Low Carb Diet

Now you guys have me thinking about getting those K-sticks. It's been slow going lately. I've been doing well as far as eating goes, but I guess my visit with a wonderful cook has caught up to me. I'm going to give it a few more days before getting stricter.

I will say I had THE best black bean soup, and I'm pretty sure it was low carb! It was so good I didn't even care. :love: I even had one slice of super thin roasted garlic bread. I had never tried black beans like that before and it was out of this world good! I'm going to make it soon (although DH says he won't touch it with a ten foot pole -- I think he'll change his mind)

Do I need to worry about calories too? I just put my daily food intake into this cool website (fitday.com) and it broke down how many calories/fats/carbs I've eaten today. I'm at 18 grams of carbs (3% of intake), 121 grams of protein (27%), and 139 grams of fat (70%). My calories for the day is 1807..........Yikes!! This goes against everything I've learned about dieting.
 
If your calorie total for the day came to 3600 I'd be concerned, but 1800 is ok when you're in induction. I think sometimes new dieters on Atkins need that at first. In a few days you'll appreciate leaner meats instead of the fattier variety and ease up on some of the higher fat condiments.

It does fly in the face of most diets, but you'll be a believer when you jump on the scale!

Good Morning everyone. I have been watching my carbs since January but I got SERIOUS two weeks ago. Two days ago I put on one of my yard stick jeans. I couldn't pull them up past my thighs two weeks ago. On Wednesday I got them up and BOTTONED!! :dance3: DH said he couldn't zip them but I think its because his fingers are too weak. ;) Maybe by Monday.

I am going to pick up some of those ketosis sticks after I drop DS off at preschool today. I haven't been eating carbs, but I am interested to check my ketone level.
 
Yet ANOTHER carb question.........

I found some wraps today for sandwiches. The Nutrition Facts say they have 16 grams of carbs each, they are whole wheat and 90 calories. But all over the package it says "6 net carbs/9 grams fiber".

So which is it, 16 carbs or 6 carbs? I hope you say 6 because I ate one with me deli meat for lunch. :rolleyes1

It would be 6 or 7. I think you need to subtract the fiber. During induction however, I would avoid those kinds of carbs. Wait until you are in ketosis and add them slowing. If you want, I can sell you a carb credit so you won't have to feel guilty and worry about it.;)

Well crap. (at home I didn't say "crap"). There goes my induction phase. I think I need to buy a few of those carb credits. No wine, no bread.......I'm started to become quite a grump.

Don't buy them yet. Just crawl back up on that wagon!

That was a minor slip but dont worry just freeze the "wraps" in the freezer for later. I would continue what your doing but for the time being stay away from anything that has any kind of flour in it, at least for 2 weeks (Atkins following). Then gradually begin eating the wraps but keep an eye on the ketosis.

Don't give up, you can do it!

Nah you just had a small slip. It won't kill the induction phase! I slipped a few times *made it look like an accident to DH* but if I can do it anyone can do it. I was a carb junkie! Save the wrap and the first day you can eat some sort of carbs scarf that puppy down! ;)

Absolutely. It requires withdrawal but once we are there, we are in a state of ketosis nirvana! ;)
 
Speaking of nirvana, I make a dessert called Nirvana Bars. The recipe is from Truly Low Carb cookbook by Karen Rysavy of www.trulylowcarb.com

BOTTOM LAYER:
4 tb. unsalted butter
1/2 c unsweetened peanut butter
1 c Splenda
1 c vanilla protein powder
2 c sliced almonds or chopped walnuts (sometimes I use none)
2 - 4 Tb Sugar Free French vanilla syrup

Place melted butter in large bowl. Add peanut butter, Splenda, protein powder and nuts and mix thoroughly. Mixture should be very dry. Drizzle the syrup over this mixture and stir. It should begin sticking together at this point. Depending on shake mix used, you may need to add more syrup to achieve the proper consistency. As soon as you can make it stick together, it is ready. Press it evenly into the bottom of a 13x9 pan. Put the pan in the freezer while you make the next layer.

MIDDLE LAYER:
16 oz softened cream cheese
1/2 c unsweetened peanut butter
2 Tb Sugar Free vanilla syrup
3/4 c vanilla protein powder

Beat cream cheese until smooth. Add remaining ingredients and mix well. Spread evenly over chilled bottom layer.

TOP LAYER:
1 c melted unsalted butter (I use less)
2 Tb unsweetened cocoa powder
1/2 c Splenda
2 Tb Sugar Free vanilla syrup
1 c sliced/chopped nuts (optional)

Mix, then spread evenly using the back of a spoon until entire surface is covered. Freeze pan again until firm enough to cut easily, about an hour.

I like to cut into squares and wrap individually and keep in the freezer. May be eaten frozen or refrigerated.

48 squares; 172 cal, 16 gm fat (6 g sat), 3 g carbs, 5 g protein (including nuts and all the sweetener).
 
I have been doing well but had a "cheat" the other night. Hey, a girl needs a strawberry sundae once in a while! ;) I haven't weighed myself this week because I am bloated but intend to hop on the scale soon. I am into week three and am planning on adding some veggies and fruits back into my diet soon.
