*snipped* Do you go rope drop to close? And then rope drop again? DH was not as crazy about Epcot as AK, so I'm trying to convince him we need more time there as you have. We'll see. :-)
We try to rope drop and use EasyWDW's cheat sheets for ideas of where to go when and what to use FP+ on. First time this time with FP+ so we'll see how it goes! We honestly don't always close the parks. We leave when we're tired and when we've felt that we got our full day in. I'm not a huge fan of Epcot and AK myself, honestly and this year we might park hop a little bit to MK because we love it. My gf loves the World Showcase, so I trudge along for that second day and console myself with snacks the whole time ;)

Sunday-Fly in, dinner/swim at hotel
Monday-Ohana breakfast, MK until we get kicked out due to Christmas party, then to Epcot for F/W
Tuesday-Animal Kingdom all day, dinner at Sanaa, MK till close
Wednesday-DHS all day(Prime-Time for lunch)
Thursday-Epcot all day(France for lunch, Mexico for dinner)
Friday-MK until dinner(BOG hopefully for lunch), Boatwrights for dinner, then off to DD
Saturday-Epcot until mid-afternoon(lunch at Akershus), then head off to close down MK
 
Most days we have later arrivals or early departures, plus leave time for baby's nap.

11/28: (Son's Flight arrives at 10 am)
Arrive at OKW, go to DTD (Have to get our ornaments personalized)

Here's our current plan for our trip in late January with mostly QS dining:

Fri, Jan 23rd: Arrive around 5pm at ASMu, hang out at the hotel

Sat Jan 24th: Rope drop Epcot and stay until around dinner time

Sun Jan 25th: Rope drop MK and stay through closing to see MSEP and fireworks (although evening entertainment may get pushed back to friday, depending on how the kids are doing)

Mon Jan 26th: HS, the park closes at 6pm and no F! so we're hoping for low crowds and an early return to our hotel

Tues Jan 27th: AK (5pm closing) followed by dinner at Boma for the 2 adults and time at Simba's club house for the 2 kids.

Wed Jan 28th: MK rope drop, stay until we get tired or closing, whichever comes first

Thurs Jan 29th: Epcot, doesn't have to be rope drop. Stay until early evening

Fri Jan 30th: MK, doesn't have to be rope drop. Might be the nightime entertainment night instead of sunday. We'll start our drive home right after leaving the park so ending our trip with MSEP and fireworks might be fun.
 
3 adults and 3 kids aged 4 months, 4 and 6.

Saturday - Legoland (may be a waste of a day, but kids are obsessed)

Sunday - Full day at HS trying to get in all shows and fantasmic.

Monday - Late day at Epcot. Arrive for lunch (CS), Future World, dinner at Garden Grille, Illuminations.

Tuesday - Animal Kingdom. Only spend a couple of hours, like a rest day. Lunch at Rainforect Café.

Wednesday - Late day at MK. Arrive for lunch, stay for Wishes at 9.

Thursday - Half day at Epcot - Lunch at Hacienda, World Showcase.

Friday - Half day at MK.
 
I am going in December for 9 days (7 full and then the travel days, I get there at 10:14 am the first day and on the day I go home flight isn't until 7:30 pm so I have a lot of that day so really 9 days to do things)

I also go to Universal for 2 days on my trip.

December 13 -- land and go to Universal Studios
December 14 -- possibly going to Cape Kennedy with the friends I am staying with
December 15 -- Hollywood Studios
December 16 -- MK
December 17 -- Universal Studios
December 18 -- Epcot
December 19 -- MK
December 20 -- no park
December 21 -- possibly AK or pool day
 
11/22 - Arrival around check-in to FW cabins. Non park day to recover from 1000 mile drive. Most likely hit DTD that evening.
11/23 - MK
11/24 - HS
11/25 - EP
11/26 - Non-park day. Hang out at the campgrounds. Hoo Dee Doo dinner.
11/27 (Thanksgiving) - AK. Tusker House Thanksgiving lunch!
11/28 - Non-park day. Probably shopping at the outlets!
11/29 - MK ( AE & 7D FP+). BOG in the evening.

Most days were scheduled based on extra magic hours and the recommendations of avoiding the biggest crowds on or around Thanksgiving. 40 more days!
 
We'll be there from November 21 - November 29th.

11/21 - Arrival from Sanford to OKW around 2:00. Relax afternoon and maybe hit DTD
11/22 - Not recommended but planning on MK so we can do EMH evening and stick around till midnight.
11/23 - Sleep in a bit and head to HS
11/24 - Rope Drop EPCOT afternoon break then catch Illuminations
11/25 - Rope Drop HS afternoon break and then Osbourne Lights
11/26 - Rope Drop MK
11/27 - Rope Drop AK Chef Mickey's for Thanksgiving dinner
11/28 - Rope Drop MK and close it down at 1AM
11/29 - Check out OKW maybe drive to ocean then back to Sanford for early flight next morning
11:30 - Flight at 7AM back home

I use Josh's recommendations for all the parks. All FP+ are in place. Taking another family of 5 who have never been before so some of the plans my change a bit if it's too much. This would be an easy schedule for my crew to stick to. We'll definitely take afternoon breaks to enjoy the resort. Some days we won't even go back to the parks. Can't wait!!!
 
This is the itinerary for our 2/28-3/7 girls trip with DD13 and DD11, we are staying at CBR.

