:grouphug: and prayers for your family, Glynis.

Thanks, Dawn! Caroline is just beautiful!!! I can't believe she's so big, already! I have something for her. I just can't seem to get my act together to get it to you. Cross your fingers for Christmas!

Tonight I am making the Italian crockpot chicken. It certainly look like the week for it here on the DIS :) I am making mine with penne pasta. I make a pound of pasta, drain it, and just add it straight to the crockpot and toss. We will have a salad and breadsticks.

WFD at your house?

ETA: My thoughts and prayers are with everyone who is under the weather and who are having family troubles :flower3:

Marinated pork cutlets with mashed potatoes and veggies here. I was going to make a salad but it's too cold for a salad here today!

Soup and Sandwiches here tonight. My dh went to work today but every time he eats he feels yucky still (he was home Mon and Tues). I figured I'd keep it light. Chicken noodle soup and grilled cheese maybe.

Tonight we're having a pork chop dish which is breaded then baked in a mushroom/wine sauce, along with au gratin potatoes and glazed carrots. :thumbsup2

Think tonight I will make the Burly Man BBQ Burgers with Spicy Slaw tonight. A RR recipe from 365--a new one for me--will post if yummy!

I'm making chicken drumsticks (breaded with a mixture of Shake n Bake, parmesan and seasonings), Glynis' Ranch Potato Salad and sweet corn. :)

We are having left over Spaghetti and Meatball Stoup...it was delicious! I added more Spaghetti than I was supposed to and it was rather thick but we loved it that way...I also subbed another carrot for the shrooms! Yummy Yummy....

Tiger Kat and Glynis, prayers and hugs for your families...Mermaid, hope your hubby feels better soon.

Have a great day all!

17 more days til I see the Mouse for Xmas!!!

We're going out of town this weekend, so I'm trying to use up stuff I have around the house without going to the store. Tonight we'll be having elk burgers. I made homemade relish last summer, so we'll open a jar of that. I've got some broccoli to steam and I made a cake yesterday so we'll have that for dessert.

I keep changing my mind. I was going to make the Jambasta tonight but since we had the Italian Crockpot chicken with pasta last night I did not want pasta 2 nights in a row.

I think I will grill chicken with some risotto and a vegetable. I was going to make stuffing but don't think I feel like dealing with that after work.

BTW- The Italian crockpot chicken was a hit - next time I may double for more sauce. Thanks for the recipe Lindsay

Our oven baked chicken parm was delish! I served it with some angel hair pasta. A yummy recipe that was SOOOO easy to fix. Here you go!

4 boneless, skinless chicken breast halves
1 egg, slightly beaten
¾ cup Italian bread crumbs
1 jar (26-28 oz.) Ragu Old World Style
1 cup shredded mozzarella cheese

1. Preheat oven to 400. Dip chicken in egg, then bread crumbs, coating well.

2. In a 9x13 glass baking dish, arrange chicken. Bake uncovered for 20 minutes.

3. Pour Ragu over chicken, then top with cheese. Bake an additional 10 minutes or until chicken is no longer pink. Serve with hot cooked pasta.

I'm trying this tonight, it already smells great, can't wait to serve it to DP!

Thank you for posting this. :)

Tonight was homemade chicken pot pie--not made by me, of course, since I can't bake at all. My Mom made it--she makes the best pie crust. I can't even come close. Plus a salad of baby greens, grape tomatoes, cucumbers, sweet onion in a cilantro-cumin dressing.

Au revoir, everyone! I'll be back on Tuesday. Have great dinners this weekend! :flower:

We had chicken parm tonight too! It was soooo good and I made enough for left overs for lunch! YUM!

We are having leftover crockpot Italian chicken. I made it with melted butter instead of melted margarine this time and it rocked!!!

Our Sunday School class is having it's Christmas party tomorrow night, so when I come home this afternoon I will be making some Oreo truffles.

WFD at your house?

I'm putting dinner in the crockpot right now:

Sherried Beef

2 lbs beef steak, sliced
1 pack dry onion soup mix
1 c. sherry
1 can cream of mushroom soup

Serve over egg noodles. So easy and Yummy!

I think tonight will be curried chicken salad in whole wheat pitas. The burgers last night were so-so, but the spicy slaw was really good. Even DH who doesn't like slaw liked it

Spicy Slaw
1/2 head of red cabbage thinly sliced
1 red bell pepper thinly sliced
3 green onions thinly sliced
1/2 cup parsley chopped
1/4 cup cilantro chopped
1 cup mayo
1 tbsp hot sauce, such as tobasco
Juice of one lime
Salt and pepper

Mix mayo, hot sauce, lime juice and salt and pepper in a bowl. After mixing, place the other ingredients in the bowl and toss well.

I am making a family favorite...Chicken Francese, rice pilaf and broccoli...

Let me know if you would like the recipe...

Lindsay, Can you share your truffle recipe? TIA!!!

Have a great day all!

Lauren

liamsaunt - I know I've probably missed you, but have a wonderful time in Paris!!! Eat a crepe for me!!!

Dinner tonight is still a question. I've got some ground beef that needs to be used up. I may make my sweet and sour meatloaf. DH would be happy. Kids...not so much! I have book group tonight, so I need something that will be fast, and since the meatloaf can be done in the microwave, I think that's the way I'll go. I'll mash some potatoes to go along with it, and do some kind of veggie. The rest of the cake I made 2 days ago for dessert, and I'm done!

I haven't been around much lately. Life getting in the way. ;)

Tonight we're having beans and cornbread. It's quick, easy and it makes DH happy. :thumbsup2

Oreo Truffles, aka Smack yo' Mama Candy

1 package of Oreos
1 8 oz. brick of cream cheese, room temp
2 boxes baking chocolate (8 oz. each)

Remove 9 cookies from the package and grind them to crumbs in a food processor. Place in a small bowl. Add the rest of the Oreos to the food processor and grind until they are crumbs. Place in a big bowl and add cream cheese.

Using a spoon (it's actually easier to just use your hands) combine Oreos and cream cheese until completely combined. Form into balls a little smaller than golf balls and place on a cookie sheet lined with wax paper. *At this point I put them in the fridge to get them good and cold* While they are chilling, melt the chocolate in a saucepan. Dip the balls in chocolate and sprinkle with reserved Oreos.

Store in fridge.
