Last nights White Chicken Chili with Corn Bread Topping was SO good. I am really happy it came out so well and that my mom also liked it. Due to medical issues I am supposed to limit my intake of tomatoes (due to the acid), however we LOVE chili during the winter. So now we have a wonderful chili recipe that is tomato free!
 
I went shopping yesterday and got all my Thanksgiving shopping done too minus a few last minute veggies. I spent around $130 for everything including the turkey and sides plus food for the week. I saved about $56 in coupons. Here is the plan for the next week.

Monday plank grilled peppered tropical salmon and baked potato
Tuesday Arroz con polo
Wednesday homemade bbq chicken pizza
Thursday meatloaf muffins and twice baked potatoes
Friday catfish tacos
Saturday House Party for the Just Dance 2 CD making taco dip, chips, homemade pizza again, finger food
Speghetti
Sunday roast and veggies
Monday tilapia with potato
Tuesday chicken breast dish
Wednesday George Forman grill Hamburgers
Thursday Deep fried turkey injected with Gran Marnier , smashed potatoes with heavy cream and scallions, stuffing, sweet potatoes with marshmellows, pumpkin cheesecake, pecan bars, orange fluff, cranberries, rolls, sweet coleslaw with pineapples
 
Oh, I am so happy to have found you!!!! WE are trying really hard to limit our eating out for two reasons: 1) SAVE MONEY and 2) LOSE WEIGHT! Our problem is that DH works late a lot and entertains customers, so it just leaves me and DD and its so much more convenient to run out and grab a bite, plus that's when we run all our errands......

So do you limit yourselves to only shopping once a week? Or do you run out frequently?

Welcome! We all have found our little ways to make it work. It seems like lots of people try to stick to once a week shopping, some even once a month. I try to stick to once a week but I will run out midweek if I need something. On this thread we're all just trying not to end up at the drive through, whatever that takes! I'm in love with my crock-pot so I cook a lot in that. My other big thing is I try to remember that pretty much anything we eat at home will be healthier and cheaper than eating out even if it's canned soup and grilled cheese, breakfast for dinner (thats a big 'in a pinch' lifesaver on this thread!) or pasta with jarred sauce! It doesn't have to be fancy it just need to be at home! (and if you're really feeling lazy use paper plates!:laughing:)
 

I totally didn't plan for tonight. I don't want to cave and get take-out. I'm thinking maybe hot dogs tonight. Hmm or semi homemade chicken soup I have frozen boneless skinless chicken breast, cans of chicken broth and a bag of frozen mixed veggies and some orzo. I'm kind of liking that cause if I do hot dogs I'd have to stop and buy buns... Yup I think chicken soup. Thanks 'Eat at home' thread, you saved me again by giving me a place to think it out!:hug: Or I could do my chicken pot pie. How do you like that I went from no options to two options!:banana:
 
This week has gone well so far. We have had tomato soup and grilled cheese, roast beef sandwiches with homemade pasta salad, and chicken fajitas. Tonight we are doing homemade pizza.
 
This week, we had meatloaf, rice and corn; pasta with butter and spices; chicken casserole with pasta, Subway sandwiches (oops!), and Crockpot Fried Rice.
 
Cabbage and noodles and ham. Yum.
Baked beans throw in cut up hot dogs served with corn bread
Scrambled eggs, turkey sausage and toast
Meatloaf, potatoes and green beans
Chile with left over corn bread
Baked potato topped with chile and cheese

Frozen pizza bought with a $1.00 off coupon.

salad topped with diced chicken, dried cranberries and nuts and crumbled cheese.

Mon: Steak and potatoes
Tues: Poppyseed chicken and brown rice
Wed: Soup from the freezer and club sandwiches
Thurs: Thanksgiving! Here's what my contribution will be: the ham, green jacket salad, andouille sausage stuffing, cranberry relish, pumpkin pie, and whiskey brownies
Fri: Tacos
Sat: Leftovers

This sounds exactly like me! My hubbie works late and my dd (7) and I are out at least 4 nights a week (gymnastics 2x a week, violin, and CCD). It is so much easier to eat out, since we are already on the road, then for me to cook for the 2 of us. I feel like we eat out more than eat in! I really need to figure something out, so I am glad I found this thread.

