Egg Salad Sandwiches

mmm deviled eggs!!! This pregnant princess is calling her DH to bring home some egg salad! hahaha!

My Mom always uses Mayo, salt, pepper, and a little vinegar. I could never taste the vinegar - at all - I can't stand vinegar. I'm not sure why she uses it. Anyway, her egg salad is very good.

Everytime I've tried to make it, it always taste real mayonaissie (is that a word?), I hate mayo.

Remember, if you send it to school with him, be sure to put a cold pack in his lunch box - I wouldn't want it to spoil.:scared: :)

I love egg salad. I use mayo, a tiny bit a mustard, onion powder, celery seed (if you don't like the texture of celery), salt and pepper.

I think pickles or relish in tuna or egg salad is repugnant. *gag*

I have to respectfully disagree with the poster who suggested using Miracle Whip to make egg salad. In my humble opinion, egg salad requires real mayonaise to get the best flavor.

All this talk of egg salad is making me hungry.

BTW - My recipe is:
Hard boiled eggs
Enough mayo to we the crushed eggs
A tablespoon of sweet pickle relish
A pinch of dried mustard (if I can find it in the pantry)

I use eggs, mustard, celery salt, onion salt, garlic salt and just a bit of juice from bread and butter pickles.

edited to say, mayo also.

I've been making this a lot lately - dd (4) LOVEs it - we toast our bread & boil 6 eggs - we eat 2 & chop 4 (that;s really too many buy its good for leftovers)

then I add about 1 Tbs of mayo & dill relish (about 1 Tbs as well) & salt/pepper to taste - that's it.

super simple & YUMMY!

I have never been a big egg salad fan, but yum! This thread is making me want some egg salad!

Okay, I guess my recipe is unique so I'll share...

When I was in college I did a round of student teaching at a pre-school. They make a healthy snack every day and one of the kids' favorites was egg salad. They did the usual chopped eggs and mayo but they also added chunks of tomato and cucumber. It is delicious that way and the only was I have made it ever since!

Yum...now I'm hungry.

Oh, that's sounds yummy!

Oooh, I love pickles, never thought of adding pickle juice to my egg salad. I'll have to try that!

I just use my deviled egg recipe and smoosh everything together. On really fresh white bread.

OH GREAT!! Now I want egg salad sammies. I guess I know what's for dinner.

I've never had egg salad before, but it sounds like deviled eggs on bread. :thumbsup2 I'm making some tomorrow.

I do eggs(I never put in all of the whites), mayo, dry mustard or yellow if I can't find it, a little bit of sweet pickle juice and Mrs. Janes crazy salt.

I also like green onion in mine.

You can always add to a sandwich...i.e. celery, onion, lettuce, pickles....but you can't take it away without making a huge mess!!

So am I the only one who puts green olives in theirs?
It can vary depending on what I have on had and how much trouble I want to go to (and what seasonings I can find in the pantry)
Eggs, Mayo and green olives with a pinch or 2 of seasoning salt, pepper, curry powder, celery salt, grainy mustard, dill weed

If I am out of olives I will use capers or dill relish

I like my egg salad plain, just eggs and mayo. One thing to note is since there is mayo in it, I would put an ice pack in with it to keep the mayo from spoiling. Jay

I agree - you need to keep that mayo cold :thumbsup2

I, too, love green olives in an egg salad sandwich. I may have to have this for lunch tomorrow. You guys are making me hungry :goodvibes

I like a splash of pickle juice in mine. Mayo and mustard, hb eggs mashed with a potato masher. No bread, thanks. Excellent with pork rinds and Vietnamese hot sauce!
