Hey all! Hope everyone here had a wonderful holiday. Mine was pretty good. Tough at times because I was really missing my mom, but being there with other family and especially the kids really helped. I ate out quite a bit last week (lunch during the drives both ways, the first night there because my uncle forgot I can't eat pizza, a trip to Steak and Shake since there are none here, and dinner at Hard Rock Cafe after the train museum). So, I need to get back to eating at home and ESPECIALLY eating what I already have in the freezer. Looks like we will be doing an auction on the house early spring and I don't want to waste the meat and stuff I have.

Got home last night so here is my list for this week:

Tonight: Steak, Eggs, and Hashbrowns
Monday: Roasted Salmon, butternut squash, and rice
Tuesday: Rib Roast, Lobster tails, scalloped potatoes, green beans, and bread
Wednesday: Leftovers
Thursday: Chicken and Gnocchi soup and bread
Friday: Leftovers
Saturday: Chicken pot pie

This week looks like:

salmon, rice, broccoli
new year's eve appetizers with the hubs- beef crostini, shrimp cocktail, beer cheese fondue
new year's day "American" spaghetti

Sunday: spaghetti, meatballs, sausage, garlic bread, salad
Monday: bacon shrimp, rice, salad (also make ahead shrimp lasagna to freeze)
Tuesday: Sunday's leftovers
Wednesday: stuffed bell peppers, salad
Thursday: chicken, zucchini, twice baked potatoes
Friday: bowling night so whatever leftovers my kids will eat, probably chicken and pasta and raw carrots- why won't they eat them cooked?!?!?! :)

I was planning to cook a turkey or prime rib on New Years but I'm still waiting for DH to decide what he wants.

Yesterday was lentil soup and salmon.
Monday- baked chicken cutlets, tortellini and mixed vegetables
Tuesday- homemade pizzas with salad

Not sure about rest of the week yet!

I'm so glad I found this thread. Wow some posters make me soo hungry. I know what I'll be having for dinner - whatever you are cooking!! Seriously, I don't have a menu put together yet I can see where that would keep me aware of what is left in the fridge, out of the stores and eating much less junk food. Thank you. When I figure out a menu I will be back to post.

Here's what's on our menu this week:

Burger with blue cheese, homemade sweet potato fries

Spaghetti with tomato sauce and chicken parm meatballs

NYE: Epcot F&W knock-off -- Mongolian beef tacos with sriracha mayo and pickled carrot, gran marnier slushies

Chicken/refried bean burritos

Chicken avocado enchiladas

Pork chops and roasted root veggies

We are doing a winter CSA, so we have lots and lots of root veggies to get creative with!

NYE : chicken quesadillas, taquitos, chips and salsa or guacamole

New Years Day: Meat pies (ground beef and pork), black eyed peas, mashed potatoes and coleslaw

Thursday: Individual make your own pizzas(pepperoni, cheese, black olives, green bell pepper, onions etc.)

Saturday: Chili

Have a great week.