This week isn't the best week of the month for us.

-Sunday: Pot Roast with Potatoes, Carrots, and Onions
-Monday: Goulash and Garlic Bread
-Tuesday: Hot ham and swiss sandwiches
-Wednesday: Mom is picking something up. With all I have to do to prep for Thursday plus everything else, I just can't think about cooking on this night.
-Thursday: THANKSGIVING! Turkey, gravy, stuffing, corn bread dressing, scalloped oysters, cranberry sauce, green bean casserole, sweet potatoes, rolls, pumpkin pie, peanut butter pie.
-Friday: Thanksgiving with my boyfriend's family
-Saturday: Left overs
-Sunday: Not home
 
Tonight we had ground beef and noodles with glazed carrots. Next week will be

Sunday: Pasta bake with garlic bread
Monday: Chicken stirfry
Tuesday: Vegetable beef soup
Wednesday: something quick and easy
Thursday: Thanksgiving
Friday: Leftovers
Satuday: It is the OSU vs Michigan game so we will have family over to snack all afternoon on footbal food like pizza, wings, and dips.

Tuesday: Homemade chili mac;
Wednesday: Thai pork w/red peppers over rice and steamed broccoli;
Thursday: Popcorn shrimp and fries and fruit;
Friday: Homemade pizza and ceasar salad;
Saturday: Enchillada casserole, rice and refried beans;
Sunday: Salisbury steaks over noodles and green beans;
Monday: Grilled talapia, rice and peas;
Tuesday: Bakes ziti w/ricotta cheese and ceasar salad;
Wednesday: Chicken sandwiches and fries;
Thursday: Thanksgiving!

I have mentioned lately how much I love this thread!!! It keeps me on track and motivated to cook! We have done well this week, with no eating out, but have deviated some from the menu.

On Wednesday we had Turkey Tetrazini instead of the Thai Pork. On Thursday we had the chicken sandwiches and tater tots instead of the popcorn shrimp. Tonight, Saturday, we had scalloped potatoes with ham and brocolli instead of the enchillada casserole. I won't have to cook the baked ziti on Tuesday because I forgot we will be eating at my DD's soccer banquet. Then Wednesday since we have already eaten the chicken sandwiches we will eat one of the other meals we didn't eat.

I'll be back next week to report on the menu after Thanksgiving. Keep up the good work ladies!!

I ended up making a chicken pot pie soup on Friday night. 2 cans chicken broth 1 can of cream of chicken soup I had a grilled chicken breast in the freezer that I microwaved to defrost and then cut up and tossed in the soup and a bag of frozen mixed veggies (I think they are 12 oz) I boiled some orzo pasta to go into it and voila dinner! I was so proud! I had some leftover rolls I had made a few nights earlier that I toasted too.

Saturday night hubby and I went out to dinner for a date night but I made the kids and my MIL (babysitter) Tyson frozen chicken breast tenders and pasta with brocolli and garlic.

Sunday night we had people over for dinner. I pulled a frozen lasagna out of the freezer in the morning and served that with a salad, a grocery store rotisserie chicken and some bread I had made the night before.

Tonight- Monday- Leftover lasagna and salad

Tuesday- chicken soup from the rotisserie chicken leftovers/bones

Wednesday- early Thanksgiving dinner- Turkey breast and thighs in the crockpot, canned sweet potatos, mashed potatos, jar gravy, canned corn, canned cranberry sauce, stovetop stuffing, green beans with almonds (from a frozen package), salad dessert- homemade pumpkin pie with whip cream and warm apple crisp with vanilla ice cream. All served on paper plates!

Not going for no food in restaurants--just planning it so it's always "special." I spent $130 this week for 4 people (kids are 12, 18, and my 20 year old is home so all have "teen" type appetites. :scared1: ) The sushi is prepaid with an online deal--I paid $25 but have a $50 coupon to a fabulous local restaurant that is struggling due to a poor location.
 
Hope everyone had a great Turkey day! Let the turkey left overs begin! I still have to go shopping tomorrow. My cabinet is pretty bare after using everything for Thanksgiving. Here is some of what we will be eating for the next few days. It was only the 5 of us but my youngest had the stomach flu:sick: She didn't eat much. So she will be having her dinner today if she's better.
