Need lowfat, easy recipes for dinner

So dh and I are on a diet and learning to run. We have been doing this since May 1. I have lost almost 15 pounds so far - yeah! Anyway, I of course have been cooking lowfat meals, have done fajitas, several types of salad, chicken chili, chicken salsa. Last night I made bbq skinless boneless chicken breast on the grill, fresh grean beans with italian seasoning, lemon and garlic and fresh cantaloupe. Dh accused me of not making "real" dinners. Although I disagree with him on this, I would love to get some low fat recipes for dinner that are tried and true - and EASY! to do. He also says he is sick of chicken. A crockpot meal is a plus, but not necessary.

Please help keep us on the straight and narrow! I'm afraid if I don't interest him, dh will do sneakaways to McD's or something - thanks!

It sounds like you're making "real" dinners. I would ask him to clarify what his interpretation of "real" is. Maybe he wants potatoes/pastas, too? A baked potato or whole wheat pasta dish isn't bad.

Pork is a good chicken alternative, and if he's a beef guy, beef in itself isn't bad -- everything in moderation. You could also make a potato/pasta for him, and a fruit salad side for you.
 
Do you guys like seafood? Shrimp, salmon, etc can all be thrown on the grill and is very lowfat.

I also like a roasted spaghetti squash instead of pasta. I make the sauce with a ton of veggies in the crockpot. Then I roast the squash for an hour...scoop out the spaghetti and cover it with the sauce and grated parmesan. Very hearty and filling.

Turkey Burgers? Grilled portabellas?
 
If you go on to the American Diabetes website, you can find great recipes. It is a VERY healthy diet to follow. Low fat isn't always good. You do need some fat in your diet so keep that in mind.
 

If you eat pork, you might try pork tenderloin, which is relatively low in fat. I either roast a whole tenderloin or cut it into slices, pound them fat, and saute in a bit of olive oil. I usually marinate first - one really easy marinade is a combo of soy or teriyaki sauce, lime juice, and a little bit of honey. You can also put a tenderloin in the crockpot with your favorite sauce and then shred for sandwiches.

ETA... what about ground turkey? Be sure to get the type that's white-meat only - some types include skin and dark meat and are just as fatty as ground beef. Use it for spaghetti, tacos, meatloaf, etc.
 
if you like browsing for recipes, check out cookinglight's website. they also have a great magazine. they usually have a range of dishes from very easy to more complex, and honestly I have yet to make something that wasn't delicious. in fact, most of my favorite recipes are from there.

I agree with a PP with asking your dh what exactly he means by "real" dinners. what is he missing?
 
I make spaghetti with whole wheat spaghetti and use ground turkey instead of ground beef.

Stir fry (brown chicken breast pieces in a pan with water and cooking spray, a bag of frozen stir-fry veggies, and a bottle of teriyaki sauce served over brown rice)

chicken kabobs on the grill. You can marinate veggies like red, yellow and green bell pepper, cherry tomatoes, mushrooms, zucchini, red onions) in teriyaki sauce for a couple of hours, put them on skewers and throw them on the grill for 20 min. You can also use low cuts of beef if you are getting tired of chicken.

As a side dish you can make mashed potatoes by boiling peeled potatoes and adding low sodium/fat free chicken broth, fat free (or low fat) sour cream, and some chopped chives. It doesn't taste low fat, but it is and gets you away from the plain baked potato.

Take 6-8 chicken breasts season and brown them just on outside.

Put these in a crockpot with enough salsa to cover. (I send mine through the food processor because I don't like chunks of anything in the salsa).

Cook on low for 6 hours.


Serve over brown rice and add whatever veg or beans you like with it. It's very yummy and very lowfat.


(I usually make this in 12 servings using the big jug of Pace salsa. We eat one serving that night (3pieces of chicken). I then freeze the chicken and sauce in quart bags. Very quick and easy meal when we don't have a lot of time.
 
Make sure you poke holes in you spaghetti squash, I had an explosion in the oven once. :laughing:

Stir fry - bottle of stir fry sauce, bag of steam fresh veggies, brown rice and some meat. You can do beef & broccoli or chicken and mixed veggies.

You can make some delish lf chili with 93% lean ground beef or turkey and beans.

Yep -- me, too, and I even poked a bunch of holes in it -- squash everywhere -- looked like brains. Microwave was a mess!

Fajitas? with lettuce, tomato, low fat SC, avocado? Avocado is not low fat -but it is the right kind of fat.

Stir Fry?

Round steak is low cal for beef. It needs to be cooked slowly (brown first and then let simmer on low or in the oven with some kind of sauce)

Spaghetti with ground turkey or turkey meatballs and multigrain pasta?


You can also measure portions for meats and starches. I have a digital food scale and find it very helpful. So you could serve huge portions of veggies and salads -and smaller portions of some of the things he is missing.

Salmon, which is yummy and healthy, has about 13 grams of fat in a small piece, and is one of the fattest of the fish.
 
Its not just about Low Fat, its also about the "kind" of fat.

Controlling Your Fat Tooth by Joseph Piscatella

The first part is about the misconception of fat. Then it has great low fat recipes that replace the bad fats with good fats.

The dishes are high in flavor, and the fats are from vegetables. I highly recommend you get it.
