The All-New What's For Dinner Thread!!(recipe index in OP)

OK here is the deal... Nan doesnt throw anything away. She gave us salad dressing that expired 18 months prior. She said... It has vinegar, so it really never expires:scared1: She thinks the expiration date is just an INFORMATION SIGN!! So my PSA for everyone is to check the dates on food in Nans fridge or cabinets before eating. :rotfl2:

And yet you are alive and lived to tell the tale. :rotfl: My mom always had expired sour cream. Her claim was "How do you think it's made"?

That reminds me I should tour my frig before we leave. I don't want any science experiments to grow while we are away.

Tonight we are having grilled chicken breast sandwiches and leftover melon

Just stopped in to see what's going on.

Lindsay- everytime I see the fire dept thingie I giggle. I had to tell DH the story when we rode BTM. It just makes me grin everytime I see it now.

We're flying today but we stop in Indianapolis where we used to live. We're going to St Elmo's Steakhouse for drinks and shrimp cocktail smothered in horseradish(well, it's kinda pink, so I guess technically it's cocktail sauce). It's slap your mamma hot and I crave it I miss it so much. That, and a Bombay Sapphire and tonic are what's for dinner.

ETA-We're staying in a train car suite at the Crowne Plaza tonight. It's restored Pullman cars turned into rooms. I'll see if I can get some pics, they're really neat.

First of all, thanks for all the Caili compliments. As you could probably tell, she was very pleased with herself. As for the team, I learned after the competition when they lost to the book that they didn't complete one of the major required elements (they also had a couple falls), so that is why they didn't have enough points to get first. They have won every time since...one time they even competed against another team...imagine that! Anyway, Caili is now done with team. She didn't enjoy it much this year, and she is too small to move up to the next team, which would be more challenging.

Now they are worse than the fridge police....checking checking checking

I am trying to come up with something new to bring for dessert.

I usually make a berry tart for 4th of July that is red, white and blue and well-received by all. Plus, it takes about ten minutes to assemble.

Here's the recipe since it is so short:

Berry Tart

1 purchased graham cracker crust shell (I used to make my own, but this is so much easier)
1 8 oz container mascarpone cheese
1/3 c heavy cream
1/4 c sugar
1/4 tsp almond extract (optional)
1 tsp vanilla extract
2 c fresh mixed berries (strawberries, raspberries, blueberries and blackberries in any combination), washed and drained...for strawberries, cut into pieces.
2 tbsp orange marmalade

In bowl, whip together mascarpone, cream, sugar, and extracts (if using) until it looks like whipped cream. Spoon evenly into shell.

In small sauce pan, heat the marmalade until it is more liquid. Pour over berries. Spoon berries on top of tart. You can serve immediately, or refrigerate a few hours before serving. I usually make this the morning I need it.


I could see a block of cheese in the crisper drawer and I asked her when the Winn Dixie closed. She said "I don't know exactly, but it was before Hailey was born. Why do you ask?" I said "Well you still have a block of Winn Dixie brand cheese in that drawer". Her reply - and I promise this is the absolute truth - "Well does it have any mold on it? If not, it's probably still good." :scared:

Beck gave me some of the rejected flounder, so that is what I am making as well. Of course, I logged into my email this morning to discover that Liam has a baseball practice again tonight. Ugh. I was really looking forward to a night off.
 
I haven't checked in this weekend, but what a weekend I've had. Yesterday I took Hailey, Amanda, and my three nieces (yes a total of 5 girls ages 10, 9, 8, 7 and 5) to see Kung Fu Panda. We did drive through on the way there because I didn't think I had the energy to corral all 5 kids into and out of a restaurant. I need to clean my van anyway, so I figured they wouldn't hurt it too much. One of my nieces spent the night with Amanda last night and her Mom (Kenny's sister) took her home after church.

Marisa has a recipe for spme jello type squares that look pretty good and they are only one point apiece. this is one of my favorites for teh holiday, it sounds weird but it is very good and from Recipezaar


Blueberry Jello Salad Recipe #95206

A family favorite. My sister-in-law almost always brings it to Thanksgiving dinner. Try it with cherry jello and pie filling too!

SERVES 10 -12
  • 1 (6 ounce) box raspberry Jell-O gelatin
  • 1 1/4 cups hot water
  • 1 (15-20 ounce) can undrained crushed pineapple
  • 1 (16-21 ounce) can blueberry pie filling
  • 8 ounces cream cheese
  • 1 cup sugar
  • 8 ounces sour cream
  1. Dissolve Jell-O in water.
  2. Add pineapple and pie-filling, reserving 1/4 cup of pie-filling for garnish.
  3. Place Jell-O mixture in a large decorative glass bowl (one that holds about 6-8 cups) and chill until it sets up.
  4. Cream together cream cheese, sugar and sour cream.
  5. Spread on top of Jell-O and top with reserved 1/4 cup pie-filling in center of cream mixture for garnish.
  6. Refrigerate.
You can use grape jello as well.

This is a new recipe my SIL made at the party yesterday. It was really good.

Asian Pasta Salad
PREP: 10 Minutes COOK: 8 Minutes

Ingredients
8 oz Dried linguine, uncooked
3 cups Broccoli flowerets
1 cup Pea Pods
4 Green onions, sliced
2 Large carrots, scraped and sliced diagonally

¼ cup Soy Sauce
2 tbsp Sesame seeds, toasted
2 tbsp Brown sugar
2 tbsp Dark sesame oil
1 tbsp Lemon Juice
¼ tsp Hot sauce
1 Large garlic clove



Directions
Cook: pasta according to package directions; drain. Rinse with cold water; drain again. Place pasta in large bowl. Add broccoli and next 3 ingredients; toss well.

Combine: soy sauce and remaining 6 ingredients in a small jar; cover tightly, and shake vigorously. Pour over pasta mixture; toss gently.

Tonight is still a wee bit up in the air. I had a mom's night out planned but didn't have enough signed up so I canceled it. Then the mom's begged to still do something since they had the night off already - so we planned to see Sex and the City at the local movie tavern. But the movie time is a little too early for most of them so that may not happen either. So I am waiting to hear if anyone is meeting me or not.
 
Hi Guys, Just wanted to check in to update you on how we did. I guess the pill took the edge off a bit and the navacaine (sp) worked a bit. The procedure was still a bit uncomfortable but I didn't cry like a baby this time. I do have some bruising and swelling but I guess that is expected when you have 10 needles jabbed into your thyroid...:goodvibes Let's just hope the labs come back OK. I just heard of someone else having thyroid cancer and a thyroidectomy. Its pretty common I guess.

Andrew is looking better and the doctor was very please with his progress. He needs to keep doing what he is doing a rest a bit. I am going to keep him out of summer rec for a few days.

That is about it. Since I am not totally out of it, I am going to make a chicken and tofu stir fry.

My Aunt had a thyroidectomy and I have also had my thyroid biopsy done several years ago so you must be exhausted, thyroid is a tough biopsy. I will keep you in my prayers.

Don't worry I don't plan on any trips to the ER.

I plan on having a tall sangria tonight so I can sleep. Last night I kept thinking I forgot something :rolleyes1 so needless I didn't get much sleep.

Redneck sangria yuh! Too bad I don't have any sprite or red wine in the house. Just some leftover sangria oh what to do what to do ;)

How bad is it one of the first things I want to do is to go to France and get a Grand Marnier slushie? I made that my screen saver at work.
