Working on my menu for the week, along with grocery list this morning...here is what I have:

Saturday-Pizza (not sure if we will make our own or pick up a couple from Sam's when I am there)

Sunday-Grilled pork ribs, sunflower slaw, baked potatoes & zebra "cake" (we are having a Disney movie night...Lion King)

Monday-BLTA Salad ( Bacon, Lettace, Tomato, Avacado)...found this recipe on Allrecipes, going to give it a try

Tuesday-Boy Scout Potluck (we have to bring chips for the mexician pile on and a dessert...going to make a German Chocolate Dump Cake)

Wednesday-BBQ Chicken with Green Chili/Corn/Squash Stir Fry Side dish

Thursday-Tunafish Sandwiches, Chips, Fresh Fruit

Friday-We will grab something on our way to our cabin...sorry eating out :confused3 can't help it when traveling

Tonight we are going to a graduation party, so that will be our dinner.

I am trying to work out a temporary menu as I will not know until Monday or tuesday when I will actually have orientatation and start work. So far I have

Sunday- Roast Chicken with roasted potatoes and ratatouille
Monday- Butter Beef in the crockpot over noodles
Tuesday- Puffy Pancakes with sausage patties
Wednesday- Beef with Snow Peas

I took a week off but I plan on posting some new blogs today.
This is what I've been eating

A yummy roasted eggplant on Chibata bread sandy with tomatoes, basil, and carmelized onions.

open faced shrimp quesdillas with Monterey Jack cheese

tandori style baked chicken with minty cucumber raita

Those are just a few. Plus I went to our Wisconsin State fair and tasted some unusual treats.

I really wanted to go get a veggie omelet yesterday morning, so instead I went to the grocery store and came home and made my own. For less than DH and I would have spent at the restaurant I got enough fixins' to make at least 8 veggie omelets, and mine were much lower in fat/calories. Plus I made my kiddos cheese omelets this morning. :)

Went to the Farmer's Market this morning and then played in my little garden. So now, between the two, I have sourdough rolls, tomatoes, cucumbers, pole beans, squash, and zucchini. I'm also working on my grocery list for Monday. I am hoping to keep it under $100 or so, depending on the sales (can I get something good for the following week, ect).

Next week's menu:

Sunday: Grilled Cheese with tomato sandwiches and tossed salad.
Monday: Easter Island chicken in the crockpot (has a ranch/bbq sauce) with asparagus and rolls
Tuesday: Scrambled eggs, bacon, toast, and orange slices
Wednesday: Kielbasa with sauerkraut, mashed potatoes, and lima beans
Thursday: Porkchops, sliced potatoes, cooked carrots
Friday: Spaghetti, garlic bread, Italian green beans
Saturday: Egg salad sandwiches, sliced cucumbers, and beets

I think I am still full from yesterday's graduation party. She had so much food and desserts.

Tonight we are having my Aunt and Grandma over for roasted chicken, roasted potatoes, ratatouille and garlic butter rolls. Plus mocha cake for dessert.

I was going to make napa valley chicken tonight, and when I went to pull the chicken out of the freezer, I realized we had no chicken besides the chicken legs I'm making later in the week. :confused3 It is a more involved, time consuming recipe that I wanted to make tonight because I'm working 4 - 12 hour shifts this week Mon-Thurs. I didn't want to go back out to the store, so we are going to have a cranberry pork roast in the crockpot. Hopefully it will be done at a decent time. Thing is, I was inspired to try making ratatouille from previous posts, and I was at the store today getting a couple ingredients, almost bought chicken so I didn't have to defrost chicken, and changed my mind thinking we already had chicken :mad:

This week we have 4 nights of soccer games coming up and practice on 2 other nights. So soccer every night starting Monday until Sunday. So lots of quick things and crockpot meals to keep concession stand eating to a minimum.

Sunday: Tacos, refried beans and hot wings (kids just want them);
Monday: (game) microwavable barbeque pork on buns;
Tuesday: Carribbean shrimp, parmesan pasta and broccoli;
Wednesday: Crockpot honey ginger pork loin chops, rice and peas;
Thursday: (game) Tyson chicken sandwiches on buns (we cook and wrap in foil and eat on the way to the games);
Friday: (game) Crockpot chicken broccoli divan over rice;
Saturday: (game) Probably give up and eat out since we have away game and my other DD has volleyball clinic.:laughing:

Not sure what we are doing about dinner tonight because

I got a job today!!!!!!!!!!! :banana::cool1::thumbsup2:banana::cool1::thumbsup2

After being unemployed for over two years I finally got a job!

I don't know how I missed this, but CONGRATULATIONS!! :banana:

chicken fajitas (great sale on breast tenders so got a bunch)

What was in them to make them so bad ? post recipe im dying to see. I make "crabby patties" all the time. Im assuming kinda the same thing. My guys love them!

Basically they were crab meat crumbled up in melted velveeta with a little mayo mixed in, then baked on english muffins. It was just too much velveeta...we didn't care for them at all.

Will you please share the Carribbean shrimp recipe?

Nope! :rotfl2: I can't because it's a frozen boxed shrimp with marinade from Aldi. It was a special buy and they don't have it any longer. It is my last two boxes and my kids just love it. So easy too, I just toss in a skillet and saute and it's done!
