Need some advice on park days

I'm having a tough time with two of my days, mostly because of ADR changes. We can't really change much more than what I detailed here because of other ADR's, FP, etc. We are going May 2 - 8.

Problem 1 - DHS:

Sci Fi bfast at 9:45am; H&V lunch at 2:40 - low crowd forecasted (we will have to RD at DHS for JTA) OR

Sci Fi bfast at 8:20; H&V lunch at 2:45 on an EMH (PM) day (not a recommended day).

Whichever day we choose, that will be our park day and we will stay for Fantasmic! Our "other" option is to break the ressie's into two days. Do H&V bfast at 8:25 and stay at DHS the low crowd day then the next day do Sci Fi 8:20 bfast and head over to Epcot (we are not RD'ing at Epcot).

I am still hoping that we can catch a cancellation and move up the 9:45 Sci Fi bfast but feel like that is probably not going to happen.

Problem 2 - MK / AK: Which is the better option here -

A) Day 1: start at AK then after the parade, head over to MK to see MSEP / Wishes. Day 2: RD at MK and stay at the park until we drop (no MSEP that night however the MK crowd forecast is a 3 and it's the highest recommended day during our trip) OR

B) Day 1: RD at MK, afternoon break, MSEP / Wishes (crowd rating 5). Day 2: AK and then just call it a day when we are done (AK has EMH in the AM and we will not be able to RD)

Option 1 for both.

I would not be at AK with EMH if I couldn't be there for them.

Similarly I would not arrive during am EMH at HS and have a breakfast during what is likely to be the optimal time of day to SB anything.

Option 1 for both would be my choice, without even having to give it much thought. And just keep looking for that later ADR. You never know.

Only question I have is this: Do you only have one day for MK or is there another elsewhere in your trip? If it's your only day, you will want to bank your FP for MK if you are leaving AK late in the afternoon if you want to ride anything but this could be challenging if you plan to do MSEP and Wishes as well as waiting in your spot to watch will eat a fair amount of time from your evening

Sorry just edited my post to note that the EMH for DHS are in the PM so the park opens the regular time. Regardless of our ressie's, we HAVE to RD here because of JTA.

Also, our very first day is our first MK day but we have an early ADR and it's a Saturday so it's the worst day to do MK. The day in question here would be MK Day 2 which is why I wanted to pick a lower crowd day. Problem is MSEP - I don't plan on seeing it on our first day so not to overwhelm my kids (8,6,4) on the first day. If we do AK then MK for MSEP, it will mostly be just to see the parade. We would FP the full MK day.

I like this idea. The Sci-Fi Star Wars Bfast is important enough to be worth hopping, especially since the parks are so close and you could even walk (though I'd take a boat I think, I just like those boats :)).
