After you board the ship there will be a designated place for you to go to change dining rotations. The place and the time will be listed in the Navigator that you will be given when you go through check-in at the terminal.

You can call ahead to DCL (or have your TA do it) and request that you receive a rotation that features AP twice. There's no guarantee, but it's likely you will get it as long as you make no other dining requests (like specific servers).
