DS came home for lunch today and said that for tomorrow's lunch he wants egg salad. Now...I've never made this because I don't like it so I don't know where he saw it...but anyways, all I know is that it includes hard-boiled eggs and mayo. I looked up recipes on the internet, but they're all so different. Can I just combine the egg and mayo? Or do I need to add in mustard, vinegar, onions, etc. DS doesn't like onions or celery so I figure I can just make it simple?
So eggs and mayo...is that good enough or no?

But the one that really cleared the lunchroom was the kid that brought in pickled pigs feet!

I didn't know why. She said she adds some pickle juice to her egg salad. I had never heard of that before. I convinced her to add mustard instead!
I mush up the eggs and stir in mayo until it is creamy looking
serve on white bread with onions and lots of salt and pepper
