handful of cilantro, roughly chopped
1 tomato, seeded and chopped
2 jalepeno peppers, seeded and minced
1 smallish onion, finely minced
juice of one lime
salt to taste

Combine everything and season to taste with salt and hot sauce.
 
I am making Glynis' Pot Roast (for the fifth time since finding it on this thread!) *except* this time I am trying it in a pressure cooker. I will let you all know how it turns out!
 
I just realized I haven't posted here since Thursday, not like I really needed to because I haven't been cooking. Friday we had leftovers and yesterday we had take-out pizza.

DS had his district pinewood derby race (cub scouts) :car: yesterday and won 1st place in Webelos. Afterwards we took him to ride go-carts and then to Dairy Queen for ice cream. He was a happy camper.

I'm not sure what I'm making for dinner tonight. I don't have anything in the house so I have to run to the store.


ETA: We're having Taco Casserole for dinner. Just waiting for DS to get home from fishing with his grandpa so I can go to the store.
 
Haven't posted since friday A.M. as things have been normally hectic here.

The eggs friday night did the trick for ds he (after a long hard testing) is now a green belt in jujitsu!!!

Sat dh worked until noontime and then we had to go down to my grandmothers (about 15 min away) to fix her hot water heater. She called me to say that she hasn't had any hot water for two days and was tired of having to heat it up on the stove. She didn't call at first cause she hates to be a bother,lol. she is never a bother. she is a pretty amazing women, 93 lives alone, we have a aide come in 4 hours every day, but other then that she is on her own, and 100% there mentally. We tell her she is a tough old bird. dh and I take care of her as my father is an only child and well he is a (ahem) donkey's butt......(I can't get points for that can I?!!?lol)
So after all that we just grabbed some supper at this local little place, not our fav but good in a pinch.

dh is working today so supper tonight is left overs from last night as the portions are quite large.

Sandy- congrats to ds on his win, he must be so excited!!

liamsaunt- let us know how the game goes!!

Lauren-tell him that if he doesn't get you the addresses that people all over the U.S. have room in their freezers for him if need be!!!

Well, the past week DH has worked a late shift so it has been sandwiches and frozen dinners for us! Tonight we are having shrimp cocktail, fried soft shelled crabs and tilapia, steak oven fries and salad along with cocktail sauce and tartar sauce. I usually add minced pickled jalapeno to the tartar sauce but did a normal one with some dill.
