The All-New What's For Dinner Thread!!(recipe index in OP)

Dinner tonight is a Polynesian pork roast with DH's famous sticky rice. Not sure about a veggie, I think I've got some green beans, so that will probably do. Dessert is a peach cake with sour peach frosting. Sounds good and light. We'll see. I haven't made it before, so it could be interesting!

Sorry my London trip report is so long in coming. I left my notebook with all my details at my dad's house, and am waiting for him to send it up to me. I'll try to post some pictures to whet your appetites.
 
I need help...I bought Tofu to prepare in stir fries...do you normally marinate it prior to cooking?

What firmness of tofu did you buy. It comes in silken, soft, firm, and extra firm. It should say right on the box. Let me know and I'll help you out. Sometimes, if you want a really firm tofu, you can freeze it and then thaw it. When you squeeze it, so much liquid comes out it is unbeliveable. Then you have a dense product for stir frying.

Yes, I made two kinds of chicken. I bought flounder for dinner and my Dad was complaining...because on the most-mysterious "triology diet," he had already eaten flounder this week. So, I cooked up the chicken I bought for us to eat during the week...whatever ;)

Made adrs tonight for Artist Point, California Grill, Jiko, 50's Prime Time O'Hana (breakfast), and Bluezoo. :)
 
It was really one of our best trips to the World. We were relaxed and did not rush to do everything.

We really loved having a car too. It is really easy to get around the world and no wait for the buses. I guess it came in handy since we had to take A to the dr. The only park this is not good for is MK since you have to go to the TTC first. On our MK day, we at breakfast at Kona and then hopped on the Monorail and took the boat back to the Poly. I asked a CM at check in if this was OK (to keep the car at the Poly) and he said it was fine since we had the parking pass. Some people on the DIS were telling me that this was not allowed, but I asked and it was. :)

You do WDW like we do now. I always have a car, refuse to get there at rope drop, and just relax. Hit the things I want to see and skip the rest. I also LOVE dining offsite some - better food and cheaper prices! A lot of Disney dining has gone way downhill lately and is just not worth my money anymore :laughing:

And you're right about the Poly parking. The Dispolice have decided it's a no-go but the CMs almost always are happy for you to do that.

Glad you had a good trip. My sister developed Bell's Palsy a couple years ago and while it felt and looked odd, it didn't hurt or cause her any issues. Hopefully his will go away soon!


I am making Szechuan Pork straight from the June Cooking Light magazine. I'll post the recipe if it's tasty.

It has been a busy weekend, and I am exhausted, so I apologize if I am forgetting something.

Caili did an AWESOME job at her competition yesterday. My parents were so impressed at how much she has improved, and I was incredibly proud of her. She was proud of herself too. She ended up getting third place (out of four), but I was very happy with that because she skated so well. Today, her team beat the book and took first.

And, as promised, here is a picture of the giant sundae Liam, Caili and I shared. It is chocolate, coffee, and coconut almond chip ice cream with hot fudge, strawberry and butterscotch sauces. We didn't finish it.

OK, so this leads to a story about my Mom. I think you guys know that they live next door. This makes it convenient if I run out of something in the kitchen, because I can always run over and borrow from them. Well yesterday I did not have enough mayonaisse to make the slaw so I ran next door. I was telling my Mom that I was going to make regular slaw, not the spicy one I usually do, and she mentioned that she uses Miracle Whip to make her slaw. She convinced me to give it a try and handed me the bottle. I was about to scoop some out when I noticed the expiration date: November 7, 2007!!! :eek: She insisted it was "still good," but needless to say I borrowed the regular mayo!

:lmao: :lmao: Are we sharing a mother somehow?!? My mother has spices in her pantry that are so old, they are still in the tin boxes. And she still has walnuts in her freezer from before I was married to my first husband (our wedding was in 95).

I also want to tell you thank you from the bottom of my heart for the post card for Hailey. It came in Friday's mail and she has carried it around with her all weekend. It is a little creased and love worn, but she has held it and tapped on the pics of Minnie and Mickey and when I would tease her and ask if I could look at it, she would hold it far away from me so I couldn't take it from her. She has enjoyed it so much. And since I kept three of my nieces this weekend, several of the girls commented on it. The youngest two were so impressed that Hailey got mail from Mickey and Minnie and were wide eyed when she let them read her card.

Thank you again Lauren. It was really really sweet of you to do that, especially since your trip was so busy (with both good and no so good activities).


Does anyone know how people dress at Kona? We have dinner on Tuesday. Do you think shorts are ok?

Tonight's dinner was Kathy's red beans and rice. It was delicious and Amanda asked if she could eat the leftovers tomorrow. So that really is a thumbs up from her.

I haven't checked in this weekend, but what a weekend I've had. Yesterday I took Hailey, Amanda, and my three nieces (yes a total of 5 girls ages 10, 9, 8, 7 and 5) to see Kung Fu Panda. We did drive through on the way there because I didn't think I had the energy to corral all 5 kids into and out of a restaurant. I need to clean my van anyway, so I figured they wouldn't hurt it too much. One of my nieces spent the night with Amanda last night and her Mom (Kenny's sister) took her home after church.

