Had a good week and an even better dinner last night. It was so yummy we had it again tonight.

Tomorrow is the OSU vs Michigan game and we have family coming over for football food. We will be ordering pizza and wings while making some other sides and dips.

I LOVE cooking, I really do... but boy am I glad meals that large are only a couple times of year! I was exhausted last night, but it was worth it!

Tomorrow we are having a meal of leftovers.

I had to pop in on this thread because Eat at Home is the name of my blog! And that's what my whole blog is about - simple recipes to help people eat at home. I now have 52 weekly menus + complete grocery list on my blog. Here's a link to the latest.

Here's a link to the list of them all (well, nearly all of them. I need to add some to the list.)

So tonight I made your easy Jambalaya recipe, using turkey sausage, and throwing in some chicken thighs for a higher protein value. I also added a drained can of petite cut diced tomatoes and holy smokes was it fantastic! :cool1:

My kiddos who usually don't eat anything that might have come from the veggie family loved it too! Thanks!

I haven't posted since before Thanksgiving. My goal in December is to not really have to buy much but the basics until our vacation on the 18th. I have written out a menu through the 17th, but it's at work. So far this week we've had:

Friday: Crockpot enchilada casserole;
Saturday: Stouffers Lasagna;
Sunday: Can't remember;
Monday: Peanutbutter Thai pork over rice and peas;
Tuesday: Cheeseburger Hamburger Helper and corn;
Wednesday: Turkey, m. potatoes and green beans;
Thursday: Crockpot Spaghetti and meatballs;
Friday: DD(12) and I leave for Atlanta soccer tournament and DH and DD (9) will eat homemade Hawaiian pizza;
Saturday: Whatever DH makes DD; and
Sunday: Crockpot roastbeef sandwiches and baked potatoes;
Monday: Crockpot chili and hotdogs....

The rest i can't remember right now. Wish me luck!!

Not off to a good start this month. We not only ate out for lunch but dinner as well. We were so busy running around trying to get errands done that it was easier. I am on track to eat at home tonight as I made the chicken enchilladas last night so all I have to do is stick them in the oven.

I'm trying to eat at home without the use of prepared foods. No boxes, no frozen, no preservatives, low salt and healthy. Little red meat, lots of fiber, complex carbs. It's tough but we're finally beginning to get a rythym. Somehow this summer we got away from this healthy diet and went crazy. We all felt sluggish and gained a few pounds. Time to change all of that. Yay!!! Lots of beans and grains being eaten around here. Did anyone see the guacamole recipe with peas added to lower the fat? I tried it last night and it's good as long as the peas do not exceed 1/3 of the content. Brittany Frankel talked about it on Ellen.

I'm glad you liked it. I think the original recipe had chicken in it. I've never thought of adding diced tomatoes. I bet that made it really yummy!

Back from Disney yesterday and my refrigerator is empty! Last night I made pasta with brocoli, tonight I'm making a maple balsalmic chicken breast rice and brocolli. Then this weekend I need to shop for some fresh fruits and veggies and some cheeses!

yesterday we had a bad snow storm. i didnt go to work and school was cancelled for dd. i almost ordered out last night. instead i found 2 large chicken breasts in the freezer. we had corn, potatos, and fried chicken. for lunch i made taco salads. went back to work today forgot lunch!! :( had oatmeal and greek yogurt. when i get home i have manicotti in the fridge. i just have to warm it up, make a salad and dinner is done.

Last was good we had the chicken enchiladas with some leftover spinach salad. Tonight we are having some crock pot vegetable beef soup that we had in the freezer. I was going to buy all the ingredients for it yesterday but happened to remember we had some frozen in the downstairs freezer.

Pasta with alfredo sauce.

I really need to add a salad but I am feeling lazy.
