We are having the Italian Crock pot chicken tonight

Was the cream cheese supposed to be melted like the butter? I hope I did it right.

My cream cheese is always a little lumpy but in the end it stirs in nice...last night I made this and I did not cook it as long as I always do and it was even better (more moist). I would say to try and cook in the minimum...enjoy! This is one of my family's favs....

I am making chicken parm for tonite w/ziti, a big 'garbage' salad & garlic bread sticks.
I am going to the store in a few hrs to load up on baking supplies--will start Christmas baking this week! :goodvibes

We are pretty big eaters here...2 adults, 1 eight year old...It feeds us with maybe a little short of a serving left over. I serve it with a vegetable and bread. I had a lot of the sauce left yesterday so I would say you could add some more chicken...its a great recipe!

Tonights dinner is crock pot beef roast, potatoes and carrots. Its chilly here we need some good cold weather food to keep us going :)

Tonite my family is having leftover spaghetti and meatballs. I will have a quick bite out. My DS works with a renaissance seamstress and she is going to make a Sleeping Beauty dress for my DGD in blue. I have to met her at the fabric shop.

I am 15 minutes north of King of Prussia - it is freezing! but yet I hate to break out the winter coat - it is almost like giving into winter

DS10 and I are going to serve meals at a church soup kitchen today. We'll probably pick up dinner at BK on the way home since it's right across the street from the church.
 
Thanks everyone for the well wishes for Mom. The meeting went about as well as expected. Mom is slipping away, all we can do is to make her as comfortable as possible. She will have good and bad days. I have accepted what is happening and I have to leave it in God's hands. I know my Dad will come for her when it's time, and they will be so happy to be together again.

I was planning on doing the Italian crockpot chicken this weekend, and my guys are big eaters - if I use 6 boneless breasts, should I double the sauce ingredients?

We're having stuffed mushroom caps and spaghetti and meatballs. I had to cook the shrooms to "save their life" and stuffed is how I like them best! :thumbsup2
 
This is a little OT - but in case you missed this thread about cheese danish - here is the link. Check out post #5. I tried the posted recipe for easy cheese danish and they came out unbelievable!! I did the individual kind with the cresent rolls. They came out like little cheese danish cookies. Fantastic!

Today I made a pan of lasagna and some garlic toast...leftover brownies from yesterday for dessert. :)

Definitely! I always double the sauce when I make it. We like to sop up the extra sauce with garlic bread.

Last night's enchilada bake was really good! I would have liked it spicier, but then my kids wouldn't have eaten it. Anyway, I'll post the recipe if you'd like it.

Tonight we're having spaghetti and meat sauce with garlic bread and a large green salad.

Enchilada Bake

1 pound ground beef
1 1/2 C. frozen corn
1 can enchilada sauce
1 can chopped green chiles, optional
6 oz. pkg. corn tortillas cut into strips
shredded cheddar cheese

Preheat oven to 375 degrees. Brown ground beef in large skillet until no longer pink. Drain. Add frozen corn, enchilada sauce, and chiles. Cook about 5 minutes. Layer 1/4 meat mixture in a lightly greased 8 inch square baking dish. Top with 1/4 tortilla strips. Repeat layers 2 times ending with meat mixture. Cover with foil and bake for 40 minutes. Remove foil and spread cheese on top. Return to oven for 5 minutes or until cheese is melted and bubbly. Serve with sour cream.
