I find regional foods interesting as well. I have not heard the term 'field peas.' Is this a dried pea? Ham hocks, interesting. Can't say I know anyone who cooks with those either.I understand it gives a good flavor to food. Since I don't eat pigs, I buy turkey ham. I know, I know, not nearly as tastey. The past month, I have not been able to find it at Walmart or my local grocery store. It was always easy to purchase in the past. If I don't find it soon, I'm going to ask in the meat department.
I LOVE mac and cheese. Do you make a white sauce of flour, butter and milk then add grated cheese to melt?
Field peas are a dried pea. And this is the one and only time of year I use ham hocks.

I don't use a white sause in my mac in cheese. I just use a mixture of cheeses and a little butter and then add milk until its just starting to peak through the top. Then I bake it in a very hot oven until it is starting to brown on top. My hubby loves that bubbly crust. Sometimes I put bread crumbs on the top. Do you use the white sauce? That sounds good.
