liamandcaili, Thanks for the tips on brining chicken. Of course, I went off & looked it up myself, but tried to do a quickie version of a wet brine. So I've probably ruined a perfectly good chicken! I soaked it for about an hour, BUT I forgot to wash it off before putting it on the can!!:scared1: I didn't realize it until I saw your post & the chicken was already on the grill. I'm getting ready to go baste it with a sweet baste of lemonade,limocello & rosemary sauce. We'll see if I can counteract the salt!
 
Sheryl- it's funny that you say that they are all jerks....my sister works at Children's in Hartford and she told Marisa to avoid their allergy department....she said that they were jerks.

Risa is going to talk to her own pediatrician before she starts this thing. It is a drastic change, and he may not want to go that route. The allergist basically trashed the GI Dr and the Pedi, but I honestly think that they have had Kady's best interest in mind. They were balancing her weight issue and her reflux with everything else. He may allow it, but Marisa won't start anything without his guidance. I agree with her. I'll keep you all posted :thumbsup2

Nancy, :thumbsup2 That is definitely the way to go. Specialists tend to only look at that specific issue & disregard "the whole patient". And if she really is allergic to all of those foods, she will need her pedi. help to work it all out!

Ya'll might like this recipe that is in the current issue of New Orleans Magazine:

Drunken Chicken
(aka beer-can chicken)

1 chicken, whole
Creole seasoning
3 ounces beer
1 teaspoon liquid crab boil
1 teaspoon liquid smoke

Clean chicken and pat dry. Sprinkle inside and out with Creole seasoning.
Light a charcoal grill and bring temperature to hot.

Meanwhile, pour a can of beer into a measuring cup. Measure 3 ounces and pour it back into the can. Add crab boil and liquid smoke.

When fire is ready, place chicken on top of beer can so that the chicken is sitting up with legs just touching the grill with the can inside the cavity of the chicken. Cover grill and cook for one hour and 20 minutes. Do not open grill during cooking. The result should be a very moist chicken. Several chickens can be cooked like this at one time – just line them in a row over the fire.

Note: A handful of wet hickory chips can be placed over the coals after they’re hot to import a more smoky taste.

I never knew you were supposed to rinse the chicken after you brined it. I don't think my brine is that salty though because I've never had a problem with it being too salty tasting. I usually let it soak for 6 to 8 hours in a wet brine. Let us know how it turns out.
 
Sorry, I couldn't resist posting another one. This one is for my NOLA pals! I had these last week on my trip home. The recipe is also from the current issue of NOLA Mag:

Drago's Chargrilled Oysters
4 dozen oysters
2 sticks butter
2 cloves garlic, crushed
Juice of 1 lemon
1 tablespoon Worcestershire sauce
1/2 teaspoon Tabasco®
Black pepper to taste
Parmesan cheese, grated

Shuck oysters, cutting each loose from its shell. Place oyster in one shell and discard the other. Choose the deepest shell if it sits straight, or the one that sits the straightest. Leave some of the oyster water in the shell that you’re using.

In a saucepan, melt butter and sauté garlic briefly. Add lemon juice, Worcestershire sauce, Tabasco® and pepper and stir together.

Light a charcoal fire to its hottest temperature – a gas grill can also be used. Place a dozen oysters in their shells on the grill and immediately spoon 1 tablespoon of sauce mixture over each oyster. Sprinkle with Parmesan cheese. Close the grill and cook until oysters curl. Serve immediately with cocktail forks. Repeat. If grill is large, several dozen can be done at one time.

Note: Chargrilled oysters are great to pass as hors d’oeuvres as soon as they come off the grill.

Those scratch tests aren't always right. The most accurate way to test for food allergies is to take a blood sample and check for -- I forget what they are called, but it is sort of like an antibody, but they react to normal things that aren't harmful -- I think it is called a RADZ or RATZ test.

When I was a teenager, I had a scratch test and they said I was really allergic to chocolate. Since I never had any kind of reaction to chocolate, I kept eating Reeses for breakfast and I survived college on M&Ms and hot fudge sundaes. I'm still here...and still eating chocolate (although not quite as often) ;)

Allergists aren't always right. Although, I have to say, the one Liam saw was very nice, so they aren't all jerks either.
After years of getting allergy shots my allergeries have changed periodically you need to be retested. That blood test is RAST, make sure your insurance company doesn't have a problem with it before you do it. The test is a couple hundred dollars.

