Back to school tomorrow and back to meal planning for me! I hope to stay inspired to keep it up. I did a big grocery trip Saturday and have had fun cooking it all.

Saturday lunch we had meatball sliders, dinner was grilled pork steaks
Sunday luch was chef salads, dinner was grilled burgers
Monday lunch was meatball sliders, dinner was burritos
Tuesday lunch we ate out, to celebrate school starting tomorrow
Tonight is peanut noodles, chicken, stir fried green beans

Meals Im stocked for... Pork tenderloin, pasta with sausage, roast beef - followed by bar-b-que beef, cubed steaks,

That should get us through the week. Two sons will be gone fri-Sun, so the food will stretch further!

I had my first day of work today. It went well, just orientation. I go back friday to start my training. I know my schedule for the next two weeks so it will be pretty easy to meal plan and stick to eating at home.

Tonight we are having ham and cheese calzones with mixed veggies.

Sunday night I made the cranberry pork roast, mashed potatoes and ratatouille (which was amazing BTW, 1st time I had it, and it was veggies I really don't care for, but it was really really good)

Last night we had napa valley chicken, egg noodles, green beans

Tonight I'm going to make steak fajitas

Meals for next few nights (some were meals left over from my last meal plan post that I haven't made yet):

-pulled pork sandwiches
-appetizer night: deviled eggs, Tastefully Simple beer bread with Italian dip and artichoke spinach dip, need to figure out what else
-hot and sweet chicken drumsticks, corn on the cob
-sloppy joes (already made and frozen in freezer)

yawza! the last couple weeks have been crazy here... school is back on next week and some running will stop (some, not all) but that does mean I will be cooking at home more! :cool1::cool1:

So in no order our next few days have these gems on our menu

Spaghetti Carbonara

Balsamic & Basil Chicken & Rice

Slow Cooker Ribs

Buffalo Chicken & Bacon Pizza

now tonight off to a local fair

Wow I can't believe some of you are starting school already. I have 3 more weeks before my kids start! I'm trying to come up with some new things to eat. Everything is starting to feel so stale, like I've already made it this week even when I haven't. I'm kind of looking forward to cooler weather so I can go back to the heavier longer cooking oven and crock pot meals. Last night I almost stopped for take out but managed to just barely pull together some chicken quesadillas, salad and brocolli. I need to meal plan. Tonight there is boneless skinless chicken breast defrosting and I need to go look for a good recipe to make with that...

Found a recipe for chicken breasts with Mushroom Sage sauce. I happen to have mushrooms and fresh sage so I htink I'll give it a try!

Just to let everyone know I got a whole month's worth of meal ideas from the thread! Thanks!!!:cutie:

Last night we had pork chops with roasted sweet potatoes and applesauce.

Today was my first full day of work and my Aunt took my cousin and I out to dinner to celebrate.

I've posted once or twice on this thread, mostly a lurker for some dinner ideas. :thumbsup2

But tonight, i'm patting myself on the back. DH wanted to go out and get Taco Bell (that would have been around $12) and I was SO tempted! I mean prepping the food, cleaning up the plates, and cleaning the kitchen just didn't appeal to me tonight. BUT I didn't give in and instead made Salmon with brown rice and veggies! Not only is it healthier, but that's $12 extra dollars towards our Disney cruise!

:yay:

I made pizzas tonight instead of ordering out. I bought whole wheat yeast dough from Wal-Mart (.98) and made 4 pizzas; spinach alfredo, cheese, pepperoni and ham, and a blueberry dessert pizza. We have so much left over! Everyone was happy and looking forward to a repeat. :)

YAY!! It feels good to save money:)

Tonight was leftover meatballs and pasta. Almost had to come up with an alternate meal because the container that had the sauce didn't have the lid on tight and lost some of it on the floor:scared1: Don't you hate kitchen messes!!

We ate out a few times this week so we really need to stivk to a schedule of meals now.
The dinners we did eat in were:
Two days ago I made homemade veggie soup and heated some rolls I had in the freezer.
Last night was grilled cheese and tomato soup from a can. Maybe not the best meal but at least it was at home.
Tonight was polish sausage/veggie sausage on whole wheat buns with carmelized onions and mashed potatos.
New meal plans (I have started planning lunches some too) are:
Tomorrow:
Lunch: Tuna pasta salad
Dinner: Egg mcmuffins and bannanas

Sun:
Lunch: Sandwiches of choice (bologna, tomato or PB&J)
Dinner: We are having company after going to church and then going swimming so I wanted easy and make ahead. I chose Baked pizza pasta (one pepperoni and cheese one olive, mushroom, and cheese) w/garlic bread.
Hope they like it. It's a favorite in this house.

Mon:
Lunch:Cup o noodles
Dinner: Scrambled eggs and pancakes

Tues:
Lunch: probably sandwiches again. Having problems with creative lunches.
Dinner: Hamburgers/Veggie burgers, baked french fries and veggies.

After that I have no idea.

I will update about my week later but I thought in case you haven't seen it yet I know a lot of you follow her blog did you guys see that the pioneer woman will have her own show on the food network starting next Saturday at 11:30am:cool1:
