I've been bad about posting. Here is what we had this week.

Monday - Italian Sausage Sandwiches with oven made chips
Tuesday - Crock Pot Ham and Beans with French Bread
Wednesday - Meatloaf, Baked Potatoes, Sweet Corn
Thursday - Pork Tenderloin Tips and Greek Potatoes
Tonight - Leftovers
Saturday - Not sure...DH is out of town working and DS is working...maybe English Muffins pizzas

I better get busy on next weeks menu!

Happy Thanksgiving week!

Sunday: Shrimp stew over rice, carrots and macaroni and cheese

Monday: Chicken and sausage jambalaya and sweet corn

Tuesday: Hamburger patty with onion, potatoes and carrots

Wednesday: Spaghetti and homemade meatballs and garlic bread

Thursday: Thanksgiving dinner- Turkey,cranberry sauce, sweet potato casserole, green beans, mashed potatoes, rolls and caramel pie or fruit salad

Friday: Turkey Gumbo

Saturday: Meatball po-boys and sweet potato fries

Friday we had corn and potato chowder.

Last night we had take out from our favorite diner.

Tonight was homemade burrito bowls.
 

I haven't posted in a while but we HAVE been eating at home!

tonight: meatballs and mash with salad
tomorrow: chicken stir fry

Sun: turkey medallions and noodles with broccoli and cheese
Mon: hamburger helper with green beans
Tues: buffalo chicken wraps, veggies and dip
Wed: rotisserie chicken, stuffing, mashed potatoes, corn and salad
Thurs: leftovers
Fri: birthday dinner at mom's
Sat: birthday dinner at mom in law's
 
It has been super busy around here but we only got takeout once last week. We finally hired more people at my job so I will no longer be putting in 40+ hours a week. I am even just suppossed to be part time but the extra money has been nice.

Tonight we are having roast beef with roasted red potatoes, zucchini, and fruit salad.
 
Back from spending the holidays with my family. I have three weeks and then I will be heading up there again! :thumbsup2 Then hopefully only 2-3 months and I will be moving up by them. I really need to stop buying food and eat out of the freezer more!

This weeks meals are:
Tonight: Ribeye steak, roasted asparagus, and fried potatoes and onions

Monday: Homemade pizza (making the crust myself for the first time) with olive oil base, three types of mushrooms, roasted garlic, caramelized onions, kale, mozz, and goat cheese

Tuesday: Salmon, roasted garlic rice pilaf, and roasted asparagus

Wednesday: Hamburgers, fries, and a vegetable of some sort (out of the freezer)

Thursday: Pumpkin and sage ravioli with browned butter sauce and garlic bread

Friday: Thanksgiving with my dad and a friend. Turkey, stuffing, candied sweet potatoes, mashed potatoes, gravy, green beans, and rolls.

Saturday: Leftovers
 
Hello everyone!

Yesterday: (Free) Pepperoni pizza for the kids, Mozzarella, roma tomato and fresh basil pizza with a spinach salad for Mom and Dad and the Pizza place gave my son cupcakes for the whole family. (It felt like we hit the lottery. We only paid for a single pizza)

Sunday: Red Beans and sausage served over rice with cornbread

Monday: Chicken Caesar salad and homemade rolls

Tuesday: Beef and broccoli, fried rice and egg rolls

Wednesday: Company Chicken, corn, garlic bread and salad

Thursday: Roast , rice, gravy, buttered carrots, and macaroni and cheese

Friday: Christmas Party - Dinner will be served.

Saturday: Spaghetti sauce w/ meatballs, green beans, and garlic bread

What is company chicken? Sounds like it must be good!

My friend served this dish at her Bunco party. When I asked her for the recipe she said she really didn't know what it was called so she would just call it company chicken. Lol!

Here is the recipe she gave me.

1 brick cream cheese softened
1 package dry ranch seasoning mix
2 cans cream of chicken soup
4 to 6 boneless skinless chicken breast

In a bowl mix the cream cheese, ranch dressing mix and 2 cans of chicken soups. Place chicken breast in the bottom of a crock pot. Pour the mixture from the bowl over the chicken and cook on high for 5 hours. Serve over cooked egg noodles or bow tie pasta.

I use this recipe when I have to take one of the kids to a ball practice. It is easy and gives them something hot to eat.

Semi homemade dinner tonight. I picked up chicken pot pies from the grocery stores prepared foods section but I baked them my self.
 
I've been so busy lately that I haven't had time to post our menus. We've been doing well eating at home though!

Mon: Chicken lettuce wraps, jasmine rice

Tues: Daddy/daughter date out while I go to a group workout for a weight loss challenge I joined. I will eat a salad when I get home.

Wed: Sausage tortellini soup and fresh bread

Thurs: DD is going to a PTO fundraiser at a bounce house place which includes dinner. I am going with my Grandma and Uncle to see War Horse on stage and I have to pick up my grandma so I'm sure we will get something to eat before we go. DH is on his own...lol!

Fri: Shredded chicken sandwiches, oven fries, fresh pineapple

Sat: Baked ravioli with sausage, salad

Sun: Crockpot beef stew

Mon: Pork chops, baked beans, applesauce

Tues: Sloppy joes, oven roasted potatoes, pears

Wed: Tacos, spanish rice, refried beans

Thurs: Crockpot cheesy chicken and rice, broccoli

Fri: Meatloaf, baked potatoes, green beans

Sat: Homemade pizza

Sun: Chicken and noodles, carrots
 
This week I'm focused on using leftovers/extras from Thanksgiving.

Tonight we had cheese/spinach ravioli with roasted butternut squash and grated parm.

Tomorrow is turkey pot pie.

The rest of the week includes:
Orange turkey (chicken, but leftovers!) with broccoli, white rice
Pulled pork tacos
Mexican stuffed shells

And seem to hate to grocery shop.

Wednesday- tacos and refried beans
Thursday- pierogies with sautéed onions, baked beans and applesauce
Not sure about upcoming weekend

Hopefully I'm not overreaching but I just wanted to suggest trying a crock pot. You can't go wrong with a crock pot! I use it at least once a week for convenience. Throw in the meat, veggies, water and dinner is ready when you get home.
 
Dizzi - I agree with 100acrewood. Just use a crockpot. It is a great help!.
Here are a few super quick meals in the crockpot:
BBQ chicken or roast - add chicken or roast with some BBQ sauce (1 cup to cook and more when done if needed). Just shred the meat when you get home to serve on buns and have with canned baked beans. Presto you have dinner!
Spaghetti - Frozen meatballs and spagetti sauce: cook all day and when you get home you just need to cook noodles and open a bag of premade salad for dinner.
Pot Roast - Chuck roast, bag of baby carrots, can of mushroom soup, dry onion soup mix. Cook all day and just serve over egg noodles when you get home.
There are endless amounts of crockpot recipes that are really quick and easy so just google crockpot recipes to get you started... Hang in there - just keep menu planning as that is half the battle to getting supper on the table.

I just returned from our latest trip to Disney and it was absolutely beautiful with all the Christmas decorations!! Here is menu for the rest of the week until I can get to the store on Saturday:
Today - Spaghetti and meatballs / peas
Wednesday - Pot Roast
Thursday - Mexican chicken soup
Friday - leftovers