The first time I brined my chicken I didn't rinse either and it was fine. Now I remember just in case. I use 1/4c salt 1/4c sugar and 8c water and put in a good zip lock bag in a bowl in case it leaks. Let sit in refrig for at least 3 hours or overnight rinse and cook however. If I bake it I put melted butter with minced garlic over chicken sprinkle withoregeno and little parm cheese and bake for 1 hour. 325 degree
 
Nancy, So sorry the Dr is a Jerk! I don't know why but every allergist I've seen also had zero people skillls. That on top of that nasty scratch test sure makes for a horrible test for Kady. :hug: for her!

I really hope they were able to give y'all some advice for her diet! To take all of that out of her diet isn't going to be easy. Milk's substitute is usually soy, so what are you going to use to replace the milk? Plus take out the eggs & wheat! I really feel for y'all right now. Lots of hugs :grouphug: & wishes:wizard: for Kady, Kady's Mom & You!

I have a neighbor who's kids are all allergic to dairy and soy. They have to use rice milk.

I know that there are other things in commercial fry sauce, but I'm not sure what they are. I just know that I always ask for it when I get fries!!!

When we hosted the Olympics, the Today show did a big segment on Fry sauce and Green Jell-O as those are two foods that Utah seems to be famous for. It made me laugh!

I've been meaning to mention to you that I used to go to Salt Lake City every year for our computer training conference at work and I thought the food was incredible. The mountains were just amazing, we're not used to that kind of scenery here. I may be coming back this year. We always rented a car and went to Park City, OMG what fun and the scenery just fabulous. How far are you from Salt Lake?
 
We never did find out. I asked how long before we could reintroduce one of the ingredients and he said "You have not even started the diet and you want to start adding." :scared1::scared1::scared1: No, I just have never experienced any kind of elimination diet this strict and was looking for help????????

Marisa is going to have her Dr handle this because it was clear that he thought that we were looking for an easy way out, and this was not the case.

What a sorry doctor! I have a hard time biting my tongue, especially when it comes to my children. I think I would have told him that diet was easy for him to recommend because he didn't have to live with it or cook for it. I'd love to see him go without all those items and see how long it took him to ask when he could add some back. I think it was really insensitive of him, especially when there is a child involved. I agree with Risa, I would ask her pedi before I did anything.
 
Ok Sheryl, this is the No-Bake Tamale Pie recipe. We all really enjoyed it.

Good Housekeeping

No-Bake Tamale Pie - 4 servings (30 minutes)
4 tsp vegetable oil
1 small onion, chopped
2 garlic cloves, crushed
1 lb. lean (90%) ground beef
2 tsp chili powder
1 tsp ground cumin
1/2 tsp sale
1 log (16 oz) precooked polenta, cut crosswise into 8 slices
1 jar (16 oz) medium-hot salsa
1 cup frozen corn kernels
1/2 cup loosely packed fresh cilantro leaves, chopped

In nonstick 12-inch skillet, heat 2 teaspoons oil over medium-high heat. Add onion and cook 3 minutes or until golden. Stir in garlic; cook 30 seconds. Stir in ground beef and cook until browned. Add chili powder, cumin, and salt; cook 1 minute.

In nonstick 10-inch skillet, heat remaining 2 teaspoons oil over medium-high heat. Add polenta and cook 10 minutes or until golden on both sides and heated through.

While polenta cooks, add salsa and frozen corn to meat mixture; cook 3 to 5 minutes to blend flavors. Stir in cilantro.

Spoon meat mixture into deep-dish pie plate or shallow 1 1/2 quart casserole. Arrange polenta on top.

(Before I put the polenta on top, I put some mexican blend shredded cheese on top of the meat mixture).

I live in Alpine, which is about 30 miles south of downtown Salt Lake City. I'm up in the city at least once a week! Park City is so much fun!!! How neat that you've been in my neck of the woods. The mountains are really something, aren't they? We are a camping family, so we spend a lot of time each summer in the mountains, cooking in our Dutch ovens. DH has 12 of them, and loves to experiment. We've cooked everything in them from bread to lasagna to pizza!