3/2 Off day....swim at resort and riding around the MK monorail line and resort hopping after dinner at Ohana

3/5 Off day/Resort hopping (POFQ for breakfast, AOA for lunch, and AKL for dinner at Boma's)

I based my itinerary by checking out touringplans.com and went with the recommended parks for that day. I also am avoiding morning and evening EMHs at all costs.

A little update to my OP....I just found out that F&G Festival will start on 3/4 so I decided to switch my MK and Epcot days around. So my updated itinerary looks like....

This was how our plans played out last month. 2 adults, 2 girls ages 5 and 16 months.

Sat - arrival at CBR, no park. Dinner & swimming at resort.

Sun - MK day #1: Fantasyland & Tomorrowland. 8:05 ADR @ CRT. (Park closed at 7 for MNSSHP; we decided not to take a break & left ~4pm.)

Mon - EPCOT. 8:10 ADR @ Akershus. FW in the morning, break at hotel after lunch. Back in the evening to finish up FW & have dinner in WS. (We only saw a bit of WS b/c it rained.)

Tues - Animal Kingdom. No break, 5:00pm ADR @ Boma. (It rained off & on all day; we were planning to leave at 4pm for our dinner res anyway, but ended up leaving a bit earlier b/c it started pouring and wasn't letting up.)

Wed - MK day #2: Adventureland, Frontierland, Liberty Square. Rope drop, lunch at Crystal Palace, then break at hotel. Back in the evening for dinner, MSEP & Wishes. The park was supposed to close at 9 but they extended the hours until 10. So after Wishes we went for a Dole Whip & rode Haunted Mansion. :hmghost:

Thurs - DHS. Got a late start but made it in time for the Frozen processional. Lunch @ Mama Melrose. Our TSMM FP was for after lunch, and by the time we got off of that we decided it wasn't worth it to go back to the hotel for a break since we had a 5:30 FP return time for the Frozen sing-along. So we stayed, and the kids still made it through Fantasmic. pixiedust:

Fri - MNSSHP day. 9:30 breakfast at Ohana, then relaxed at resort until party time. Got to MK around 5:00. (We had 5:30-6:30 FP to meet Anna & Elsa.)

Ideally we'd have had our "rest" day in the middle of the week, but because of the party schedule this is what we ended up with. We were all exhausted by the end of the week, but we made it and had a lot of fun! (And I'm glad I didn't book the Tues night party since it ended up raining so much that night!)
 
Our upcoming trip breaks down as follows:

11-8: Arrival Day; MK for a couple of hours and dinner at 1900 Park Fare
11-9: DHS; pre-opening breaking at H&V, dinner at The Wave
11-10: MK; late lunch at Liberty Tree Tavern
11-11: DHS; late lunch at The Brown Derby
11-12: Epcot; dinner at Chef Mickey's
11-13: MVMCP; early dinner at The Plaza
11-14: AK; breakfast at Tusker House, dinner at Grand Floridian Cafe
11-15: Epcot; breakfast at 'Ohana, dinner at Tutto Italia
11-16: MK; dinner at Be Our Guest
11-17: Departure; breakfast at 1900 Park Fare
 
We are going Nov 2015. There's 5 of us, my parents, myself, wife and son age 6. We take mid day breaks (leaving the park around 1pm for a few hour nap). We went for 7 days in 2013 when our son was 4; 2 travel days, 4 park days, 1 off day. We will do approx. 3 character meals. It depends on if we get free dining. Staying at POP if no free dining, upgrading to CBR if we do get free dining (for the midlevel free package). Haven't decided on park hopper or not yet. We like to plan but keep it open enough to be able to move stuff around (weather/ride closures/ADRs etc)

Nov 11 - fly down, epcot
Nov 12 - MK (wife and I are doing Keys to the Kingdom tour while our son spends a half day at resort with grandma and grandpa)
Nov 13 - AK (til 1 if returning, til 3 if not returning), resort/open PM (if not returning to AK)
Nov 14 - Rent car and go to Legoland for the day
Nov 15 - MK & MVMCP
Nov 16 - HS
Nov 17 - Epcot AM, ??? PM (def a park night)
Nov 18 - fly home
 
Our Itinerary: Family of four....DS 10, DD 6

11/8 Flying out of Fresno, CA. We arrive at 4pm and have a rental car for $192 for 13 days, full size, through Dollar. Will make stops at Target before checking in. We have a one night only stay and 11 night stay with free dining @ POP

11/9 Hoping to visit Blizzard B. Will go to HS @ night for lights and Fantasmic..8pm show just added.

11/10 MK. Couldn't get FP for 7DMT or A&E. Dinner @ Artist Point (first time)

11/11 For the first time in forever, we will head to Universal IoA. We have only been to Universal Hollywood. Will be fun to compare to Disney.

11/12 Epcot. Dinner @ Teppan Edo (DW loves it here)

11/13 HS Dinner @ Cape May. (kids are looking forward to this one)

11/14 MK FP for 7DMT. Dinner @ Narcoossee's (only previous trip was a major disappointment. Hopefully better this time.)

11/15 AK (least favorite park) Dinner @ T-Rex (DS requested) Disney Quest after.

11/16 Rest, laundry during the day, MVMCP @ night, got FP for A&E. No dinner res.

11/17 Epcot, Dinner @CRT (always fun in the castle)

11/18 HS, Dinner @ 'Ohana (first time)

11/19 MK day Epcot night Dinner @Coral Reef (first time)

11/20 Leave @ 6pm, MK in the morning.
