My plans have changed for tonight. DS is coming home from college to spend the night and now he says he'll be home for dinner. I have ham or the stuff to make a chicken and stuffing recipe. He doesn't like either. :rolleyes: I need to go to the grocery to get dog food, so I guess I'll come up with something easy to throw together that he'd eat.
 
I think dh and I will have oatmeal and canned refrigerated biscuits tonight. :blush:

Don't feel bad! We had a string of creative dinners lately! Just didn't feel up to cooking. I haven't kept up with the thread, I hope you guys aren't sick. If you are :wizard: hope you guys get well soon!

I did check one day and saw that Liam'saunt is going to Paris after all. I'm so glad for her. Hope they have a great time.

Well we're having pizza. I just got through making it. Smells wonderful. I got the refrigerator crust. Cooked up some sausage (with sage), onions, green pepper. Topped the pizza with that, 7-herbed tomato sauce, mushrooms, Italian blend shredded cheese (mozzarella, provolone, parmesan, and romano) and a liberal amount of pepperoni. The kitchen is offically re-opened! Can't wait to eat. Smells sooo good! :)

To tell you the truth, I enjoyed the heck out of the oatmeal and biscuits! :confused3 :rotfl:
 
Tonight is my grandmother's Christmas party for her Sunday School class. She asked me to come sing. So I am going over there for that to just help her out. No cooking for me tonight (although I did make truffles and am making a pumpkin gooey butter cake to take).

Going to Dsis's house for my nephew's bday party today...she is having beef barley soup (family recipe with ground beef), 6 ft hero and lasagna...

Gooey Pumpkin Butter Cake (and variations)

Cake:
1 (18 1/4-ounce) package yellow cake mix
1 egg
8 tablespoons butter, melted
Filling:
1 (8-ounce) package cream cheese, softened
1 (15-ounce) can pumpkin
3 eggs
1 teaspoon vanilla
8 tablespoons butter, melted
1 (16-ounce) box powdered sugar
1 teaspoon cinnamon
1 teaspoon nutmegPreheat oven to 350 degrees F. Combine the cake mix, egg, and butter and mix well with an electric mixer. Pat the mixture into the bottom of a lightly greased 13 by 9-inch baking pan.

To make the filling: In a large bowl, beat the cream cheese and pumpkin until smooth. Add the eggs, vanilla, and butter, and beat together. Next, add the powdered sugar, cinnamon, nutmeg, and mix well. Spread pumpkin mixture over cake batter and bake for 40 to 50 minutes. Make sure not to overbake as the center should be a little gooey.

Serve with fresh whipped cream.

Variations: For a Pineapple Gooey Cake: Instead of the pumpkin, add a drained 20-ounce can of crushed pineapple to the cream cheese filling. Proceed as directed above.

For a Banana Gooey Cake: Prepare cream cheese filling as directed, beating in 2 ripe bananas instead of the pumpkin. Proceed as directed above.

For a Peanut Butter Gooey Cake: Use a chocolate cake mix. Add 1 cup creamy peanut butter to the cream cheese filling instead of the pumpkin. Proceed as directed above.

Tonight is Italian crockpot chicken, caeser salad and garlic bread. Can't wait! :banana:
 
Tonight will be smoked sausage with fried potatoes and onions!
 
Tonight we're having steak, not sure of the sides or dessert yet. Tomorrow I'm going to "try" a Pepsi Pork Roast recipe in the crockpot. I just have to get a one thing at the store (cream of mushroom soup). Has anyone posted this recipe? If not, I'll post it now. It's gotten really great reviews at recipezaar! 92 great reviews! So it can't be too bad. :) I'll let you guys know how it turns out tomorrow night.

Pepsi Pork Roast (Crockpot)

1 can pepsi
1 can cream of mushroom soup
1/2 package onion soup mix

1. Place pork roast in crockpot
2. Mix soup w/ soup
3. Add cola to soup mixture and pour over roast.
4. Cook high 4-5 hours (I'm going to cook it on low for longer)
5. When done, remove roast & thicken juices w/ cornstarch for wonderful gravy.

*You can add potatoes and carrots when you start the roast. I'm going to do that tomorrow.
 
We ate out for lunch today at our favorite Thai restaurant!! It was soooooo good. Tonight we'll just have something light like tuna fish sandwiches and probably home made chocolate chip cookies.
 
Last night we had marinated grilled chicken breasts, stuffing and steamed broccoli-carrots-cauliflower.

I was going to make baked ziti tonight, but I don't have any mozzarella so I guess we'll just eat it like spaghetti. I better get to work on it. It's movie night and we'll have to have an intermission to go out and watch the shuttle launch, unless it gets scrubbed again.

Tonight I want to go to Qdoba Mexican Grill for dinner. It just opened by our house. :goodvibes

Yes, from our home we can see the shuttle launches. We live in east Boca, about 2 miles from the ocean. It took me a couple of launches to figure out exactly where to look - but on a clear day we can see it. When ever there is a launch or fireworks display in the area, dh and I and our across the street neighbors are always out in the middle of the street watching. No one else on the block - just the 4 of us, we always laugh about that!! A view from the Treasure Coast must be really good. :goodvibes It is always very exciting to see.

It was really fun! We watched the Polar Express and had lots of yummy popcorn, and I had some spiced cider as well. It was fun sitting there with DD b/c I realize in not too long she'll not think mom that "cool" anymore!

Gonna make some of those Oreo truffles tonight! Can't wait!
