We are going to lunch at O'Charley's today so we will have a snack for dinner. Since it's so bitter here, I am thinking about tomato soup in a mug with croutons :)

We're having "Thanksgiving". I bought a little 8 pound turkey before Thanksgiving and my 9 year old has been bugging me to have it. I finally gave in. I need the room in my freezer anyway.

Made the Oreo truffles last night and yummo!!!!!! And soooo easy! Might replace my other truffle recipe b/c it's more labor intensive.

I'm not much of a baker, I think it's becsuse I've only owned a hand mixer my entire life. My Christmas gift to myself is going to be a stand mixer (I think that's what it's called). Any helpful suggestions before I go out hunting???? Keep in mind, I know nothing about them. ;)

I love my kitchenaid! I use it 3 or 4 times a week!
 
Today is kind of a blah day where we live. Cloudy and gloomy! I think that we are going to have breakfast for dinner. Nothing like crepes to cheer you up! Then we're going to watch The Muppet Christmas Carol! I love that movie!

The kids and I are making Christmas cookies this afternoon, so we'll have a fun time tonight!
 
Tigerkat--I think the KitchenAid's are the best. I, however, am too cheap to buy one for myself. I have a Hamilton Beach that can either be a hand mixer or a stand mixer. I have no complaints!
 
I wanted to post the recipe I tried the other night. It was so good! The recipe came from Amy (KMH1 on the boards).

Coke Marinated Steak
2-3 pounds steak (I used top sirloin)
1 cup ketchup
2 tablespoons brown sugar
1 cup coke
1 cup Italian dressing

Cut steak into strips (thinner strips will result in more intense marinade flavoring). I cubed the steak instead so I could skewer them on wooden sticks. Mix together remaining ingredient. Place steak in marinade.
Marinate for at least 24 hours and up to 48 hours, turning several times to insure complete coverage. Heat grill to at least medium heat and cook to desired doneness.



Instead of kabobs, I made these as fajitas and grilled them on my George Foreman. They were really good.



DH and DS won't be here tonight, so it'll be sandwiches or spaghetti for me.
 
I have a KitchenAid that I love as far as performance, but I don't like that it's difficult to pour ingredients in. I have the splash shield, but I admit I rarely put it on. I don't know that it makes much difference anyway.

I bought mine at either Linen's and Things or Bed Bath and Beyond. They were on sale and I used the 20% off coupon also.

Oh my, people!!! I just made the Cheddar Cheese Soup recipe from Le Cellier (posted at http://allearsnet.com/din/rec.htm) and it came out fantastic!!!!!

Cheddar Cheese Soup
Le Cellier
Canada - Epcot


Ingredients:

1/4 lb. smoked bacon finely chopped
1 medium red onion cut into 1/4 in. pieces
1/2 cup finely sliced celery
1/2 cup finely chopped carrots
3 TB all-purpose flour
3 cups whole milk
2 cups chicken stock
12 oz. grated white cheddar, Canadian Black Diamond
3 dashes Tabasco
1/2 tsp. Worcestershire sauce
1/2 cup Moosehead Canadian Ale, room temperature
salt and pepper to taste
1 TB thinly sliced chives

Method:

1. Cook the bacon in a large heavy-bottomed, non-reactive soup pot over medium heat until wilted but not browned.

2. Add onions, celery and carrots and cook until the onion is translucent and bacon has crisped.

3. Sprinkle in flour and stir constantly for 2 minutes. Stir in milk and stock, a little at a time, blending well to ensure there are no lumps. Bring to a boil, then cover and simmer for 15 minutes.

4. Remove from heat and whisk in cheese, Tabasco, Worcestershire and ale. Season with salt and pepper to taste.

Serve with your favorite bread and top with chopped chives.
 
It'll be pan fried salmon, mango salsa; fresh steamed broccoli & yellow rice.
Maybe some hot, mulled apple cider later.

Don't let this mislead you into thinking we eat healthy--tomorrow: meatloaf! :cheer2:

Have you tried 'soft starting'? I do this by keeping a hand on the start lever & pushing slowly, in other words, I just don't whip it on. I don't have the splatter shield & the above method works well for me. I often would do the equivelent of 4-5 cake mixes at one time (I was a baker).
I also, occassionally, will ( and this works with my hand mixer, too) drape a damp (not at all wet!) linen towel over the 'back' of my mixer & over the sides of the bowl. BE SURE NOT TO GET TOWEL NEAR THE BEATERS or AIR INTAKE! this works well for preventing splatters, especially with a hand mixer.

Tonight I am making baked salmon (or SAL-mon, as my MIL says), rice made with roasted garlic chicken stock, and green peas.

Tonights my late night at work so it will be left over tomato sauce and ravioli, with meatballs.

Just wanted to share what I had last night- Mickey ravioli! Just found them in the frozen section! They were great - with some Victoria marinara and romano cheese!

Tonight, I have a bag of shrimp in the refrigerator and I think I will make a light scampi - with spaghetti squash.
