Do you have to pay when you book it or is it like Disney dining where you hold reservation with credit card?

Excursions are charged to your onboard account. Generally the day of the excursion. But occasionally, at the beginning of the cruise. No "credit card hold" is involved.

You make the reservation for your excursion and it's just added to your cruise reservation. If you don't cancel by 3 days prior to the start of your cruise, you will be charged for the excursion.
