My boyfriend is feeling MUCH better, though he has his dentist appointment on Wednesday so who knows how he will feel then. So I don't have many meals planned for this week since I hope to spend some time with him before school starts back for me.

Still eating out of the freezer as much as possible. Trying to empty it up some so I can fit some premade meals up there (lasagna, meatballs, and some soups) for the nights I have class. It will help us from eating fast food on some of those nights. Plus homemade freezer meals are much better then store bought!

So my meals for this week are:

Mon 8/15- Broccoli and Cheese Stuffed Chicken Breasts, Rolls, Salad

Wed 8/17- Hamburgers, Fries, Corn on the Cob

Fri 8/19- Orange Glazed Salmon, Olive Oil and Herb Pasta, Asparagus

Sat 8/20- Roast, Rolls, Green Beans, Corn Fritter Casserole

I just love this thread! I am trying to cut the "out to eat" meals in my household and this is the perfect place to keep me on track!

Monday - BBQ chicken/diced potatoes/corn on the cob in the crockpot (layered in foils packets to cook it all at once. Recipe from the eatathomecooks.com website (lots of good ideas here).
Tuesday -Stuffed Shells/broccoli and garlic bread
Wednesday - Chicken Sandwiches and three bean salad
Thursday - Cheeseburger Macaroni, peas, salad
Friday - Meatball subs, home fries, and green beans

Wow, do you mean you wrap the chicken, potatoes and corn all separately in the crockpot? That is something new I just learned, thanks!

Monday- Meat spaghetti with "homemade gravy"

Tuesday- Guy Fieri's Cuban Pork Chops with Sofrito Mashed Potatoes

Wed- Hamburgers on grill or this new recipe for a Veggie Burger from Guy Fieri

Thurs- TBD ----Maybe Veggie sub from Subway

Fri- Probably go out to dinner

*** It's just the 2 of us, but we like to cook at home b/c it's ALOT more healthier!! :)

mmmm....meatloaf on the grill!! How did that turn out? Sounds yummy!

Anyone have a good HOMEMADE recipe for tomato soup?? I'm looking for a recipe that is low in sodium. Thanks!!! :)

TandT, the meatloaf turned out very well after all. The recipe he chose was a bit bland, but the concept worked so we'll do it again using my regular recipe. We're trying pizza this week too. We tried that before and had a fail as the crusts stuck so all we got were bits of pizza, but this time we have hints and tips to try to help us succeed with that.

Tonight we are having beef with snow peas. I got a call that I have orientation tomorrow for my new job and I will find out then my schedule so I can meal plan better.

Monday: Beef Paprikash, Noodles, Carrotts, Baked Apples
Tuesday and Wednesday: Rigatoni, Italian Turkey Sausage, Zucchini in Red Sauce, Baked Pears (sure wish figs were cheaper!)
Thursday: Barbequed Chicken Tenders, Mashed Sweet Potatoes, Peas, Peaches (a very orange dinner)
Friday: Scallops in Orange Sauce, Brown Rice, Asparagus, Mixed Berries
Saturday: Black-eyed Peas, Sweet Potatoes, Mustard Greens, Ham all mixed up, Mixed Berries

wishesuponastar - yes, you wrap the potatoes and corn separately in foil pouches. The recipe is at the "eat at home cooks" blog under the slow cooker category. I tried to attach the link but I can't since I don't have enough posts yet.

So tonight was our Club Sandwich and Tomato Soup night. I got the soup from Pannera Bread as my mom had given me 20 dollars in GC's for that place and I love their tomato soup.

Currently it's only myself and my youngest 2 DD's in the house because DH is deployed and my oldest is spending the rest of her summer with her Grandma in VA. I am enjoying my soup and sandwich and my middle DD ate it up until it was all gone but my 2 year old looked at her plate and bowl and said EEWWW. So what to do?

Monday - Roast beef with gravy, baked potatoes & corn
Tuesday - Stuffed zucchini & fruit salad
Wednesday - Hot roast beef sandwiches & salad
Thursday - grilled chicken, rice & summer squash
Friday - going out to dinner for DD's birthday
Saturday - Hamburgers, hot dogs, potato salad, pasta salad, tossed salad
Sunday - Not sure yet, probably leftovers or spaghetti
