My family and I did a fireworks cruise for Wishes. (yikes, about 14 years ago, now that I think about it!) I thought it was worth every penny. We left from the Poly and the captain took us on a bit of tour first (this may vary from captain to captain) we saw the shoe tree and he talked about River Country - he had been a lifeguard there. We were situated in a good spot - near one of the bigger cruises so we could hear the music (at that point the small boats did not have music, this might have changed) I loved seeing the fireworks from that perspective. The night was pretty perfect and the whole experience was relaxing. They provided soda, a selection of snacks, and blankets. I'm not sure how much has changed since then, and where the boats are allowed to go, etc. and I don't think you'll be able to see the projections on the castle but unless you're right in front of it they are hard to see anyway. I have since seen the fireworks via a dessert party (before the garden was there so the view was just okay, tbh), and also from the savor, sip and sparkle at the Contemporary, but the cruise is still one of my best memories of fireworks with the fam. (also nice not to be in a crowd) Hope it's a great experience for you!
