1 Restaurant Per Area Recommendations

It sounds like MK is a no go, though I may try BOG just to say I have. I’ll need to look at the menu.
MK for me is for all of the snacks! Some of my favorites are the cream cheese warm stuffed pretzel at The Lunching Pad, the waffles at Sleepy Hollow, and the loaded tots at Friar’s Nook. Of course the spring roll cart in Adventureland deserves a mention, too, as does the pineapple upside down cake with dole whip at Aloha Isle. Oh and the crème brûlée croissant at Gaston’s Tavern! Basically every corner of the park has a delicious snack or two…and TS at MK is just okay….so I just enjoy the snacks!

Responding before reading everyone else's answers:

Epcot: (I have not been to Takumi Tei)... Shiki Sai, especially after dark with a view of the Epcot Ball framed by the gate ... is definitely memorable. We have also had very good experiences recently at Chefs de France. It's not the most unusual French food, but everything we've had there is SO good. The bread is among the best at all of WDW. And their version of macaroni and cheese ... !! over 2 visits, one with a very large group, we have tried many of the main courses and they are all very good.
(Epcot-proximate, though, it is hands down Flying Fish. I've never had a bad or even so-so meal there, even with small children/less adventurous eaters)

MK: I recall fondly Be Our Guest's off the menu spice encrusted lamb chops. My kids (at the time, 3 and 7?) ordered off the kids' menu and then ate all my lamb chops. Cinderella's Royal Table is very pricey but the setting is amazing and they do a great job with what they have. On our last visit, our server pointed out that it's been in operation (and not closed) since 1971 and because of where it is located, they could not make the kitchen any larger than it started, which leaves a tiny amount of space with (I think) no ability to bring in new technology for appliances. For smaller budgets, I do still like Skipper Canteen. More unique and international flavors and vegetarian and vegan theming. (And I always get a kick our of the book titles in the library...)

HS: Hollywood Brown Derby: the Cobb Salad will ruin you for Cobb salads anywhere else.

AK: Tiffins: international flavors and great presentation and decor. I have always loved this restaurant.

Springs: We haven't been to many restaurants at DS so I am not qualified to answer this one.

Resorts: WHO CAN NAME JUST ONE???
MK Resorts: California Grill or Victoria & Alberts (but it's not really a fair comparison because V&A is one of my favoriate restaurants anywhere, not just at WDW). Narcoossee's, Citrico's and Artist Point are quite good too.

EP/HS resorts: Topolino's, Flying Fish. (together with California Grill, these are my 3 favorite restaurants-at-WDW-not-named V&A.)

AK resorts: I like all three but really, Jiko is the big winner here. it may be close to #4

Now off to read and build a list of reservations to get for next time...
 
Epcot - San Angel. Gets trashed but never had a bad meal and I enjoy Mexican food as opposed to Texmex. I found that if you talk to the waiters about your preference they have some leeway. Love spicy and they brought me a special condiment

MK - Never had a bad meal at Skippers. BOG is great if you haven’t been there but pricey. Had a very good trout dish last time.

HS - If you’re going to eat in the park definitely Brown Derby. Otherwise as others have said head over to the Boardwalk

AK - I second a PP in recommending Tusker House for breakfast. Otherwise Tiffin’s is my go to.

Resorts- Narcoossee’s or Flying Fish. Cape May for breakfast. Haven’t tried Steakhouse 71 yet but intend to.

DS - I don’t visit often as it’s too time consuming so don’t have a real opinion here. Went to Homecoming and thought it was just ok beyond all of the hype

For those who recommended AKL restaurants, what sort of foods are the “stars” there and what kind of flavors are there? I can’t do spicy food, unfortunately so I fear there may be some that.
 
For me:

Epcot - Space 220
The whole experience and service was great. We did the Lounge to be able to order a la carte, where we sampled a bunch of tasty things and tried a cocktail each (espresso martini was a highlight, and a delicious squash soup, glazed Brussels sprouts, etc)

MK - only TS I’ve done here (maybe my parents took me to Crystal Palace as a kid?) is Skipper Canteen. It was okay! But at MK we’re more snackers than table service people and we aren’t in a rush to go back.
All the dishes at Skipper Canteen have interesting names. We found “tastes like chicken because it is” to be dry and forgettable. The sort of teriyaki noodle dish they had wasn’t bad though. The Portuguese cheese bread appetizer was tasty too.

AK - Yak&Yeti, every single time. It’s not about the entrees for us either. The wonton nachos are delicious and massive for sharing, and we try different things to accompany them.

HS - Used to like SciFi Dine-In but they’ve changed the menu gradually and it no longer has the things we liked. Oga’s was fun but the food options were very limited too (pretzel loaf with spicy cheese sauce was surprisingly tasty).
Other than that the places people rave about like Baseline Tap House, 50s Prime Time, and Brown Derby I’ve never been to. We’re more snackers there too.

Resorts - Boma & Sanaa. These are a staple of any trip.

Springs - We’ve tried a few, still need to try more. From what we’ve had, I’d go back to Boathouse first. They have a good selection even for non seafood too.

Sanaa the “bread service” is the star, and you can have the spicier chutneys substituted for more of the sweeter ones like mango, tamarind, or raita. Also for their mains, not much of it is hot. It’s still Disney, and it’s very tame.

Boma is a buffet so offerings vary, and again there’s something for everyone. Even the signature things always there are like “Boma mustard” accompaniment for roast meat, or zebra dome desert. It’s not spicy stuff, but a lot of it thankfully is flavourful!

Boathouse seems to rank high with people so I’m inclined to try it this time. Any recommended dishes?

I also cannot do a spicy. It does not agree with me and never has. I always heed spice warnings when looking at menus. That said - I love both Boma and Tusker House. I find the food flavorful and not at all spicy.