Today my sister was hosting a baby shower for my brother's wife so I kept her girls for her. The girls are really good, but I'm completely wiped out. It is nice now that all the extra children have gone home and all of ours are now in bed. I'm headed that way shortly myself.

Hi All! I am just checking in and only had time to skim the posts. I'll check back in the morning. I worked on the yard all day trying to reclaim my jungle. My packrat mentality extends to my plants so you cannot imagine what I had out there and what I finally had to get rid of. Broke my heart!!!!!!!!!!!!

Anyway I was not cooking so we got Chinese. It was excellent!

Here is the Szechuan Pork recipe. It was very good and quick!


6 ounces soba (buckwheat) noodles, uncooked
2 teaspoons dark sesame oil
1 (1-pound) pork tenderloin, trimmed and cut into 2-inch strips
1 tablespoon chili garlic sauce (such as Lee Kum Kee)
1 teaspoon bottled ground fresh ginger (such as Spice World)
3/4 cup red bell pepper strips (about 1 small pepper)
1/4 cup fat-free, less-sodium chicken broth
1 1/2 tablespoons low-sodium soy sauce
1 tablespoon peanut butter
3/4 cup (2-inch) diagonally cut green onions (about 4 green onions)

1. Cook noodles according to package directions. Drain and rinse with cold water; drain.
2. Heat oil in a large nonstick skillet over medium-high heat. Add pork, chili garlic sauce, and ginger to pan; stir-fry for2 minutes. Add bell pepper to pan; stir-fry 2 minutes. Add broth, soy sauce, and peanut butter to pan. Reduce heat to low; cook for 1 minute or until sauce is slightly thick. Stir in onions. Serve over noodles.

Yield: 4 servings (serving size: 1 cup pork mixture and 1/2 cup noodles)

We don't follow racing at all, I know nothing about Nascar (I thought Danica Patrick drove nascar, LOL!), but you're right - driving one is fun regardless.

:lmao::lmao:My DH is a Nascar fan and I watch the races with him. The poor guy listens to how I pick my driver, goes over who's who and who is driving what so I know who I am rooting for, and will tell me which driver I like when I forget, and always with a straight face. My oldest came to watch he Daytona 500 with us and my BIL. Donny does not watch racing and still could not understand how Buddy deals with 500 laps and me. I told him he should hang out her when football season is on :confused3. 28 years and Buddy is still trying to explain "downs" :rotfl2:


Hey all quick evening check in...I am waiting for Ross to get out of the shower and say goodnight to him. I hope he can sleep tonight, he is so excited about math and science camp.
Karate went really well today considering he couldn't fight and his left arm was tight from the stitches in his chest.
He placed 4th in kata and tied for 4th in weapons. He was sore when we left that is for sure!

I'm fine. I have been trying to catch up on a lot of chores that I have fallen behind in and still get Kady to her summer camp and back, then help Buddy on the farm. One day I had to leave the house 4 times! I am not really good at stopping and starting so I was edgy trying to get things done but I hate to miss a day here.

We also got word from our friends that they received extensive reference sheets in the mail today to complete about him from the other city - which is good news. It means they are still considering him.

Yes, he's still coaching ans playing for the Knights summer league(they played 6 games already this week since Thursday), it's been keeping him real busy. His "friend" is doing well, she's such a sweetie!

My goodness, she is precious! I am glad that the team beat the book. I am still having a hard time with the book thing, cannot ever get how a book can beat kids :confused3 It is amazing how much happens in the course of one year, isn't it?

I have issues tossing things and my refrigerator is no exception so when Jeff decided to clean out condiments to make room he was freaked out by some jars. They were cold, had always been cold and so I thought that they were fine. Not him. Oh no....no out of date duck sauce for him or Marisa or Erica. Now they are worse than the fridge police....checking checking checking Dinner tonight is grilled swordfish for Buddy and me, grilled turkey cutlets for the girls. I'll have baked potatoes, a veggie of some kind and maybe a salad. I was thinking of looking for a cucumber salsa for the fish, I thought I saw one a while ago that looked good.

Janice- I wanted to make sure I wished you a great trip! I cannot believe it went by so fast. You can wear shorts to in the Kona Cafe. It is not fancy at all, a lot of folks in and out from the parks so don't worry.

It has vinegar, so it really never expires:scared1: She thinks the expiration date is just an INFORMATION SIGN!! So my PSA for everyone is to check the dates on food in Nans fridge or cabinets before eating. :rotfl2:

Honestly Lauren, I don't think she would have loved a Pooh card any more than the one you sent. She really did/does love it.

I could see a block of cheese in the crisper drawer and I asked her when the Winn Dixie closed. She said "I don't know exactly, but it was before Hailey was born. Why do you ask?" I said "Well you still have a block of Winn Dixie brand cheese in that drawer". Her reply - and I promise this is the absolute truth - "Well does it have any mold on it? If not, it's probably still good." :scared:

For the tofu, extra firm, I would marinate it for about 20 minutes. It soaks up flavorings like a sponge!

Tonight I am making the flounder that was rejected yesterday, some broccoli, and maybe some carrots.
